David Espinoza started at The Athenaeum nine years ago after the recommendation of a friend to join the staff. David joined us after years of service at the Chez Chateau restaurant in Arcadia. David assumes many different roles within our dining room, shifting responsibilities between kitchen runner, busboy, and server. In addition to his routine weekly dining service, David is often recruited to work special weekend events.

This month, David was recognized for his continual willingness to provide support wherever needed. Private Events Director, Victoria Hidalgo shared that “David is a true team-player and always ready to help with a smile.” Before the end of every shift David makes a point to see if all responsibilities have been completed. If there happens to be a last minute change or event set-up still required, David will put in the extra time to make sure it is done, and done right, even if his shift has been completed. He approaches each task or member request with a “can do” spirit. It is no surprise that David has earned this award previously for his great service.

David resides in Arcadia with his wife of 30 years, Maria and their two grown daughters. David looks forward to another joyous holiday season here at The Athenaeum and to make a special visit to Mexico to visit his beloved mother and family members.

We were sorry to see the closing of the Rath al Fresco on October 5 but are grateful to all who came to say good-bye to this very popular summer dining spot to give it its last hurrah. The Rath al Fresco was packed. Everyone wanted their last bit of summer and their last bite of the beer can chicken.

The Rathskeller opened the second week of October with cooler temperatures and the weatherman’s promise of rain in the latter part of the week. Try some of the new Rathskeller menu items which include the salt and pepper crispy calamari, the mac n’ chz bites, bacon wrapped meatloaf (my new comfort food), sesame crusted chicken salad and the Mediterranean chicken pizza to name a few. The daily specials from the regular menu are discounted 30%. In the bar, we have a good selection of beers that range in price from $4.00-$25.00 and a rotating selection of draft beer weekly. Bar opens at 4:30 p.m. Monday through Friday. See you there!

A robust Fall menu started in the dining room for lunch and dinner. My favorites at lunch are the grilled lemon marinated prawn salad with hearts of palm, citrus, grilled asparagus, butter lettuce and tarragon vinaigrette, the CBLT with candied thick sliced bacon, lettuce, heirloom tomatoes and avocado, and last but definitely not the least is the coffee malt braised short ribs (The short ribs are a definite must on your next visit!).

At dinner, the must- taste menu items are the squid ink pasta, grilled bacon wrapped pears, the pan roasted black cod and the herb crusted lamb rib eye. Top off dinner with either a chocolate or grand marnier soufflé!

Reservations for lunch and dinner are strongly recommended. Did you know that you are now able to make dining reservations on-line? Simply go to the club’s website http://athenaeum.caltech.edu and log-in into the member portal and make your reservation. Or, the old fashioned way is to call (626) 395-8282.

The Thanksgiving Eve Buffet is the biggest event of the month. Reservations start at 5:30 p.m. Of course, we also have Thanksgiving To Go for those who are just too busy to do all the cooking. Our kitchen is your kitchen, pass the stress over to us so you can enjoy time with family and friends.

On behalf of the Board of Governors, the House Committee, and the Athenaeum staff, I would like to express our gratitude and appreciation to all members, for your continued support, participation and generosity. It is always our pleasure to be of service.

It’s holiday time again! At this time, Athenaeum members will have already received a letter for The Athenaeum Employees Holiday Fund. Contribution to this fund is voluntary. Traditionally, members contribute between 10 to 20 percent

of their total expenses for the year, or any amount they wish to give.

The Athenaeum Employees Holiday Fund is an annual tradition by which the club’s members are able to express their appreciation to the club’s staff, as

The Athenaeum is a non-tipping club.

After the Holiday Fund donations are collected, the total is distributed among all non-exempt Athenaeum employees in amounts based on job performance, years

of service and hours worked. The Fund includes both the employees who are highly visible and those who are “behind the scenes.” An important portion of the

employees’ annual earnings comes from this fund.

Please note that the club’s “Service Charge” does not represent a gratuity or“tip” for our staff members. The service charge becomes part of the club’s operating income.

Enjoy Cooking!

Olive Oil Cake with Almond & Lemon

Directions

serves 10

Ingredients

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup sugar

3 large eggs

4 teaspoons lemon zest

1/4 cup whole milk

3/4 cup extra-virgin olive oil

2/3 cup sliced almonds, toasted,

coarsely crumbled

Powdered sugar, for sifting

1. Preheat the oven to 350 degrees F. Lightly oil an 8-inch diameter cake pan.

2. Whisk the flour, baking powder, and salt in a medium bowl to blend.

Using an electric mixer, beat the sugar, eggs, and lemon zest in a large bowl

until pale and fluffy. Beat in the milk. Gradually beat in the oil. Add the flour

mixture and stir just until blended. Stir in the almonds. Transfer the batter to

the prepared pan.

3. Place cake pan on baking pan and bake for approximately 35 minutes.

Transfer to a rack and cool for 15 minutes. Remove cake and place on serving

platter, top side up. Sift powdered sugar over the cake.
