Buy FreshWhen choosing fruits and vegetables, make sure they are firm and ripe. Herbs should show no signs of wilting, yellowing or rust. Buy only what you plan to use in the next day or two because longer storage will destroy the live enzymes in the plants. Ideally you should shop daily for the fresh fruits, vegetables and herbs you need to make the recipes in this book. If this is impractical, store produce in the refrigerator for no more than 2 days.

Wash WellAll fruits, vegetables and herbs — even if organic — should be washed, scrubbed or soaked in a sink of cool water to which 2 tbsp (25 mL) of food-grade peroxide or vinegar has been added. This will remove any soil, as well as bacteria that may have developed during transportation and handling. Spinach and leeks should be soaked to remove grit. In most cases, organic produce can be juiced with the skin on. Exceptions are noted below. If you can’t find organically grown produce, you can use the conventional variety, but only if you wash as directed above and remove the peel. However, because pesticide concentrations are particularly high in non-organic apples, Chilean grapes, cucumbers, peaches, strawberries and apricots, you might consider refraining from using them in juices.
Fruit supplies the body with natural sugar that it uses for fuel. This sugar comes in the form of fructose. We use some fruits, such as apples, grapes and mangoes, in vegetable juices to make those juices more palatable. The fi ber in fresh raw fruit is important in maintaining digestion and for this reason, it is important to eat both fruits and vegetables whole in addition to juicing them.
CAUTIONDiabetics and people prone to yeast infections and hypoglycemia need to watch how much fruit they use because they cause a rapid rise in blood sugar.
AçaiEuterpe oleraceaeA small, round, dark purple berry from an Amazon palm tree, available in frozen form from whole and natural foods stores. The fl avor of the berries is an unusual blend of chocolate and blueberry.ACTIONS: Antioxidant, anticancerUSES: Due to an exceptionally high concentration of phenolic pigments and anthocyanins with antioxidant properties, açai is being researched for its role in the prevention of numerous human disease conditions. The berry is high in omega-6 and omega-9 fatty acids, fi ber, calcium, copper, iron, magnesium, phosphorus, potassium and zinc. BUYING AND STORING: Açai is available in several forms: dried pulp purée; bottled liquid pulp purée; frozen whole or puréed berries; and freeze-dried capsules. Look for whole pulp pure organic açai berries for juicing or pulping.FOR JUICING: Açai adds a creamy texture and deep purple color to juices. Thaw and use 1 ⁄2 to 1 cup (125 to 250 mL) in fruit juice blends. FOR PULPING: Often used in fruit smoothies, açai helps thicken the mixture and add a fresh fruit fl avor. Use 1 ⁄2 cup (125 mL) for every 2 cups (500 mL) of smoothie.

ApplesMalus pumilaACTIONS: Tonic, digestive, diuretic, detoxifying, laxative, antiseptic, lower blood cholesterol, antirheumatic, liver stimulant.USES: Fresh apples help cleanse the system, lower blood cholesterol levels, keep blood sugar level up and aid digestion. The French use the peels in preparations for rheumatism and gout, as well as in urinary tract remedies. Apples are also very useful components in cleansing fasts because they help eliminate toxins. Apples are good sources of vitamin A. They also contain vitamins B and C and ribofl avin and are high in two important phytochemicals: pectin and boron.BUYING AND STORING: Look for blemish-free apples with fi rm, crisp fl esh and smooth, tight skin. Because of the widespread use of pesticides on apples, choose organic whenever possible or peel before using. Apples will keep in a cool, dark, dry place (or the crisper drawer of your refrigerator) for one month or more.FOR JUICING: Apples are the most versatile fruit for juicing and can be blended with any vegetable juice to give it a natural sweetness. The greener the apple, the sharper its juice. Use the peel (if organic) and core (but not the seeds) when juicing. One pound (500 g), about 4 medium apples, yields about 1 cup (250 mL) juice.FOR PULPING: One apple, peeled and cored, yields approximately 1 cup (250 mL) roughly chopped. The USDA National Organic Program defines sustainable agriculture as, “optimizing the health and productivity of interdependent communities of soil life, plants, animals, and people. Management practices are carefully selected with an intent to restore and then maintain ecological harmony on the farm, its surrounding environment and ultimately the whole planetary ecosystem.”
As a rule of thumb, 1 lb (500 g) produce yields roughly 1 to 11⁄2 cups (250 to 375 mL) fresh juice.
FOR JUICING

1 part peppermint 1 part
1 part rosemary 1 part1⁄2 part sage 1⁄2 part
1. In an airtight tin or dark-colored jar, blend together thyme, peppermint, rosemary and sage. Store in a cool, dry, dark place.
2. To make tea: Crush a small amount of blend to a fine powder and measure 1 tsp (5 mL) per 1 cup (250 mL) water. Place in a warmed ceramic teapot, add 1 tsp (5 mL) “for the pot” and pour boiling water over herbs. Cover the pot and put a cork in the spout. Steep for about 15 minutes and strain into cups.
