NeedsAssessment
Withthelatestconcernsinfoodsafety,foodsecurityandsustainability,moreandmoreindividualswithabackgroundinanimalscienceandmeatscienceareneededtohelpsolvetheseissues.Companiesarelookingforsmart,hardworking,determinedindividualstoworkfortheircompanies.Afterhousingafocusgroupwithanimalandmeatscienceindustryleaders,wediscoveredthatindividualsthatlistedbeinginvolvedwithajudgingteam,suchasmeatjudging,hadagreaterchanceofbeingofferedajob.Werecognizethisfactandstrivetoprepareourstudentstobethebesttheycanbe.

SetUp
Sincethecampersdonotarriveuntiltheafternoon,themorningofthefirstdayofcampwillbeusedasaset-upperiod.TheclassroominRosenthalwillneedtobeorganizedinsuchtohostacamp.Onebookletandonet-shirtshouldbeplacedateachseat.Inthecoolers,classesandcarcassesshouldbearrangedforeasyaccessibility.
RiskManagement
• Participantswillsignamedicalwaiverandamedicaldistributionform.TheseformswillprotecttheDepartmentofAnimalSciencefromallconcernsbasedonmedicalissues.
• NoparticipantswillbeallowedtohandleknivesoranyothercuttingequipmentlocatedintheRosenthalMeatScienceandTechnologyCenter.
• AllcounselorswillberequiredtoknowfirstaidandCPR.• Allparticipantswillbeunderstaffsupervisionatalltime.• Allcounselorswillbeawareofemergencyproceduresfollowedat

theirregistrationandtogettheirroomassignment.StaffwillfinishsettingupRosenthal.
2:30PM Afterallparticipantsarrive,threevanswilltransportthecamperstotheRosenthalMeatScienceandTechnologyCenter.
3:00 TheMeatJudgingCoordinatorwillwelcomecampers,andthecamperswillofficialmeetallstaffandcounselors.TheMeatJudgingCoordinatorwillgoovertheCodeofConductandgiveabriefoverviewofthecamp.Asimpleicebreakerwillbeplayedtogettoknoweveryone.
3:30PM Thefirstsessionwillbegin.Thissessionwillcoverscoringandnotetaking.Onecounselorwillteachthisportion,andothercounselorswillassistwhennecessary.Staffwill

setoutasnackfortheafternoon. 4:15PM Thesecondsessionwillbegin.Thissessionwillcoverbeef
carcassevaluation.Onebeefcarcassshallbebroughtintotheclassroomtousefordemonstration.Anytimethereisacarcassorcutbroughtintotheclassroomfordemonstration,campersmuchwearahairnetandglovesprovidedbytheRosenthalMeatScienceandTechnologyCenter.Duringthistime,thedinnerwillarrive.Availablestaffshouldassistinsettingupdinnerinthehallway.
6:00PM Camperswilleatdinneratthistime.Afterparticipantsaredoneeating,staffshouldcleanupassoonaspossible.
6:45PM Thethirdsessionwillbegin.Thissessionwillcoverbeefcutsevaluation.Noproductshouldbebroughtintotheclassroom.
8:30PM Thefourthandfinalsessionofthedaywillbegin.Thissessionwillcoverqualityandyieldgrading.Noproductwillbebroughtintotheclassroom.Afterthesessionisover,camperswillbetakenbacktoHullaballooHalltogetreadyforbed.
11:00PM At11:00PM,a“lights-out”timewillbeenforced.Saturday 8:00AM HalfofthestaffwillarriveatRosenthalat7:00AMto
beginpreparingfortheday.Thekolacheswillbedeliveredat8:00AM,andthestudentsandtherestofthestaffshouldarriveatRosenthalat8:00AM.

1:00PM Lunchwillbeserved.Afterthecampersarefinishedeating,halfofthecounselorswillcleanuplunch.

4:00PM Thefifthandfinalsessionwillbegin.Thissessionwillcoverretailidentificationandclasses.Thecamperswillbebroughttothefabricationroomtoexaminethesecuts.Participantswillbeloanedafrock,hairnet,hardhatandglovestouseforthisportion.Staffwillneedtoassistallpartieswiththisstep.Towardstheend,cateringwillarrive.Whencateringarrives,directthemtoRosenthal.
6:00PM Dinnerwillbeserved.Afterthecampersarefinishedeating,halfofthecounselorswillcleanupdinner.
10:30PM At11:00PM,a“lights-out”timewillbeenforced.Sunday 7:30AM Halfofthestaffwillneedtoarriveat6:30AMtoensure
everythingwassetupandorganizedforthedayahead.Theotherhalfofthestaffwilltransportcampersfromthedorms.
8:00AM Thepracticecontestwillbegin.Thiscontestwillconsistof6differentcosts.Allstaffwillserveasgroupleadersandreasonslisteners.Towardstheendofthecontest,somestaffwillneedtosetoutlunch.Afterallanswersareturnedin,thestudentassistantwillbegintallyingtheresults.
12:00PM
Aftertheparticipantsaredonewiththepracticecontest,theycangrababoxedlunch.Afterlunchiscomplete,halfofthestaffwillcleanup.
1:00PM Theawardswillbepresentedfromthemorning’scontest.Aftertheawardsarepresented,themeatjudgingcoordinatorwillthankeveryoneforcominganddismisstheparticipants.ParticipantswillbetakenbacktoHullabalooHallwheretheywillbepickedupbyaparentorguardian.Staffisinstructedtorequestaphotoidentificationbeforereleasingachildtoaparentorguardian.

ProgramWrap-UpAfterthecampiscomplete,thestaffandvolunteerswillcleanuptheRosenthalMeatScienceandTechnologyCenter,returnthevanstoEnterpriseandfinalizearrangementswithHullabalooHall.Anyequipmentorsuppliesnotusedwillbeputintostorageforuseatfutureevents.
Evaluation
Duringthelastdayofthecamp,staffmemberswillhandoutandcollectevaluationsfilledoutbytheparticipants.Thegoaloftheseevaluationsistodeterminewhethereachsectionofthecampiseffective,andwhatthecamperslikedanddislikedabouttheevent.Thestaffwillgivethecompletedevaluationstothestudentassistant.Theassistantwillthencompileallevaluationsintoaspreadsheet,oneweekafterthecamp.Theassistantwillsummarizethedata,andsharetheinformationwiththemeatjudgingcoordinator.Themeatjudgingcoordinatorwillwritedownthesummarizedinformationintomemoformat,andthemeatjudgingcoordinator,studentassistantandthedepartmentheadwillmeetanddiscusswhetherchangesarenecessaryforthefollowingyear’sevent.

To: Dr.RussellCross,DepartmentHeadFrom:MadalynnKainer,MeatJudgingCoordinatorDate: July25,2016Subject:2016TexasA&MMeatJudgingCampThe2016TexasA&MMeatJudgingCampwasrecentlyheldontheTexasA&MUniversitycampus,fromJuly14-16,2016.Werecentlyreviewedandcompiledevaluationscompletedbytheparticipantsintoaspreadsheet.Theaverageageoftheparticipantswas15.Thiswasourprojectedaverageage.Wewerepleasedwiththematurityandexperiencelevelofthisagegroup,andplantocontinuetocaterthiscamptothatagegroup.ParticipantscamefromalloverthestateofTexas.Theparticipantswerealsoevenlysplitbetween4-HandFFAmembership.Overall,wesawimprovementfromtheparticipantsineverysectionofthecamp.Thesectionofthecampinwhichtheparticipantssawthemostimprovementwasretailidentification.Thesectionofthecampinwhichtheparticipantssawtheleastimprovementwasreasonsandquestions.Overall,participantswerepleasedwiththefood,lodgingandstaffofthecamp.Irecommendthatwecontinuetoofferthiscampto4-HandFFAmembers.Overall,allparticipantswerepleasedwiththiscamp,and100%oftheparticipantswouldrecommendthiscamptoothers.Nextyear,weplanonprovidingmorebreakstotheparticipants,anddevotingmoretimeandresourcestoreasonsandquestions.WehopethatthiscampfullyrepresentedtheeffortsoftheDepartmentofAnimalSciencetoeducateyoungpeopleinanimalagriculture.Thankyouforyoursupportofthisevent.Sincerely
