3.0 Commission and Operation 3.1 General Operation 3.1.1 Selecting and Starting a Program

1. Touch the “ON” (“ON/OFF” on double ovens) control. 2. Select the desired function (e.g., BAKE). 3. Select the desired operation from the submenu (e.g., CONVECTION BAKE). 4. Select the temperature (e.g., 425°F).

3.1.2 Turning Off the Appliance

To turn off the oven, touch the "OFF" (“ON/OFF” on double ovens) control. The oven will turn off and the time of day will appear in the display.

3.2 Power Failures

If the oven should lose power during operation, a “Power Failure” message is displayed, as shown in Figure 3-1.

This message is displayed to advise that the incoming power was disrupted (power failure, etc.). It does not require any type of technical service. The ”Power Failure” message can be cleared via the following procedure: 1. Turn the oven on by touching the “ON” or “ON/OFF” control. 2. Turn the oven off by touching the “OFF” or “ON/OFF” control. The

message clears.

3.3 Special Features 3.3.1 Self-Clean Function (“P” Models Only)

When the self-clean function is selected, the oven is heated to very high temperatures to burn off any residue inside the oven cavity.

The self-clean function is not a timed function and its duration is based on the amount of soiling inside the oven cavity. Total time will vary depending on the condition of the oven interior.

Once the self-clean program completes and the oven cools, wipe the interior with a damp cloth to remove any remaining residue.

3.3.2 Door Lock (“P” Models Only) The door lock is operated via a motorized control. During the self-clean procedure, the door automatically locks after one (1) minute. The door remains locked until the self-clean process has completed and the oven temperature has dropped below 392°F (200°C).

If the self-clean function is accidentally started, shut off the oven and wait for the oven temperature to drop and for the door lock to release. This may take several minutes.

The door lock can be activated via service mode. See Section 6.4. 3.3.3 MasterChef (Where Applicable)

The “MasterChef” menu feature is designed to ease operation and improve cooking results. This feature uses a list of selectable preset functions for commonly cooked foods. Users can select the type of food from a menu and simply reply to a few basic inputs (e.g., weight). The oven performs the necessary functions automatically to ensure a perfectly cooked meal.

3.3.4 Child Safety Lock (All Models)

The child safety lock is used to prevent children from operating the oven or to conserve standby power when the oven will not be used for an extended period of time.

To activate the child safety lock: 1. Slide the lock to position “O”. 2. The oven cannot be operated and the clock will not be displayed.

To deactivate the child safety lock: 1. Slide the lock to position “I”. 2. The oven can then be operated and the clock will be displayed.

Warning! Using the child safety lock does NOT disconnect all sources of power within the oven. To safely disconnect power during service shut off the main supply via the circuit breaker.

4.1 Cooling Air Intake

The cooling fan (Figure 4-1, Item 9) takes in the air through the opening below the door. The air flows between the outer and inner glass panes and into the area between the housing and upper holding plate insulation mat.

4.2 Vapor Intake The cooling fan takes in the vapor through the vapor outlet (Figure 4-1, Item 8) and the exhaust duct (Figure 4-1, Item 10).

4.3 Cooling Air Path The cooling fan moves the air and vapor into the air vents (Figure 4-1, Item 7) and through the opening between the bottom plate and the lower insulation mat (Figure 4-1, Item 5).

4.4 Cooling Air Exit The cooling air exits via the opening between the vent strip and bottom plate (Figure 4-1, Item 4).

4.5 Door Contact Switch The door contact switch monitors the opening and closing of the door. If the door is opened during cooking, the convection fan and heater elements for the appropriate oven are turned off.

4.6 Heater Elements Each oven cavity is equipped with four heater elements.

4.8 Oven Cavity Temperature Sensor The oven cavity temperature sensor is located in the guide tube of the upper heater elements (Figure 4-2, Item 1). The sensor sends a signal back to the main electronic. The oven cavity temperature is calculated and displayed via the display electronic.

4.9 Roast Probe The roast probe can be used to monitor the core temperature of meat and poultry. The long pointed end of the probe is inserted into the thickest portion of the meat. The short end of the probe is inserted into the roast probe socket located on the right side of the oven cavity. For optimum cooking results ensure that the probe does not contact any bones within the meat or poultry.

4.10 Self-Clean Temperature Sensor (“P” Models Only) The self-clean temperature sensor is located in the vapor outlet (above the catalyst) and monitors the oven temperature during the self-clean mode. See Figure 4-4.

4.11 Oven Cavity Thermostat Each separate oven cavity is equipped with a high-temperature thermostat (thermal cutout). The thermostat is designed to interrupt the power in case the temperature exceeds 680°F (360°C) during normal operation.

4.12 Self-Clean Thermostat (“P” Models Only) Each separate oven cavity is equipped with a self-clean thermostat designed to interrupt the power should the temperature exceed 968°F (520°C) during the self-clean mode.

4.13 Convection Fan

The convection fan is mounted to the rear wall of the oven cavity. It pressurizes a large volume of air in the small cavity located in the rear wall of the oven to produce true convection.

4.14 Rotisserie Motors

Two 120VAC rotisserie motors are mounted to the rear wall of the oven. These motors drive the rotisserie shafts.

4.15 Oven Cavity Lights There are two oven cavity lights in each oven. Two transformers mounted in the top of the oven power the lights.

When the self-cleaning program begins, the door lock motor activates and locks the door. The door cannot be opened until the temperature drops below 398°F (200°C).

5.0 Service and Maintenance

5.1 Cleaning and Care Information 5.1.1 PerfectClean®

PerfectClean is a smooth, nonstick surface that cleans up easily with a sponge. The following items are coated with the exclusive Miele PerfectClean finish: Oven walls Roasting pans Anti-splash tray Oven runners

Do not clean PerfectClean items in a dishwasher. Some detergents contain compounds that could damage the finish.

To properly clean the surfaces, use a sponge and a solution of hot water and liquid dish soap for cleaning. Do not use abrasive cleaners, ceramic cleaners, metal scourers, or oven cleaners.

After cleaning, rinse thoroughly with water. The water should run off the surface easily. Any residue will hinder this effect. Stubborn baked-on grease may need to be soaked first to loosen deposits.

Clean up all spills as soon as possible to prevent stains. Spilled fruit juices can permanently discolor surfaces; however, this discoloration does not hinder the efficiency of the finish.

5.1.2 Manually Cleaning the Oven Cavity

Danger! Allow the oven to cool before cleaning.

To make cleaning easier, remove the oven door, remove the runners, and lower the upper heater element.

Clean the oven surfaces with a solution of hot water and liquid dish soap and a sponge.

Do not use abrasive cleaning agents, hard brushes, metal scouring pads, steel wool, knives or other abrasive materials.

Do not use oven sprays on any part of this oven. Dry surfaces before reassembly.

1. Open the door fully. 2. Flip up the locking tabs on both hinges, as shown in Figure 5-1. 3. Slowly begin to shut the door until the locking tabs stop the door. 4. Pull the door upward to remove.

1. Remove the oven door (see Section 5.2.1). 2. Turn the two thumbscrews (Figure 5-3, Item 1) counterclockwise and remove. 3. Pull the runners (Figure 5-3, Item 2) away from the oven wall to remove.

1. Remove the oven door (see Section 5.2.2). 2. Remove the 8-millimeter nuts securing the runners (one per side, located

behind arrow in Figure 5-6).

5.4 Halogen Light Bulb Replacement 1. Remove the runners. 2. Spread a dishtowel on the oven floor to protect the enamel, in case the

light cover falls. 3. Insert the supplied lid opener between the light cover and the metal frame

of the light along the edge closest to the oven door. 4. Carefully pry the light cover out of the metal frame (Figure 5-8).

Note: Do not bend the metal clamps. Bending the clamps could damage the clamps and reflector.

6. Replace the halogen bulb.

Note: Only use a 12V, 10W, 572°F (300°C) heat-resistant, Osram W818 bulb. Do not touch the new lightbulb with your fingers; touching the bulb will reduce its life.

7. Put the light cover back in place with the notch to the rear of the metal clamps. 8. Press the light cover into the metal frame. 9. Re-install the runners.

5.5 Removing the Appliance for Service

1. Turn off power to the oven via the circuit breaker. 2. Remove the oven door(s) (Section 5.2). 3. Remove the installation screws (Figure 5-10). 4. Carefully slide the oven out from the cabinet. 5. Lift the oven to remove it from the cabinet. 6. Disconnect the oven from the power supply.

Caution! Use adequate manpower to remove the oven. Ovens can weigh more than expected.

Note: Ensure that the entire bottom of the oven is evenly supported, or the bottom of the oven could be damaged.

1. Bend the end of a stiff wire into a 4-hook (Figure 5-18, Item 1). 2. Carefully insert the wire between the door and the control panel.

3. Pull the door latch (Figure 5-18, Item 2) by moving the wire horizontally to the right.

5.22 Oven Cavity Back Panel Removal 1. Remove the front door(s) (Section 5.2). 2. Remove the four screws securing the panel (Figure 5-24, Item 1). 3. Pull the back panel forward to remove from the oven (Figure 5-24, Item 2).

Gently lift the mounting flange upward and move it toward the front of the oven. 4. Disconnect the cavity temperature sensor connection (Figure 5-25, Item 3). 5. Remove the cavity temperature sensor. 6. Disconnect the heater element connections. 7. Remove the heater element.

5.23.2 H 468x/H 478x 1. Remove the oven for service (Section 5.5). 2. Remove the front and rear cover plates (Sections 5.9 and 5.10). 3. Remove the cavity temperature sensor from its socket on the upper

heater element. 4. Disconnect all electrical connections from the upper heater element. 5. Remove the two 8-millimeter nuts securing the upper heater element. 6. Remove the wing nut securing the top heater element to the ceiling of the

oven cavity.

Warning! The upper heater element must not be bent beyond a 90° angle. Do not use excessive force; otherwise, components on the oven cavity

back panel can be damaged.

7. Slide the heater element down and off the shaft on the cavity ceiling, then slide it forward to remove.

5.24 Convection Heater Element (R14) Removal 1. Remove the door(s) (Section 5.2). 2. Remove the oven for service (Section 5.5). 3. Remove the oven cavity back panel (Section 5.22). 4. Remove the rear panel(s) (Sections 5.11 and 5.12). 5. Disconnect all electrical connections to the convection element. 6. Remove the screws securing the convection element to the inside of the

oven cavity (Figure 5-26, Item 1). 7. Remove the convection element.

5.25 Convection Fan (M2/2) Removal

7. Remove the three screws securing the fan to the outside of the appliance (Figure 5-27).

8. Disconnect the fan electrical connection. Remove the fan.

6.3 Programming Mode Initial requirements: 1. Cancel/finish any programs that are running. 2. Switch off the appliance. 3. Close the door.

Note: The access procedure must be completed within 10 seconds. On double ovens, the programming mode is separate for each oven. Use the appropriate On/Off pad to access programming mode for the desired oven. The selected oven is indicated by the arrow in the display as follows: upper oven; lower oven.

6.5 Temperature Test

6.5.1 Test Equipment 1. Electronic thermometer (mat. no 05595760) or thermocouple/multimeter 2. Special test lead (mat. no 05661240) 3. Holder for test lead (mat. no 05054650)

6.5.2 Test Procedure Before starting the test procedure, check the main voltage (208VAC-240VAC) and verify that the appliance is programmed correctly (H 39x - check if correct broil element(s) is installed, or H 4xxx - check voltage setting in service mode).

Note: Test procedures 1 and 2 must be performed.

6.5.2.1 Test Procedure 1

1. Open the oven door and slide a rack into the second slot from the bottom. Remove all other racks from the oven.

2. Insert the special test lead and holder into the center of the rack just installed into the oven. The copper plate on the test lead should face up towards the top of oven. The holder will keep the test lead from shifting.

3. Close the oven door with the test lead wire now running to the outside of the door.

4. Connect the test lead wire to the electronic thermometer or thermocouple/multimeter.

5. Turn the oven on. Select “Convection Bake” with the temperature set to 320°F (160°C). Set the timer to 30 minutes. After 30 minutes, the oven should be at 320°F.

Note: Let the oven cool down completely before performing Test Procedure 2.

6.5.2.2 Test Procedure 2

1. Repeat steps 1 to 4 in Test Procedure 1. 2. Turn the oven on. Select “Surround” with the temperature set to 375°F

(190°C). Set the timer to 40 minutes. After 40 minutes, the oven will be at 375°F.

Note: Due to the slow response of the measuring device (electronic thermometer or thermocouple/multimeter), the oven temperature display and the temperature on the measuring instrument may vary during the warm-up time. Measurement should only be taken after the minimum test time stated for each procedure.
