Our oven has the following technical characteristics:

* Inner chamber of the oven is made of fireclay of Pereruela and is insulated. * Exterior finish in stainless steel. * Provided with wheels. * Chimney draught and wrought door with window * AF-25 burner and electronic control. * Gas power: 25kW.

Uses of the oven: This oven has been designed for professional use in restaurants, pizzerias, rotisseries, hotels, etc. to cook following dishes, amongst others: - Roasted meat (lamb, rabbit, boar meat, goat, deer, chicken, poultry, etc.) - Meat and fish stews, soups, cassoulet and rice. - Pasta: pizzas, bread, … - Pastries: pies, cakes, muffins, cookies, … Advantages: 1.- Possibility to operate with wood, gas and combining wood and gas at the same time. 2.- High efficiency and very economical cooking cost thanks to a very low power consumption 3.- Ecological: does not contaminate the atmosphere and preserves nature, thanks to a combined use of wood and gas. 4.- Gas position is automatic by means of a digital centralised system. Assures very quick heating and productivity. 5.- Cooking is not interrupted. In case of failure of one of the fuels, the combined oven can continue working with the other fuel. In case the wood ends up burning, the oven automatically switches over to gas. 6.- The combined working with wood and gas allows you to reduce your firewood stock to a minimum. 7.- Electronically controlled AF-25 burner. 8.- Clay oven is made of one piece only. No energy spilling. 9.- Our gas system can be installed in other manufacturer’s ovens (please consult).

Working:

These ovens can work with gas, wood or with gas and wood combined. In case the oven is lighted with wood, the door can remain open or an anti-smoke draught can be used. Once the wood combustion has started, it can be reinforced with the gas system. A powerful gas burner will allow that the operating temperature is reached faster. However, the time required for the walls of the furnace to reach the proper temperature is 25 minutes. The high temperature obtained during ignition normally drops quickly if it is not stoked. Temperature must be maintained stable, while the walls are hot. Once the oven is no longer switched on, a residual heat allows to continue cooking for several hours.
