DRY AGEDMEAT
Dry aging is a time consuming and expensive process but one that always pays great dividends at the end of the fork. Few restaurants even bother to do it. Those that do will do it for no more than 4 weeks. We age our beef any where from 6 to 8 weeks for the maximum in taste and tenderness. Apparently this patience is well worth it. Noted food critic and self-admitted carnivore Frank Bruni of The New York Times said that “Robert’s offers…the very best steaks in New York City”.
