This summer, it seems, has become a symbol for rebuilding and self-improvement. As the temperature risesand the economy picks up speed, so tooare the winter cobwebs being eagerlydusted away. Local establishments areworking on face lifts and moving theirbusiness up to the next level to makeyour experience with them the best itcan be. You can look at everything fromour resorts to our hotels to our town tosee that money and time are beinginvested in their future and ours.

One of our features in this issue is on Daufuskie Island where majorrenovations and investments have beengoing on for months. Both Melrose on

the Beach and Bloody Point are making bold statements about their belief in theirfuture with overhauls in the golf courses, grounds, restaurants, andaccommodations.

Take a look at our local hotels. The Westin in Port Royal Plantation justfinished a 30 million dollar cash infusion with the hopes of becoming a premierinternational destination for meetings and recreation. The Sonesta Resort,formerly the Crowne Plaza in Shipyard, also just spent 30 million in renovations onthe guest rooms, the meetings spaces, and the grounds.. The Beach House,formerly the Holiday Inn Oceanfront, gave facelifts to their rooms, lobby, and TikiHut deck and built a new restaurant. The Omni in Palmetto Dunes has beenworking on phase I of their extensive renovation plan which was scheduled to becomplete by this summer. They rebuilt their family pool, and reinvented thepoolside bar, hotel entrance, meeting rooms, spa, and exercise facilities. TheMarriott Resort & Spa in Palmetto Dunes also made improvements to guestrooms, pool areas, and restaurants.

Sea Pines is another great example of one of our famous Island destinationsinvesting in their future and that of their property owners to the tune of 50 milliondollars. They are completely redoing the Plantation Club, planning to build a newHarbour Town Clubhouse, and plans have been approved for a new two storyBeach Club.

Mid-Island Hilton Head will soon have a whole new look too. What used to beour enclosed Mall at Shelter Cove is being transformed into an exciting mix ofopen air shops and restaurants, a Kroger grocery store, and waterfront apartmentsand park areas. The town of Hilton Head is also busy as they renovated theentrance to and facilities at Coligny Beach, are building bike paths on 278, anddid an overhaul at the Bristol Sports arena. Many of our local restaurants are, ofcourse, busy following suit and updating their facilities or moving to newer ones.

This shift into action is both encouraging and inspirational to me after somany tough years and I have even stepped outside of the box to update andmodernize. I am proud to say that Taste magazine is now officially on Facebookand Twitter, so please give us a visit, a thumbs-up, and a tweet. Have a greatsummer and enjoy all we have to offer!

acknowledge the importance of hisdedicated employees. “For the most part, it’s the familythat we have in here,” he says. “You’reonly as good as your staff and theymake Shannon and I look good. They’rethe ones who keep the great localcrowd coming back and the vacationerscoming back.” “The change is good, it’s reallygood,” Russell adds. “This was truly ablessing in my eyes. I heard a quote along time ago, ‘change is the process tosurvival,’ and that really stuck with me. Ifyou don’t change it up, I think you getleft behind.” Of course, it is also said that themore things change, the more they staythe same. “We’re the same Captain Woody’sas we were down at the marina – allyou’re doing is walking in a differentfront door. Never Eaten Thai?Give it a Try at

So the e-mail comes in from David(publisher of Taste of Hilton Head),Ruan Thai Hut is my assignment for thenext issue. I’ve passed the locationseveral times on Main Street, buthaven’t eaten there in the 16 monthsI’ve been an island resident. But thedeeper darker truth is that I’ve nevereaten Thai food in my life — so a mildcase of panic sets in. I don’t want toembarrass David by writing a bad piece,so I sheepishly begin to confess viareturn e-mail. As I’m typing, a thoughtcrosses my mind for a story angle thatcould work. I’m guessing there aresome other folks a little hesitant to trysomething new and I’m feeling bravetoday — so I offer myself up. A few days later I meet Chef Steven

Ellis at the restaurant. I normally don’teat while visiting restaurants tointerview, but today we’re making anexception. I put myself in his hands andhe suggests Chicken Pad Thai, which ismedium rice noodles stir-fried witheggs, bean sprouts and green onionstopped with crushed peanuts. It comesfrom the kitchen looking scrumptiouswith an exotic fragrance. I expected adifferent flavor due to the seasonings. Itwas subtle, unique and delicious. Why hadn’t I tried Thai? I didn’tknow anything about it and I wouldn’thave the slightest idea what to order.The thought of not being able tounderstand the menu was intimidating. I asked Ellis why he thought peopleare hesitant to try Thai food. He said

that some mistakenly believe that all ofthe food is spicy, explaining thattraditional dishes from Thailand arespicier than they make them in the U.S.,at Ruan every dish on the menu iscreated to order. I looked over themenu and saw what he was talkingabout printed in large type across thebottom, “Mild, medium, hot, very hot.Please let your server know your spicelevel.” “Everything on our menu startsmild and then it goes medium, hot orThai hot. Every once in a while we getthe brave person who wants to goabove Thai hot,” Ellis said with a

chuckle. “We have some things on themenu that have ingredients that arenaturally spicy and those are clearlymarked. But nothing is going to meltyour face off.” For those trying Thai food for thefirst time and looking for basic dishes,Ellis recommends Pad Thai, which isavailable with chicken, shrimp or pork,Mussaman Curry and any of the Stir Frydishes. Kids can enjoy Pad Thai, ThaiFried Rice or eat “American” withChicken Nuggets or Grilled Cheese. I learned that traditional southernThailand cuisine features local seafoodlike shrimp that are also native to theLowcountry, making our area a greatplace to sample Thai. “Many of ourdishes are as close to original Thai as youcan get,” Ellis said. Ruan’s specialtiesinclude: Crispy Duck, a crispy roastedduck (in half) dressed with your choice ofbasil, red curry or honey sauce; Sammy’sSizzling Beef, a plate of sliced marinatedsirloin steak, complemented withsesame, pineapple, tomato, onion, andbell pepper; and Mango Sea Bass, aseared filet of Sea Bass in Ruan’s savorymango sauce. The Ruan Thai Hut opened on MainStreet in September 2011. Locals mayremember it as the former Mangiamo’srestaurant, but would not recognize itfrom the remodeled interior. The bright,modern décor seats 40 and featuresartistic touches from Thailand, including

a large portrait of the present King andQueen of Thailand. Patio seating for 25under roof with tropical plants and alarge waterfall provide a lush scene for afamily or business lunch and the perfectplace to enjoy the day at dusk and intothe evening. The intimate setting insideand out makes a perfect eveninggetaway for a date night. The Ruan Thai Hut is the fourth Thairestaurant owned and operated by theSuphata family. The first location openedin October 2005 on Hilton Head Islandat 811 William Hilton Parkway, next toLava Fitness. Ruan Thai II is in Bluffton at26 Towne Drive in Belfair Town Village.Savannah hosts the third restaurant at 17Broughton Street. The menus are identical at the twoisland restaurants and both have an EarlyDining Menu, Monday and Tuesday from4:30 to 7:30 p.m. The lunch menu offers 15 differententreés all under $10 that are availablewith vegetables, tofu, chicken, beef,pork or shrimp. Ruan Thai Hut offers all day DrinkSpecials on Wednesdays that includesdrafts for $2, domestic bottles for $2 andhouse wines by the glass for $4. Theirwine list includes a wide variety ofselections from California and aroundthe world. I thoroughly enjoyed my firstexperience with Thailand cuisine. I alsofound Ruan’s menu very detailed and

clear and I’m sure I could have orderedsomething on my own that I would haveenjoyed. I believe those who havesampled other world cuisines and whoenjoy Chinese and Japanese food willfind pleasant similarities and contrasts toThai food. Seafood lovers craving aunique and differing approach to localcatch will also enjoy Ruan’s exotic fare. Ialso recommend Ruan to those lookingfor a temporary departure from islandlife without having to cruise over thebridge. I do enjoy seafood, so I believeI’ll try one of their intriguing fish dishesnext time.

Starting out as a prep cook atCharley’s Crab in Troy, Michigan, EricSeaglund worked his way up there overthe years to Chef D’Cuisine. “I had apassion for cooking in those earlydays as well, and was told I had anatural talent, so I decided topursue a culinary degree.”

With his culinary degreeand work experience, Ericmoved to Hilton Head whenhe was offered a promotionto Executive Chef of theformer Charley’s Crab onHilton Head Island. “Ijumped at the chance toget out of the cold andinto the sun,” he said. “Itwas a great opportunityfor me to do what I dobest, and I have a hugepassion for the LowCountry style of cooking.” In2010, Eric was part of theconcept change whenCharley’s Crab became theChart House on Hilton Head, andhe is now Executive Chef.

Eric’s favorite dishes to prepareare “anything to do with seafood,especially Local!” “My favorite dishesconsist of pairing Low Countryingredients such as grits, greentomatoes, local shrimp, or local oysterswith the main dish,” he added. Whenyou visit the Chart House, Eric’s personalcreations will always have a CH next tothe menu item.

“People tell my wife that she is so

lucky to be married to an ExecutiveChef. Her reply is always the same, “I’mthe chef at home because my husbandis always working.” When Eric has timeto cook at home for his family, hisspecialty is salmon with several of his

favorite side dishes. “It’s a treat for thefamily when I cook! Our three sonsparticularly like when I grill burgers andadd some cheddar and bacon.”

When he’s not working, Eric enjoyshanging out with his family. “We take trips when the restaurant isslow and the boys are out ofschool.” He loves to play golfand wishes he had the time toplay more often. “My favoritetimes with my family are spent at the beach or at thepool – just to watch the boyshave fun and to relax,” Ericshared.

The best thing aboutbeing a chef to Eric ismaking people happy andhaving guests return. “I lovecreating dishes for guests and having them ask me tocome to their table so that they can tell me they have hadan incredible dining experience.”

Eric sees his job as making peoplehappy so that they enjoy everything

and want to return. He also loves toteach at his monthly cooking classes.“My guests have fun, and so do I!”

Chance DaltonBorn in Ohio, Chance Dalton moved to Hilton Head with

his family when he was 7 years old. While a student at HiltonHead High School, he exceled in wrestling and cross country.

Dalton was ambitious and was thrilled to get a jobworking with Hudson’s at the young age of 15. As a valuedemployee who is well-liked by his co-workers as well asguests, he has climbed the ladder there for the last 7 years.“My first job was driving a golf cart and taking restaurantguests from the parking lot to the restaurant,” Dalton said.After several seasons, he began bussing tables and later waspromoted to food runner. When he turned 21, he waspromoted to bar back, and was later promoted to theposition of bartender and server.

Dalton credits his outgoing personality to his experienceat the restaurant. “I used to be shy when I was in high school,but this business has made me much more outgoing,” hesaid. While spending some time talking with Dalton at therestaurant and seeing him interact with guests and co-workers, it was obvious that he truly cares about people. “Inever say no – no matter how busy we are or what peopleask, I find a way to make sure that customers have a greatexperience when they are here.”

Some of the regulars know him by name and sit at thebar or in his section so he can wait on them. What makesDalton happy about his job? “It makes my day whencustomers come in and say, ‘We’re on the island for 5 daysand we’ve been here at Hudson’s for the past 4!’” He hearsthat a lot from golfers.

One reason that Dalton attracts golfers to return to sit inhis section or at the bar is in addition to receiving greatservice, they can talk with him about golf. He’s a golferhimself, and loves to play the game when he has free time.Also a college student, free time is somewhat rare, butDalton says that working at Hudson’s doesn’t feel like work.“It’s like a second family when I’m working.”

When asked what it takes to be successful in thisbusiness, Dalton replied modestly, “You have to be friendlyand you have to smile, and you have to care.” And ChanceDalton is and does all of that!

Summer demands drinks to linger over. The hot sun isfar more bearable with a tall iced drink in hand, and there'snothing better to sip on a steamy afternoon than sweettea. A southern favorite, sweet tea is generally brewed withenough sugar to give even Red Bull addicts ADHD.

Most restaurants in the south, including fast-food andother national chains, offer a customer the choice of sweettea or unsweet iced tea. It is a signature drink of the regionto the point where the southern use of the word "tea" islargely used to refer specifically to cold sweet tea and notto hot or plain varieties. In non-southern states, manyrestaurants don’t offer sweet tea.

Sweet tea is a style of iced tea commonly consumed inthe southern United States. Sweet tea is made by addingsugar to black tea brewing in hot water. The tea is servedice-cold and plain but may also be flavored - traditionallywith raspberry, lemon, or mint.

In 2003, supposedly as an April Fool's joke, theGeorgia House introduced a bill making it a "misdemeanorof a high and aggravated nature" to sell iced tea in arestaurant that did not also offer sweet iced tea on themenu. The bill never went to a vote.

In the early 1900s, sweet tea was an item of luxurybecause of the expensive nature of tea, ice, and sugar. Icewas highly valued since it had to be shipped from afar at atime when access to cool drinking water was already aluxury. In modern times, iced tea can be made in largequantities quickly and inexpensively.

The oldest known recipe for sweet ice tea waspublished in 1879 in a community cookbook calledHousekeeping in Old Virginia by Marion Cabell Tyree, whowas born in Texas. The recipe called for green tea sincemost sweet tea consumed during this period was greentea. However, during World War II, the major sources ofgreen tea were cut off from the United States, leaving themwith tea almost exclusively from British-controlled India,which produced black tea. Americans came out of the wardrinking predominantly black tea. Sweet tea was onceconsumed as a punch mixed with hard liquor withflavorings of mint and cream, with mint julep being a closeversion of the punch drink with its similar ingredients.

Not surprisingly, like many American traditionsiced tea has now been improved by the additionof alcohol - sweet tea vodka hitting it big on thecocktail scene. Sweet tea vodka is a fairly recentaddition to the liquor lineup.

While still not quite as sweet as the real deal,the Arnold Palmer – a non-alcoholic drinkconsisting of half lemonade and half iced tea –hasn’t been the same since. The liquor-basedversion is affectionately known as a John Daly andreplaces the iced tea with sweet tea vodka, ofwhich there now are several varieties available.

The first sweet tea vodka to hit the market andstill one of the most popular is Firefly Sweet TeaVodka, distilled in Charleston, S.C. and flavoredwith tea leaves grown just five miles from thedistillery. Firefly tastes exactly like a perfect glass oficed tea should taste. It's refreshing and sweet, andgoes down easy. Of course, this is 70-proof icedtea, so gulping it like Nestea could yield somefairly interesting results. The clean flavor is good ina number of cocktails, according to bartenders, butthe best way to drink it is in a tall glass of ice filledhalfway with Firefly and topped off with water.

Sweet Tea with Vodka and LemonadeThis is a perfect summertime cocktail. Because it'sa combination of iced tea, lemonade, and vodka,we've dubbed it the tipsy Arnold Palmer. Makes 8

Ingredients• *2 large tea bags for iced tea• ½ cup boiling water• 8 fresh mint sprigs• 4 cups lemonade made from frozen

concentrate• *½ cup vodka• Ice cubes• 8 lemon slices*To streamline this recipe, you can use one cupSweet Tea Vodka from South Carolina's FireflyDistillery in place of the tea and the vodka.

INGREDIENTSFresh Mahi Mahi2 Peeled and seeded oranges or 1 cup fresh squeezedorange juice1/2 cup olive oil1/2 cup brown sugar1/2 fresh pineapple, peeled, cored and diced1 fresh tomato, diced1/4 red onion, peeled and diced1 tablespoon minced fresh cilantro1 fresh lime1 finely diced jalepeno if you like a little heat1 Can sweetened coconut Milk1 8 oz. container of heavy cream

FOR THE ORANGE GLAZE1. Combine the fresh oranges (or 1 cup orange juice), theolive oil and brown sugar in a food processor.2. Using the whipping blade (or chopping blade), mixingredients until it emulsifies into a salad dressingconsistency.

FOR THE PINEAPPLE SALSA1. In a large mixing bowl, combine the diced pineapple,diced tomato, diced onion, cilantro, jalepeno, and juice of thelime.2. Gently toss to combine.3. Season with salt and pepper to your taste.

FOR THE COCONUT CREAM1. In a food processor using the whipping blade (or choppingblade), whip the heavy cream until it peaks into whippedcream.2. While the food processor is still running with the heavycream inside, slowly add approximately 1 cup of the coconutmilk until a thick coconut cream is formed.

TO PREPARE YOUR DISH1. In a skillet, add about a tablespoon of olive oil and heatskillet to medium.2. Season both sides of the Mahi Mahi with salt and pepper.3. Cook on both sides until fish is cooked to your liking (youcan cut into the middle to see if it is done enough).4. Spoon on your orange glaze, turn fish over in the pan andspoon glaze on the other side.5. Plate your fish and top it with the pineapple salsa. Finishthe top of the fish with a drizzle of coconut cream. Enjoy!

INGREDENTS1 Tablespoon vegetable oil1 medium size onion finely dicedSalt and pepper¼ pound of good smoked bacon diced into small pieces3 ounces Sambuca liquor1 pound of fresh spinach washed and stems removed4 ounces gruyere cheese cut into small cubes12 fresh local oysters in the shell shucked14 ounces béarnaise sauce

METHODHeat the oil in a large sauté pan over maximum setting

and add the onions. Season with salt and pepper and stiroften until onions turn slightly brown and soft. Add the baconand reduce the heat to medium. Continue cooking untilbacon starts to render about 5-6 minutes. Deglaze the panwith Sambuca and ignite to burn off the alcohol, when theflames die down turn off the heat and drain off the fat in astrainer. Put a pot of water on to boil and cook the spinach forabout 2-3 minutes. Drain and chop the spinach. Put onionand bacon mixture in mixing bowl and add-in the choppedspinach and gruyere cheese mix well and cover each oysterwith spinach mixture. Bake in oven at 400 degrees for 8-10minutes, remove from oven and top each oyster withbéarnaise sauce. Serves 4

So, what does thatlook like? Consider an egg whiteomelet chock full of vegetables, somewheat toast, and a handful of berries.Throw some avocado slices or a ½ cupof Greek yogurt on the side and youare set.

• Hydrate, hydrate, hydrate! Waterin general is the answer to a lot ofhealth issues. The more water youdrink, the more full you will feelthroughout the day which can help youavoid snacking. If you imbibe, you willwant to get a refill on your water forevery alcoholic beverage you order.

You will thank yourself in themorning! A rule of thumbwhen choosing which adultbeverage to indulge in:stick with the clear. Darkliquors have more sugarsand can wreck your dietalong with your nextmorning. (My personalfavorite reason to stayhydrated? Water helps torid your body of toxinsmaking your skin looktighter and brighter. Whodoesn’t want that?)

• Choose grilled orblackened from the menu.We are so lucky to live in orvisit this absolute chefmecca! Take advantage ofthe amazing cuisine andavoid the extra empty carbsof fried food. For example,fish is high in protein,omega 3’s, and the goodfat. But don’t fool yourself:as soon as it’s fried all thebenefits are outweighed bythe bad fats.

• Plan your indulgences. This goesfor every day life in addition to vacationtime. If you have your heart set on themolten chocolate lava cake a la mode,you’ll need to save room for that.Literally. That sick feeling you get afterover-indulging is a physiological insulinresponse where your body is franticallystoring fat instead of making it availablefor energy. Even the healthiest of mealscan be undone by going overboard onthe basket of free bread. Plan whereyou want to splurge, and then savorevery bite.

As the wheels of progress anddevelopment constantly change thelandscape of our lives, it is not an easytask in this day and age to find a pieceof paradise and a well preserved part ofour past. Daufuskie Island, Hilton Head’squiet neighbor to the south, somehowhas managed to defy the odds in theprocess of preserving its history and

ambience. To visit Daufuskie is to take astep back in time to a world with a slowpace and a carefree attitude. Perhaps part of Daufuskie’sinnocence and charm is due to the factthat there are no wheels that will get youthere. There is no causeway, no bridge,no man-made link to the mainland. Onlyby taking a journey by boat can you

unlock and unbury the Island’s lore,secrets, and treasures. What exactly will you find when youvisit this small Island that measures only8 square miles? Try and picture a dayon a pristine piece of land that houseshistory and serenity. Visualize dirt roadsand golf carts, not highways and 18-wheelers. Imagine quaint cottages and

old schoolhouses and churches, nothigh rises and shopping malls. There isplenty of sun and sand with 3 miles ofmostly uninhabited beach. There areworld class golf courses and tennisfacilities that sport sweeping views ofthe ocean and sound. If you beachcomb for a shark’s tooth, you may findan Indian arrowhead instead. If youcrave history, you will be like a kid in a

candy shop. Just want to eat devilledcrabs and oysters and sip cocktails allday long while gazing out to sea? Thatwon’t be a problem either. Oh yea…and don’t be in a hurry. With a postedspeed limit of 23 mph, you will not havemuch of a choice. Daufuskie’s name is derived fromthe Creek Indians and means “sharpfeather”. It is one of approximately 100Sea Islands which dot the Atlantic Coastfrom northern Florida up through SouthCarolina. These southern Sea Islandshave many stories to tell. African slaveswere imported to them in the 19thcentury as laborers to work the cotton,rice and indigo plantations. The slavesdeveloped the notable and distinctGullah culture and language whichbecame pervasive on Daufuskie. Most ofthe Sea Islands have now fallen victim toprogress and profit and are known forresort, recreational, and residentialdevelopment. While Daufuskie has alsofallen prey to some development over

the past several decades, it haspreserved much of the rich history andGullah traditions that were once itsbackbone. Over the centuries, the Islandhas been home to Indians, Europeanexplorers, Union soldiers, and freedslaves. Because of its Gullah and CivilWar history, Daufuskie was named as anhistoric district on the National Registerof Historic Places.

There are many options fortransportation to the Island from HiltonHead marinas. Some services have setschedules while others will shuttle youover and cater to your time frame anddestination. All require reservations andI suggest giving them plenty of advancenotice, especially during tourist season. Once you get to Daufuskie, you canstay for a day or a lifetime and you canchoose recreation, relaxation, or apursuit of the past. Long time local, Wick Skurry, runsthe public ferry service to Daufuskie outof Broad Creek Marina. A typical visit toDaufuskie for day-trippers that voyageover on Calibogue Cruises is as follows:Their ferry will leave Broad Creek Marinamid-morning and upon arrival atDaufuskie’s Freeport Marina, thepassengers will be treated to a lavishlowcounty buffet prepared by Daufuskienative, Ernestine Smith. “She fixes herhomemade fried chicken, pork chops,and other typical Gullah fare – all

unhealthy and all so good,” describedWick. Most visitors will then pick up agolf cart and design their own destiny.An Island map directs visitors totreasures: human, historic, artistic, andedible. Paved and dirt roads will windunder moss draped Live Oaks andtraverse paths once trodden by slaves,farmers, fishermen, and bootleggers. One of your first stops should bethe Daufuskie Island HistoricalFoundation’s Billie Burn Museum toabsorb the history of the Island andobserve centuries old mementoes andarchives. The museum displays oldphotographs, Civil War paraphernalia,and even a stuffed 11 ½ foot alligator.Treasures also include a copy of theoriginal land grant from England’s KingGeorge II to Dave and Francis Mongin in1735. David “Money” Mongin was afamous pirate hunter. As a result ofreducing the pirate scourge, KingGeorge granted him control ofDaufuskie. Legend has it that bothDaufuskie and Hilton Head are home tountold buried treasures. Your map will show that the Island issplit into parts. There is the private HaigPoint Club, the newly purchased andrenovated resorts of Melrose on theBeach and Bloody Point, and theunincorporated western part of theIsland which is where most of the history,including original Gullah homes built byfreed slaves, resides. You should stop byDaufuskie’s oldest building, the FirstUnion African Baptist Church, the twohistoric lighthouses built in the 1800’s,the tabby ruins, and ancient cemeteries.There are tiny old schoolhouses to visitas depicted in Pat Conroy’s, “The Wateris Wide”. One of these has beenrestored and added as an annex to theBillie Burn Museum to house the Gullahhistory, culture, and library. There areartisans that you can visit on your tour aswell as the Bald Eagle’s Nest, Gullahchurch, oyster houses, or, of course, thebeach. There are historic walking trailstoo. If you prefer to bypass the historyand enjoy a day of sports andrecreation, there is golf, tennis,equestrian, kayak and eco-tours,

boating, and fishing. When you gethungry, there is a choice of places torest, recharge, and have a memorablemeal. Dining optionson Daufuskie allboast a greatlocation and offer everythingfrom comfort food to southern andGullah dishes to gourmet fare. Asidefrom restaurants at the resorts, there aresome other options for visitors. Onepopular stop is long-time Daufuskiestaple of Marshside Mama’s. A visit toDaufuskie would not be completewithout a cocktail or meal at MarshsideMama’s, owned and operated by BethShipman for 16 years. Located at thepublic dock, Marshside Mama’s is agreat destination for food, drink, andfun. The building that houses MarshsideMama’s was originally built for the nativeladies to make their devilled crab beforeselling their delicacies to boaters fromHilton Head and Savannah. The famousDaufuskie Devilled Crab recipe has beenpassed down from generation togeneration. Marshside Mama’s menu“changes with the tides”. Beth posts herfare on a blackboard every day andwhile the favorites like Low CountryGumbo, Beth’s own version of Shrimp-n-Grits, and Ribs never change, theseafood special will vary according towhat is in season. They have live musicon weekends and Sundays all summerlong and are a favorite stop for local

boat owners from Hilton Head andSavannah and overnighters on theIsland. Right next to the Freeport Marinawhere the public ferry docks is the OldDaufuskie Crab Company. The CrabCompany has an open air set-upoverlooking the water complete withpicnic tables and an octagonal gazeboand bar. They serve lunch and dinnerand have live music on the weekends.The menu consists of fresh seafoodcaught right out of the river, Crab Boil,and of course the original DaufuskieDevilled Crab is made on site. When Iasked Wick if he wanted to share thedevilled crab recipe, he told me thatthere are only 3 native women who stillknow it, one of whom is like a mother tohim, and they would kill him sooner thanthey would share the secret. If you needto jump charge your energy level, besure to order a ‘Scrap Iron’. The story behind the Scrap Iron isworthy of note. Back in the 1940’s therewere thousands of descendants of freed

slaves living on Daufuskie. When theoyster industry died due to pollution

from the Savannah River, there wasonly one way to makea living and that wasby bootlegging. So

the locals would make vats ofmoonshine, roll them down onto

their boats, and take them over toSavannah to sell. Before the voyage, thenatives put heaps of scrap iron on top ofthe barrels so that if they werequestioned by officials as to the purposeof their voyage, they just claimed thatthey were going to sell their scrap ironto feed their families. Scrap Iron thusbecame synonymous with some mightystrong hooch on Daufuskie and is nowthe name for a power-packed cocktail. Resort development foundDaufuskie in the 1980’s when oceanfront tracts were bought up with fervor.Most of the developers went belly up,which begs the question, “Why?” Well,there are two theories here according toWick. The more accepted one is that thegreat truth, as author Pat Conroydescribes it, is that “The Water is wide”.The cost of doing business on Daufuskieis very high because of transportationlogistics. The second theory has to dowith a “root” or hex put on the Island byBeaufort’s infamous Dr. Buzzard. If youhave read or seen the movie, Midnightin the Garden of Good and Evil, you arefamiliar with the character of Minervawho was the voodoo priestess and

whose character was based on the real life wife of Dr. Buzzard.Both Buzzards were African witch doctors living in Beaufort. The“root” or curse that Dr. Buzzard was said to have placed wasthat no white man would ever make money on Daufuskie Island. Either way, there are some new developers emerging onthe Daufuskie scene with great ambitions and visions for thefuture. They are working hard to turn their new resorts into theultimate golfing and group getaways. One of the new developments is Melrose on the Beach.Jim Schead and partner JT Bramelet purchased the old Melroseproperty and are in the process of renovating the whole resort.“We are excited about the changes that we are making and thefuture of the resort,” said Jim. One of the original eleven plantations on Daufuskie,Melrose was famous for its Sea Island cotton and thriving sociallife in the 1800’s. The plantation bears the name of a Scottishrose brought to the island by Captain Mongin. The main house,known as the Melrose Mansion, was surrounded by lavish rosegardens. Today, Melrose on the Beach encompasses over 700acres that it graciously shares with nesting bald eagles andloggerhead turtles. “It is a completely different atmosphere here now,” Jimenthused. For those who want to book a room, they have 2 to 4bedroom oceanfront and ocean-view cottages. Their 52 roomoceanfront inn, formerly the Melrose Mansion, is having acomplete facelift and is scheduled to open in the spring of2014. Weekly rentals include discounts on golf as well as accessto the rest of their amenities for free. Two years ofhard work and planning later, the BloodyPoint Golf Course will be in high gearthis summer after being completelyrevamped by the Davis Love Group. Thepool and tennis courts are also up andrunning now and they have spruced uptheir accommodations for overnighters. “We have a direction and a goal tobecome a destination spot,” said Kevin.

“We are a family that has loved thisIsland for years and know there issomething special here. We care aboutthe future of this Island and are proud tobe a part of that future.” Bloody Point,now with its own dock, has ferry servicefrom Savannah and can arrangetransportation from Hilton Head. Theyhave hired Michael DeMarco as the newchef for the Eagle’s Nest Restaurant

historic Haig Point Lighthouse, built in 1873. Although still listedas an “aid to navigation”, the lighthouse is now privately ownedand has been turned into a 2 bedroom guest house. If you want to experience Daufuskie in more than a day, youcan stay at one of the resorts or you can rent a cottage throughFreeport Marina. According to owner Krissy Roberts, even though they domostly weekly rentals in the summer, if something is availablefor an overnight last minute, they will accommodate shorterstays. It is hard to believe that this little Island has so much goingon, and it all goes on quietly and with great aplomb. Daufuskieis one of those hard to find black pearls. It is worth the effort tomake the journey and experience this unique and removedlifestyle. Kevin McCarthy describes his view of the Island: “The thingwith Daufuskie is that there have always been two crowds. Onecares about the golf courses going full speed ahead and thesecond is a destination crowd that just wants to get away. Thecycles have stayed the same. The Island is on the ‘up’ now andis going in the right direction. Whether they are playing atMarshside Mama’s on Daufuskie Islandor at the Freeport Marina down theroad, the Port O’ Johns lure a rockin’crowd that fills the dock slips, thetables, and definitely the bar. They playblues, classic rock, and modern countryand their mix has been described askick-ass, beer drinking, partying music!Their fans come by boat and by ferry,from near and from far. But what setsthese fans apart, is that they can’t comeby foot or by car which is truetestimony to the talent of the Port O’Johns who they come to hear.

John Sturm, who plays themandolin and blues harmonica in theband, describes them as definitely a“bar and party band”. Don’t expecttouristy music. They play artists such asZack Brown, The Allman Brothers,Muddy Waters, Junior Wells, Eddie

Money, and The Rolling Stones. Alongwith Sturm, band members includelead guitarist and singer JohnO’Gorman of Deas Guys and soloperforming fame and co-owner ofOkatie Ale house and Okatie Liquor,drummer Dave McKinley, and bassartist Mark Weikinger, aka Krash. Whenasked about the band’s name, JohnSturm said that it started as a joke andjust kind of stuck as the band consists of 2 and sometimes 3 Johns.

Playing on an Island onlyreachable by boat has its plusses and,well, let’s call them difficulties. “It’s anescape over there,” described Sturm.“It’s the closest you can come to a puregetaway like a Key West but it’s morethan that. It’s a little bit of extra all theway around: extra unique and extrawork to get there and play.” Sturmplayed every Friday and Saturday at

Marshside Mama’s for 3 years, and isstill making the trek regularly so heobviously must see the plusses asoutweighing the difficulties like gettingover there and transporting all of theirequipment to and fro.

The Port O’ Johns started playingtogether 4 years ago doing open micperformances at a bar in Bluffton. Theycontinue to perform their open mic acts at Cork’s in Bluffton every tuesdayfrom 8 - 11 p.m., and they play atweddings, parties, and festivals. Beer, brewski, liquid courage -whatever you may call it, beer is themost popular alcoholic beverage in theUS today, according to the BrewersAssociation’s statistics. A light Americanlager no longer satisfies every taste.And while the big players have seenconsistent declines in their billion-dollarsales, regional craft breweries continue

to attract a growing fan base of quality,small-batch brews. As defined by the BrewersAssociation, an organization of morethan 1700 US brewery members, craftbeer is beer not brewed by one of thebig, "mega-brewery" corporations. Abrewer of craft beer produces 6 millionor fewer barrels of beer annually. Craft

brewers often use traditional methodsto create malts and incorporate uniqueadditions to enhance flavors. There isno longer a lack of diversity in the typesof beer sold in our stores andrestaurants. John Boyce, owner of the MellowMushroom restaurants on Hilton Headand in Bluffton said, “We are proud to

It gave us thereputation as the homefor craft beer on HiltonHead and in Bluffton.” Although for somebeer lovers, there willalways be a certaincomfortable familiaritywith macrobrews - like aBig Mac, you know whatyou’ll get – with craftbeer, you get to tastesomething new andexciting. Craft beer isnot for everyone, andyou must be willing totaste a beer that mightbe your new favorite, orone you won’t try again.And just because beer isor isn't craft beerdoesn't mean that the beer is good or not. Remember back in the nineties when beer brewed bysmall, independent brewers was called microbrew? It was aword that perfectly described the new kind of breweries thatwere gaining popularity then. Everyone knew that they couldexpect innovative and exciting beer if it had the microbrewname attached to it. The word “microbrew” is actually a legalterm that describes the limited number of barrels of beer thatcan be brewed annually. Former microbreweries like the BostonBeer Company (Sam Adams) and Sierra Nevada with nationaldistribution and plenty of brand recognition simply outgrewthis description and stopped being “micro.” Then another termarose to replace microbrew – craft beer. Besides the flavor, another reason for the recent popularityof craft beer is the higher alcohol content. Until April 2007,South Carolina capped the alcohol content in beer at 5percent, so beer sold or served was not nearly as strong astoday’s craft beer. With the lifting of that restriction, the craftbeer business has boomed. According to the Brewers Association, there are currentlyclose to 2,000 craft breweries in operation across the nation,with an additional 900 in the planning stages, making greatbeer a more accessible treat for the 95 million beer lovers inthe US. Americans have developed a discriminating palate, so ifit's not world class quality, it won't survive. Josh Luman, owner of River Dog Brewing Company inRidgeland said, “One taste of River Dog beers will make you a

loyal follower for life.” Athis brewery, theirconcentration is ondistribution; however, theyhave recently opened atasting room wherecustomers can sample andpurchase beer to takehome. They brew threecore beers that are alwaysavailable: American PaleAle, India Pale Ale, andCoastal Wit. In additionthey offer a seasonal beerevery quarter. For summer,their seasonal beer isEnglish Dry Cider, whichLuman said is “crisp andrefreshing, like thechampagne of beer.”

Mellow Mushroomoffers approximately 100kinds of craft beer at theirrestaurants – some draftand some bottled. OwnerJohn Boyce confirmed

that craft beer represents about 65 percent of all beer sales in his MellowMushroom restaurants. Seasonal Beers are some of thegems of the craft brewing world. Whilesome are brewed annually, others areproduced as one-time releases. Thesebeers are often unique and showcase abrewer’s creativity and passion. Theyutilize ingredients and highlight flavors,such as pumpkin and chili beers. Somepumpkin flavor is present in mostpumpkin ales, but most of the flavorcomes from pumpkin pie spices addedlate in the boil. Pumpkin beer is popularin the fall season. In the winter months,one popular seasonal beer is chili beer,which is made by adding peppers to themash or fermenter. In the spring and summer months,seasonal beers are typically fruit beers,which can vary widely depending on thewhim of the brewer. Raspberries,cherries, apricots and blueberries arethe most commonly-used fruits addedto beer, and many variations are

possible. Honey beers have honeyadded, which creates a dry, crisp beerwith honey aromas – a favorite amongpeople who live in the south, andespecially in the warmer months. Barrel-aged beers are typicallybarley wines or strong stouts aged for afew months or longer in oak barrels orused bourbon barrels. While aging, thebeers pick up delicious vanilla andtoasted coconut aromas, which arepopular in tropical islands any time ofthe year. The number of craft brewers hasgone from 8 in 1980, to 537 in 1994, to1600 in 2010, to 2,000 today, accordingto the Brewers Association. The majorityof Americans live within 10 miles of abrewery. Truly craft brewers and craftbeer drinkers are participants in arevolution. There has never been abetter time or place to drink beer thanin the US right now. Craft Beer offers a new experiencefor the person who looks for it. A toastto bold craft beers!
