2. In absence of designated Auctioneer on premises, the Auction Coordinator assigned by the Organization (Eva’s Initiatives) assumes the role of Auctioneer or may designate a Director of the Organization to assume the role.

3. Settlement in full shall be made to the cashier by the Purchaser by cash, personal cheque with proper identification (payable to Eva’s Initiatives), Visa, or MasterCard within 30 minutes of the conclusion of the sale. If settlement in full does not occur within 30 minutes of the conclusion of the sale, the lot or lots may, at the Auctioneer’s absolute discretion, be put up again and resold. In the eventuality of default where the lot or lots are not resold, the Purchaser shall be liable to the consignor for the loss occasioned by such default.

4. Successful Purchasers may take their item upon proof of purchase. For larger items that cannot be carried, a delivery date must be arranged the evening of the auction.

10. No lot may be removed without written order of the Auctioneer, which order may be withheld from the Purchaser in respect of lots not fully paid for.

Under blind conditions, the Yquem 2007 shines like a diamond. Nevertheless, it is initially rather taciturn on the nose, eventually opening up beautifully with touches of lemon curd, Mirabelle, and clear honey. The palate is medium-bodied with very fine definition and there seems to be a great deal of energy and vigor dispensed for your pleasure. There is such race and nervosity, and then that finish just purrs with harmony and focus. This Yquem feels just so alive and vivacious, yet there is an effortless quality here that is unmatched by its peers. Tasted January 2011.S44 • 2003 Joseph Phelps Cabernet Sauvignon Backus Vineyard (USA, California, Napa Valley, Oakville) - 6 bottlesRating: 92Medium ruby-red. Cassis, bitter chocolate and a hint of eucalyptus on the nose. Juicy, intensely flavored and focused, with a lovely spine of acidity giving definition to the purple fruit flavors. Showing more cut than fat today, but this wine is hiding its underlying density of material and opulence. Source: International Wine Cellar

S45 • 2004 Joseph Phelps Cabernet Sauvignon Backus Vineyard (USA, California, Napa Valley, Oakville) - 6 bottlesSubtle and precise on the nose with very pure creme de cassis, hot iron and rocks and a touch of toast. In the mouth this is rich and chewy but so well balanced with wonderfully fresh, ripe fruit and a long, spicy, mineral rich finish. Really a baby but with grand potential and it really delivers alot already. Another Fine Backus, one of California’s Grand Cru vineyards. 94pts.S46 • 2005 Joseph Phelps Cabernet Sauvignon Backus Vineyard (USA, California, Napa Valley, Oakville) - 6 bottlesThis is an authentically gorgeous, important Cabernet Sauvignon. It calls to mind the amazing 2001, with its huge, perfect tannins and acids and artistic appliqué of new oak. But the star of the show surely is the fruit. Mounds of ripe blackberries and cherries pile up, veering into currants and cassis and something wild and decadently animal... — S.H. (5/1/2009) — 97 Wine EnthusiastS47 • 2004 Joseph Phelps Insignia (USA, California, Napa Valley) - 6 bottlesWine Advocate Author: Robert Parker Issue: 174 The 2004 Insignia (the first to be 100% from the estate vineyards) is a blend of 72% Cabernet Sauvignon, 14% Merlot, 12% Petit Verdot, and the rest Malbec. I had this wine several times in Napa, and it is a beauty. A flashy, exuberant style for Phelps, with dense ruby/purple color, a gorgeous nose of creme de cassis, incense, licorice, smoke, and spice, the wine has supple tannins, a flamboyant, full-bodied mouthfeel, and tremendous length. Despite its precociousness and up-front style, this wine should evolve easily for 20 or more years.S48 • Custom Canoe PaddleMuskoka Paddlecraft makes custom wooden paddles of various styles, woods, finishes and purposes. Brought to you by youth in the Life Skills Program at Eva’s Satellite

Eva’s Satellite residents met twice a week for five weeks to test recipes for TASTE MATTERS. Their choices this year are Red-Velvet Cake Balls & Mini Cupcakes decorated in fun, colourful ways.

New additions to Eva’s Satellite’s life skills programming in 2012 include weekly cooking groups, monthly baking groups and a roof-top garden pilot project in partnerships with Evergreen. It includes vegetables and herbs cared for using pesticide-free, environmentally-friendly approaches (rain water barrel, recycled herb pouches, homemade fungicide spray).

Brought to you by youth in the Mentorship Program at Eva’s Phoenix

Over a four-week period, Eva’s Phoenix residents learned how to develop and enhance their Leadership skills – self-control, open communication, teamwork, accountability and time management. They were also provided with the opportunity to highlight these talents and abilities at TASTE MATTERS.

Youth were introduced to the canning process by James Partanen, Community Cannery Coordinator, The West End Food Co-op and Mentorship Coordinator Lisa Carrington and Program Assistant Nadia Bell from Phoenix. Youth experimented with a number of blending flavours and came up with a chunky salsa, a mango chutney and a fig chutney.

“The City Within” is a youth-led initiative that revolves around the space in our city of Toronto. Current and past residents of Eva’s Place and Eva’s Satellite were asked to give ideas around what they would like to shoot and why. The response engaged different emotions around home, comfort and disassociation.

In September, participants created a list of places where they could find visual elements capturing emotions and ideas. Topics explored ranged from ‘Lost in Place’ to ‘Culture’ to ‘Silence’.

Shooting days involved participants working individually as part of a larger group. Youth actively encouraged and supported the work of their peers, with more experienced photographers acting as peer mentors and supporting newcomers. Youth shared cameras and demonstrated patience allowing their partner time to capture images. The process became a safe space for youth to share ideas and ask for help.

When shooting wrapped, youth were challenged to select their best work to use for the exhibit (with myself and our volunteer, Toronto based photographer, Cree Barrocks, acting as support.) The work was then edited and prepared for print.

This exhibit was designed as a youth-led project to engage youth interested in photography, encouraging the confidence required to enter the photography/art industry or to apply for education in this field. The project involved building skills behind a camera and defining how participants present themselves artistically to an audience. Several youth have an interest in pursuing photography as a profession. Their work in this project exemplifies what youth can accomplish when given the opportunity and freedom to think and create.

1. Combine coconut sugar with 2 ½ cups water in a medium pan. Bring to a boil over medium heat, stirring to dissolve the sugar.

2. Add the lavender blooms to the sugar water, cover, and remove from heat. Let stand at least 20 minutes (and up to several hours).

3. Strain mixture and discard lavender. Pour infusion into a glass pitcher. Add lemon juice and 2 ½ cups water. Stir well and watch lemonade change colour.

4. Pour into glasses half-filled with ice or refrigerate until ready to use.

Health benefits: The polyphenols (a type of antioxidant) in lavender can help reduce the piled bacteria in your stomach. Lavender holds phytonutrients (which are nutrients derived from plants). Lavender leaf oils are great for mild illnesses like cold, cough, flu, throat infection, tonsillitis, etc.

Habitat: Two types grown in Ontario include English lavenders (Lavender angustifolia) and lavandins within sandy loam soil in the Simcoe region.
