A GourmetDestination To Tantalize

Two talented and celebrated chefshave joined forces to expand the culinarylandscape in the Bay area. James BeardAward-winning Chef Michael Mina andChef and Author, Don Pintabona, who haslocal ties to the area, will open a gourmetstyle market and a restaurant at Sundialplaza later this year. It’s a place wherefoodies will find high quality, locallysourced produce, meat and seafood. TheLOCALE Market will offer ingredients sothat home chefs can prepare their ownmeal, or choose from a haven of preparedand artisan products.

“Being back in the Tampa Bay areahas been very sweet,” Chef Pintabonasaid. “I was a student at USF in Tampafrom 1977 to 1980, so this is somethingI’ve thought about doing for a long time.I’ve always had a great love of the TampaBay area, with relationships with friendshere that extend back 30-plus years. I’vebeen welcomed back like I’ve never left. Ithas been awesome.”

Pintabona left Tampa after graduationfrom USF and headed to New York to

attend The Culinary Institute of America.He has an extensive culinary backgroundand teamed with actor Robert De Niro tobe the Executive Chef of the acclaimedTribeca Grill in the 90s. Upon his recentreturn to the Bay area, Pintabona and histeam have been visiting local farms,including Faithful Farms and GambleCreek Farm, to source the market.

“When we decided to call it LocaleMarket, Michael Mina and I hoped thatthere would be enough local product tosupport the name,” Chef Pintabona said.“I’ve been more than pleasantly surprisedat not only how much there is, but also bythe quality. I’ve been making weekly visitswith Locale team members to local farmsto establish relationships with growers andfishermen. It has been impressive howdriven and passionate the farmers are. Itis mind-blowing how much passion theyhave for what they’re doing.”

Pavilion XXIX IlluminatesTampa Museum of Art

Opulence returns to the Tampa Museum of Art onNovember 1 as the Museum unveils its signature fallfundraiser, Pavilion.

Regarded as a hallmark in Tampa’s cultural and philanthropiccalendar, Pavilion celebrates the 29 year old tradition that itsfounders envisioned: a spectacular night of fashion, food andentertainment amidst the beauties of the Museum, all benefitingthe Museum’s education and exhibition programs.

Cru has always been known for the best glass list in town,and now, with a new kitchen in back, Chef Brad Sobo (formerlyof Sidebern’s for over six years), is carefully crafting delicioussmall plates and entrees to pair with Wine Director WilliamLucius’ stunning wine list.

“Much of the inspiration from the menu came from dishesthat I’ve always loved to eat when I go out, but can rarely find,”says Chef Sobo. A native of St. Louis, Chef Sobo plays on thetraditional Toasted Ravioli his town is known for, by filling thehouse-made pastas with Meruez sausage. Another menuhighlight is the Duck Confit, which is a two day process tomake, and Sobo says, “When I walk in the building afterletting it cook overnight, the smell is fantastic!”

Wine Director William Lucius tastes more than 50 wines aweek, and constantly tweaks the list in order to introduce themost delicious and compelling wines to guests. About ChefSobo, Lucius notes “His talents and understanding of the delicateinterplay of food and wine helps create a great synergy.”

more than $1.8 million for the fight against Friedreich’s Ataxia to benefit the Friedreich’s Ataxia

Research Alliance and USF Health Ataxia Research Center. Chairing the event for the fourth

year, the Leiweke’s agreed to chair in 2015 too. The live auction included two chocolate

Labrador puppies that went for $30,000 and $35,000 each. WFTS-Ch. 28 anchor, Wendy Ryan

was the evening’s emcee. Suzanne and Paul Avery spoke of their commitment to the cause

and cure and expressed gratitude to the more than 800 guests in attendance. The Spazmatics

Celebrity Dinner: Guests at the DeBartolo Family Foundation’s inaugural “White Hot Summer

Night” Celebrity Dinner were coolly dressed in all white attire hosted at Eddie V’s Prime Seafood

2014 Tuxes & Tails: The 12th Annual Tuxes & Tails Masquerade was a great success with 19 adopt-

able dogs and cats finding forever homes. Among those strutting the runway with an adoptable

dog were Tampa Police Chief Jane Castor, County Commissioner Sandy Murman and Attorney

General Pam Bondi. More than $143,000 was raised to benefit the Humane Society of Tampa Bay.

Making Better Coffeethe Buddy Brew Way

Traveling to out-of-the-way cafésto experimenting with out-of-the-ordinary brewing techniques andequipment, were just a few of theways Dave and Susan Ward pursuedtheir mutual passion for finding perfectcoffee. Selecting the idealbeans, perfecting theroasting and prepara-tion process, providingstellar customer serviceand presenting it all ina warm, invitingenvironment. That’sbecome the BuddyBrew trademark thatdrove demand for theoriginal location toexpand, led to a secondlocation at OxfordExchange and will carryover as the couple con-siders where, and when,to go and grow.

and Coffee Drinkers

This historic building faced certaindestruction before local investorspurchased and transformed it into apopular coffee shop, café and cross-roads for community activists to artists.

In 2004, Tampa attorney Dale Swopeand Joseph Kokolakis, a localcontractor, salvaged the crumbling1,400-square-foot building that datesback to 1926.

What originally opened as a cafecatering to Ybor City’s Cuban cigarrollers, has come full circle, after brieflyserving as a refuge for local veteransbefore falling into disrepair.

Relocated to a prime spotoverlooking Centennial Park, the brickbuilding underwent significantrenovation to restore it and enhance itsluster with a sleek interior design. Thepopular gathering spot known as TheBunker specializes in “meaningfulconversations and great coffee.”Beer and wine are also available as wellas a selection of made-on-the-premises

Take a spirited journey back in time at Tampa’s Repeal

Day Gala, that may be the closest you’ll ever get to time

travel. The Gala celebrates December 5, 1933, the day

that prohibition was repealed, after 13 long years. Then,

as now, we’re ready to cheer and raise a glass.

The Gala is part historic recreation, part modern cele-

bration of the Cocktail Culture. The setting in Historic Ybor

City at the Cuban Club, the attire period hipsters, the

entertainment spirited, the drinks handcrafted by the

areas very best bartenders, will be a party not to miss.

Now in its fifth year, the local chapter of the United

States Bartenders’ Guild Tampa Bay Chapter (USBGTB),

has expanded what was once a one day celebration of

the repeal of prohibition on December 5, 1933. “What

started as a small party in 2010, has expanded to include

four days of dinners, celebrations and educational semi-

nars,” said Justin Gray, chairman of the Repeal Day

Conference and Gala and vice president of the United

States Bartenders’ Guild Tampa Bay Chapter. “Everyone

in the city is invited to attend. We will have attendees from

43 chapters of Bartender Guilds across the states, brand

ambassadors and even international guests.”

Longtime residents of the Boston area and life-longNew Englanders, the Krugers loved the lifestyle and livingspace that marked their more than 18 years in Duxbury,MA. When a chance to advance Steve’s career requiredrelocation, family members faced uprooting their lives forthe first time.

New job responsibilities re-assigned his regionalterritory from the Northeast to the South, and a longdistance commute was not an option for the close-knitfamily. The two oldest children, daughters Geralyn andMeredith, were away attending college but their sons,Nick and Zack, were about to start high school.

Decisions were made, the house was listed, belongingspacked and the search for a permanent home in Tampawas under way. Determined to live in the Plant HighSchool district, the family had to act quickly to be ready forthe first day of the new school year.

“We put our house on the market and it sold at thefirst showing,” said Patti. With the school enrollmentdeadline looming, there was no time to cull through thecontents filling 11 rooms of their former home so everythingwas packed, moved and stored while the family rented afurnished home on Harbour Island for three months.

during the January breakfast meeting of the Moffitt Merit

Society, but the gathering took a more serious turn when

Dr. Dana Rollison spoke about her plans to study possible

links between viral infections and skin cancer.

Rollison’s message so resonated with the appreciative

audience, that months later the philanthropic group

made her research the beneficiary of a $25,000 grant.

The associate professor for Moffitt Cancer Center’s,

Cancer Epidemiology Program, was one of three local

female medical professionals to receive funds awarded

during Merit’s annual fall luncheon this year.

Formed in 2009, the Merit Society supports female

scientists and physicians affiliated with Moffitt, one of the

leading cancer care centers in the U.S. The group

invites members of the Tampa hospital’s medical staff,

specifically those who are investigating life-saving

treatments and innovative medical procedures

used to treat cancer patients, to informally present at

“Coffee Talk” events.

Named for Merit Ptah, the first known woman in medicine

whose legacy dates back nearly 5,000 years ago, the

Merit Society brings valuable work being done by women

to the forefront, while providing vital financial support for

their research. A brief look at this year’s recipients, and

their respective studies, highlights some of the ground-

breaking research currently being conducted at Moffitt

Cancer Center.

Dana Rollison, PhDA Potential Role for Viral Infections in the Development of Skin Cancer

Dana Rollison, PhD, plans to monitor 1,500 skincancer screening patients over a five-year period tostudy risk factors for non-melanoma skins cancers(NMSC). Evidence suggests that certain viral infections,specifically cutaneous human papillomaviruses (HPV)and polyomaviruses (PyV), may play a role in thedevelopment of squamous cell or basal cell carcinomas.In theory, providing patients with yet-to-be-developed

vaccines guarding against cutaneous HPV and PyV,

could also create a way to protect those diagnosedfrom developing certain types of skin cancer. “I am looking at how sun exposure interacts with

viral infections to possibly lead to skin cancer. The goalis to find new risk factors for cancer that can lead tonew ways to prevent cancers,” she said. “I don’t knowif viruses cause skin cancer, but if enough evidence isgenerated to support that, then in theory, we coulddevelop vaccines to potentially prevent skin cancer.”

breasts removed due to the disease, may considercosmetic reconstruction to replicate the breastmound and nipple-areola complex (NAC). Anotheroption may be even more appealing.With advancements in early detection of breast

cancer, patients may be able to retain their nipples.Advancements in surgical procedures (removing andrebuilding the breast), make it possible to displaceless skin and leave nipples intact in select women.Confirming that a nipple sparing mastectomy

can be done safely without leaving the patient at

risk from any lingering cancer cells, could radicallychange the way women look – and feel – post-surgery.Preserving the nipple may help women’s bodyimage as well as their quality of life.Sensitivity of the nipple is also being addressed.

If the nipple and surrounding area are spared, issensitivity permanently damaged or will it eventuallyreturn?“It is important to have nipples and sensation.

Recreating nipples is never as good as your naturalnipple, due to lumpy bumpies and color variation.Hearing that from women led to this current researchproject,” Laronga said. “With this additional moneywe can accrue more women to the study. We wantto follow these women to see if sensation comesback and how long it takes to rekindle.”

As cancer patients benefit from medicaladvancements enabling them to live longer, theneed to reduce side effects from those treatmentsbecomes increasingly important to their physical andemotional well-being.Cognitive impairment, commonly referred to as

“chemobrain,” can disrupt a patient’s ability to con-centrate, affect their memory and inhibit their abilityto plan, multi-task or even recall words easily.Dr. Heather Jim, PhD, is researching ways to pre-

dict which patients may be most susceptible to“chemobrain” in hopes of finding a treatment thatcan be easily administered, as well as, immediatelyimprove mental clarity. An associate member with

the Health Outcomes and Behavior Department atMoffitt, she specializes in psychosocial and behav-ioral aspects of cancer control.Because this side effect is common among

breast cancer patients, Jim is using an online cogni-tive training program called Lumosity, to determine ifit is a viable treatment for women to use to re-traintheir brains."Chemobrain can be very distressing for some

patients and can significantly interfere with their qualityof life,” Jim said. “Cognitive training has been shownto improve cognitive functioning in patients with strokeand traumatic brain injury, so we are hopeful that itwill help patients with chemobrain as well.”

Of course it depends uponwhat you serve, but most traditionalmeals are comprised of a turkey, eitherroasted, grilled or the increasingly populardeep fried, along with all the fixings.The drippings are collected and trans-formed into rich gravy. Often mashedpotatoes are served accompanied by but-ter, gravy and a variety of side dishesincluding stuffing and casseroles. All thistranslates into a pretty hefty amount offat and richness. The average Americanwill consume more than 4,500 calories

and 229 grams of fat on ThanksgivingDay, according to the Calorie ControlCouncil. All this richness and unctuous-ness calls for wines high in acidity, lowin tannins and that are made with a mod-erate amount of oak influence.A wine’s acidity cuts through the fat

and helps balance the meal. Wines thatare high in acid are ‘food wines’ or winesthat are meant to be served with a meal,rather than easy-drinking ‘cocktail’ stylewines, that are low in acid and easy todrink on their own. High acid wines usu-ally come from cool growing regions, orare made from grapes that are naturallyhigh in acid. These high acid wines alsopair well with sweet dishes and arepalate-cleansing and refreshing.

Examples of high acid wines includeChampagne or sparkling wines, lightlyoaked Chardonnay and Riesling.Another important characteristic of

ideal Thanksgiving wines are those withlow tannins. Tannins are the bitter,astringent compounds found in food andwine that dry out your palate, specificallyon the middle of your tongue. Tannins inwine come mostly from the grape seeds,grape skins and oak barrels, and thoughhigh tannin wines are great for a steakdinner, they are not such great choicesfor your Thanksgiving table. So tannicgrape varieties like Cabernet Sauvignon,Petite Sirah and Nebbiolo are not recom-mended, instead look for wines with

moderate to low tannins like Gamay(Beaujolais), Pinot Noir and Barbera.Turkey is unique in that it contains

The nose isfruity and juicy smelling,but the palate is bone drywith tart cranberry fruitflavors, aromas of bread

Elegant andrestrained at 13 per-cent alcohol, yet it hasripe fruit flavors ofblack cherry, pome-granate and cranberry

with earthy notes of forest floor, and atouch of mint lingering on the finish.Delicious.

2012 Mouton Noir ‘Oregogne’Chardonnay $44.95 | André HuestonMack is the brainchild behind his
