Ingredients • 3 pounds unpeeled, cooked large shrimp

• 1 large red onion, sliced

• 1 red bell pepper, sliced

• 1 yellow bell pepper, sliced >>Lemon-Basil Marinade

• 1/2 cup chopped fresh basil

• 16 cups salad greens

• 8 Parmesan Baskets (optional)

>>Fresh Lemon Vinaigrette

Preparation 1. Peel shrimp, and devein, if desired. Place shrimp and next 4 ingredients in a large zip-top plastic freezer bag. Seal and chill 8 hours or up to 24 hours, turning bag occasionally. Stir in basil 1 hour before serving. Drain and discard marinade just before serving. 2. Divide greens evenly between Parmesan Baskets or serving bowls; arrange drained shrimp mixture evenly over lettuce. Serve with Fresh Lemon Vinaigrette.

Makes about 23 cups Preparation time: 10 minutes

Ingredients • 1 tablespoon finely grated ginger

• 2 (750-milliliter) bottles sparkling wine, chilled

• 1 (89-oz.) container orange juice

• 1 (46-oz.) can pineapple juice, chilled

Preparation Place ginger in a piece of cheesecloth, and squeeze juice from ginger into a large pitcher; discard cheesecloth and solids. Stir sparkling wine, orange juice, and pineapple juice into ginger juice. Serve over ice. Note: We recommend Freixenet Spumante for sparkling wine.

Ingredients • 4 (6-ounce) skinless, boneless chicken breast halves

• 1/4 teaspoon salt

• 2 tablespoons extra-virgin olive oil

• 1 teaspoon grated lemon rind

• 2 tablespoons fresh lemon juice

• 1 garlic clove, minced

• 2 teaspoons minced fresh tarragon

• 1/8 teaspoon salt

Preparation 1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken evenly with 1/4 teaspoon salt. 2. Combine olive oil and remaining 5 ingredients in a small bowl, stirring well with a whisk. Heat a large nonstick skillet over medium-high heat. Add 2 teaspoons oil mixture to pan, spreading evenly over bottom of pan with a wide spatula. Add chicken; cook 2 minutes. Drizzle chicken with 2 teaspoons oil mixture. Turn chicken over; cook 2 minutes. Drizzle remaining oil mixture over chicken; reduce heat to low. Cover and cook 2 minutes or until done. Transfer chicken to a serving platter. Pour pan drippings over chicken; serve immediately.

The parish of Manchester is located in west-central Jamaica, in the county of Middlesex. Manchester was named in honour of the Duke of Manchester, the then Governor of Jamaica. He was governor for 19 years, setting the record as the longest serving Governor of the island. The capital town, Mandeville, established in 1816, was named after his eldest son, Lord Mandeville. Mandeville, is nestled in cool hills and was originally a major coffee-growing locale because of its almost temperate climate. Villages and charming old churches are common sights across the countryside. The town has become a preferred location for Jamaican retirees. Today Manchester is a major bauxite producer and grows much of Jamaica’s potatoes and other ground provisions, along with citrus and cattle. Trelawny was formed from the eastern part of St. James in 1770, after the wealthy planters of the area complained that Montego Bay, the capital, was too far away to conduct business. The parish was named in honour of Sir William Trelawny who was then Governor of Jamaica. The first capital of the parish was Martha Brae but its size and location raised doubts as to its suitability as a permanent parish capital. It was felt that since Trelawny had a sea-coast it needed a seaport for its chief town. Falmouth was consequently named the second capital. Falmouth was established in 1790, at a time when sugar was booming. When sugar declined so did Falmouth.

In its grand days, the town supported many businesses and maintained more than one weekly newspaper. Falmouth was once described as one of the busiest port on the north coast. It was the port from which sugar was shipped and where important goods needed by the estates in the interior were landed. The advent of steamships saw Falmouth’s former sea traffic being diverted to ports which could accommodate these larger ships. Consequently, by 1890 Falmouth was practically a ghost town.

Today the population of Falmouth is approximately 10,000 persons. In the government’s attempt to revive Falmouth, a new Pier was opened in March 2011 to facilitate cruise ships. The town is now embracing a new role as the place to invest. Tourism Minister Ed Bartlett postulated that Falmouth which has already received 30,000 visitors following the opening of the Pier, now qualifies as a tourism resort area. Falmouth is known for it’s reputation of being a safe haven with tranquil and peaceful environs. It often attracts
