The Basque Country spans the border between France and Spain in the western Pyrenees mountains, extending down to the coast of the Bay of Biscay. Though three regions lie in France and four in Spain, the Basques have remained relatively autonomous throughout history. Their traditions, language, and food culture date back thousands of years—transcending modern international borders.

The Agour Company, located next to Baigura Mountain, is in the heart of the Basque country. Historically, this artisan producer is committed to providing cheese of the highest quality, produced according to strict rules of tradition.

More recently, second generation cheese maker Peio Etxeleku is striking a balance between a strong respect for tradition and his own endless energy for innovation. Peio and his team produce world class AOC Ossau Iraty as well as a range of original cheeses. Agour’s new Irati Dairy is a great example of the combination of tradition and innovation that drive the folks at Agour. Perched on the edge of the Pyrenees overlooking the Ossau Valley, this small dairy combines ideas that are both old fashioned and cutting edge. The remote location was selected for its proximity to a group of 20 small farmers who live and work in the mountains, as their families have for generations. Using small vats and production techniques largely powered by human hands, the small team of Agour cheesemakers work with some of the best raw materials and innovative tools to produce unique and excellent Basque cheeses.

For only a few weeks in late Spring, fields of elderflower bloom throughout Northern Europe, and are especially prized in the French Alps. For hundreds of years, these delicate white flowers have been harvested by hand, quickly dried to preserve their flavor at its peak, and used to flavor traditional desserts and liqueurs. The flower’s swee t f r agrance o f honey and van i l l a has captivated the inhabitants of Alsace for generations.

Recently, this delicate flower has enjoyed global acclaim, finding its way into some of the world’s best kitchens as well as into craft cocktail bars utilizing St. Germain.
