Try some frozen grapes—stick them in the freezer in the

morning and they are ready by afternoon. Yum!

Make your own fruit juice popsicles and slushies. Yum yum!

Summer fruit ripple This creamy, light dessert looks great and tastes delicious! Although this recipe sug-gests fresh fruit, frozen fruit would be fine, but you must thaw it completely be-fore you begin. On a hot summer’s day, you can freeze the finished ripple for at least 4 hours, to make a super-cool treat.

Makes 4 servings

250g ripe strawberries

125g ripe raspberries

125g ripe blueberries

4 tbsp of fresh orange juice

275 ml natural yoghurt

275 ml double cream

2 tbsp of clear runny honey

2 tbsp of icing sugar (sieved)

1. Wash all the fruit and put a handful to one side. (they will be used to

decorate the finished dessert.) Hull the strawberries and cut them

into quarters.

2. Place the orange juice, icing sugar and half of the fruit into a proces-

sor. Put the lid on securely and blend to make a smooth puree.

3. Sieve the blended fruit into a mixing bowl to separate the seeds and

fruit pulp. Use a wooden spoon to press the liquid through.

4. Carefully stir the rest of the strawberries, blueberries and raspber-

ries into the fruit puree with a metal spoon (excluding the fruits set

aside in step 1.)

5. Lightly whip the cream in a large bowl. When it is ready, it will stand

up in soft peaks.

6. Fold the yoghurt, honey and half of the fruit mixture into the cream.

Layer the marbled cream mixture with the rest of the fruit mixture

in serving glasses.
