STABIGUM® Essedielle imports raw gum arabic directly from Sudan, carefully selecting the raw material with rigorous checks. The entire transformation takes place in the headquarters, combining modern methodologies that fully complies with the precious raw material, so that its composition and peculiarity do not become distorted and preserving all the characteristics and benefits that this 100% natural substance can make until the use in wine. General characteristics Stabigum® is a microfiltered and purified solution of gum arabic resulting from the specific processing of the acacia tree exudate (Destrogiro). Stabigum® is perfectly clear, straw-yellow in colour and it has a very low calcium content. Stabigum is "microfiltered" at 0.1 μm to ensure sterility but mainly because thanks to this narrow filtration the filterability index of wines is not significantly influenced, making it addable even before the last filtration. Stabigum® plays a role of protective colloid (arabinogalactan type II polysaccharide associated with a glycoprotein) since it is characterized by an exceptional anticoagulant protective power, in particular towards polyphenolic substances even at low molecular weight and towards protein substances of both white and red wines for ageing. Added to wines, Stabigum® avoids turbidity and deposits of colloidal type, making sure that wines preserve all their clarity, opposing to alterations due to the ferric and copper casse; Stabigum® also improves the softness and the velvety of both white and red wines. In synergy with the metatartaric acid, Stabigum® helps to prevent phenomena of tartaric instability. Instructions for use Stabigum® must be added to the wine before or after the last filtration or microfiltration that leads to bottling. Do not carry out clarification after the addition of Stabigum®. Composition Seyal Gum Arabic 20% ± 0,5%; Sulphur dioxide 0.3%. It does not contain GMOs.
