change is a program where parents donate gently
used school and gym uniforms, then others may
use the uniforms for their children. There is no
charge for the uniforms and you do not need to

Winter Clothing Drive We will be having our annual winter clothing collection on November 5th and 6th. As you sort through your family’s winter clothing, in prepara-tion for the cold months ahead, please save any coats, scarves, hats, gloves, boots, and socks that are still in good condition for this collection. Homework Policy for Vacations Saint Matthew School understands that sometimes taking
children out of school for a family vacation is unavoida-
ble. However, please be aware that teachers are not required
to give your child school work to take with them on a vaca-
tion. It is hard for teachers to plan ahead of time what exactly
will be taught. According to the handbook (page 6): “ Staff
members are not required to prepare assignments ahead of
time for a vacation. If a child is absent to vacation for 3 or
more days, the child will have 48 hours to complete all assign-
ments. Large assignments are still expected to be completed
on the date due.”

LASAGNA SOUP Everything you love about lasagna –
all in one bowl of soup! Loaded with
chicken sausage, lasagna noodles,
marinara and cheese. It’s easy, filling,
hearty and perfect for a cold winter night.
Yields: Servings: 6
Ingredients:
For the soup:
cooking spray
14 oz sweet Italian chicken sausage, casing removed
1/2 onion, chopped
2 tbsp minced garlic
4 tbsp chopped fresh parsley, divided
3 cups low-sodium, fat-free chicken broth
2 1/2 cups water
2 cups jarred low sugar marinara sauce
3 cups spinach leaves
2 bay leaves
fresh cracked black pepper
6 oz broken lasagna noodles, whole wheat or gluten free* For topping:
6 tbsp part skim shredded mozzarella cheese
1/2 cup part skim ricotta cheese
3 tbsp grated parmesan cheese
2 tbsp chopped fresh parsley
1/4 cup fresh basil, chopped

Stove Top Directions:
1. Heat a large soup pot or Dutch oven over
medium heat, spray with oil and add the sau-
sage; cook until browned, breaking it up as it
cooks with a wooden spoon about 4 to 5
minutes.
2. Add the chopped onion and crushed garlic
and cook 2 to 3 minutes. Add the parsley, broth,
water, marinara sauce, spinach, bay leaves and
fresh black pepper and bring to a boil; cover,
reduce heat and simmer about 30 minutes.
3. In a medium bowl combine the ricotta, par-
mesan, and 2 tbsp parsley and mix.
4. Add the broken pasta and cook uncovered
according to package directions.
Divide between 6 bowls and top each with 2
tbsp ricotta cheese mixture, mozzarella, fresh
cracked pepper and fresh basil on top.

Bishop Chatard Open House Tuesday, October 30, 2018 5:30 p.m. – 8 p.m.; tours end at 7:30 p.m. All students and their families who are interested in learning more about Bishop Chatard High School’s inno-vative and faith-based academic programs and extracurricular and athletic activities are invited to attend our annual Open House. Wednesday Walk-thrus November 14, December 5, January 23 and February 6 Parents of 7th and 8th grade students are invited to meet at 8 a.m. in Bishop Chatard’s St. Benedict Center and spend a morning getting to know Bishop Chatard High School. During the one-hour Wednesday Walk-thru, parents will hear a brief presentation from a school administrator, take a tour of the school while classes are in session, and have the opportunity to ask questions.
