WELCOME.
Welcome to William Thomson’s bottling factory at 21 Queensgate.
A formidable businessman, Mr. Thomson made a name for himself in
the late 1800s by providing a service to the wine and spirit mer-
chants in the local area. He would take their products and bottle
them on their behalf before they were sent to customers across the
globe.
Employing an array of people, the business grew and grew until the
Prohibition Act of 1920 meant that his services were no longer in
demand, and the factory shut with the loss of many jobs.
Not one to stay down for long, he closed down and boarded up the
factory but left a secret door at the back where customers could
enter. He turned the basement into an illicit still, and re-em-
ployed some of the workers that had lost their jobs as distillers
and bar tenders, providing a true community service during this
time.
As the popularity of illegal booze continued to grow, so did his
business, so much that when the Prohibition Act was finally
repealed in 1933 his public house, having been undiscovered for 13
years, continued to trade in the manner you see before you. The
original entrance was reinstated, and the first legal ‘Manhattan’
cocktail was served at a cost of 19p.

A beer with a shot to chase. A hugely popular drink style around the 1800’s so I am told. Es-pecially with the engineers who maintained the steam locomotives. Known as the “boilermakers”, a quick beer with a stiff chaser was considered the best respite at the end of a hot, dirty days labour.

StrongBUFFALO IN A CHINA SHOP 8.5Buckfast tonic wine, buffalo trace bourbon, Campari &
sweet vermouth, rapid aged over 6 weeks in an oak
barrel. Served Smoked.
NITRO MARTINI 8-Freshly pulled Italian espresso, combined with imported
vodka, coffee liqueur, and a hint of Premium French
absinthe verde.
THE USUAL 10-Jack daniels old No.7 stirred down with cola reduction,
amber vermouth and cherry almond balsamic, finished
with orange oil.
THE DEVIL IN ME 10-Martell VSOP Cognac’s plum notes are brought out by
Japanese plum wine and Maraschino. Spice is introduced
through Ancho reyes Chilli liqueur, and all brought
together with rare, rich chocolate bitter.
HEISENBERG MARGARITA 8-Rested tequila, meets a shocking blue orange curacao,
lime juice and sugar solution. Served smoked.
GRAVIATION 8- My twist on the French classic introduces flavours of
bergamot and earl grey into a classic mix of French,
floral violet flower liqueur, London dry gin, bitter
cherry liqueur & fresh citrus juices.
THE KINGS ELIXIR 8-London dry gin, Danish cherry liqueur, citrus and rich,
zesty ginger elixir together in perfect harmony.

PROHIBITION PUNCH 100-The most readily available ingredients, masked
with strong sweetners, and imported liqueurs,
this, is a true prohibition punch. Unrefined
rum, french premium triple sec, Danish cherry
liqueur, puree’d passionfruit, red fruits and
citrus combine to create a scalable drink for
crowds and gatherings.
