ROMA ASIAN LOLIGO

SQUID

This product is fully cleaned (no

deglazed weight, which means

the Domestic Calamari without

the higher cost. It is a great

alternative when the chef wants

LUIGI

The Luigi product is Todarodes squid, (also known as

Japanese Flying Squid.) The Luigi label is fully cleaned

with the fins removed. It is also packed to 100% net

deglazed weight, which means no water added to bring

product up to net weight. Todarodes squid is slightly wider

and thicker than loligo squid, which gives the operator

a wide ring for great plate coverage. It is a very tender

calamari that out-cuts most of the other Todarodes squid on

the market. It is a great value-priced item that can often save

the restaurant money without sacrificing quality.

Assoluti branded squid

is traditionally cleaned
