Central offers classic Sheep’s milk cheese from Sardinia. Our favorite is certainly Moliterno. The cheese is aged in straw baskets ("Incanestro" style), resulting in a lovely textured rind. During aging, the cheese is rubbed with olive oil, to ensure a moist and succulent paste. Full-flavored, rich and savory with a hint of sweetness, Moliterno is a royal addition to any cheese board.

Fiore di Sardegna has been a favorite of the local shepherds since the 18th century! Fiore di Sardegna is made from rich, whole sheep’s milk aged 4 months, creating a firm, dense texture. The flavor starts off buttery and nutty and finishes with a subtle sharpness. A wonderful alternative to Basque Ossau Irraty or Spanish Manchego.

Caciocavallo Ragusano is a raw, aged cow's milk cheese often called the “King of the Sicilian Cheese”. Produced exclusively in the Ragusano province of Italy, the cheese is made with milk from Modicana cows. Ragusano has a golden straw color and an herbaceous, piquant flavor. Try it as an ingredient in gutsy baked pasta dishes.

Incanestrato, or picurino sicilianu in Sicilian dialect, is a wonderfully sharp aged cheese. Aged between 9 and 12 months, its piquant paste is hidden beneath a beautiful basket-weave rind. Shave or grate on pasta or grilled vegetables for a true Sicilian experience.

Several years ago, a well-respected Sicilian cheese maker named Salvatore Passalaqua found an old recipe for a cheese that had not been made for over one hundred years. He set out to recreate this cheese using traditional methods and equipment. The resulting cheese was dubbed “Tuma Persa,” or “Lost Cheese”.

This rare, unique cheese is still made by only one cheese maker. It is extremely flavorful, but not salty. Since made from raw cow’s milk, it has an earthy taste with a sharp finish ! The rind is coated with crushed peppercorn, which further add to its complex flavor.
