Ingredients1 cup butter, softened1/2 cup confectioners’ sugar1/4 cup cornstarch1 1/2 cups all-purpose flour

Directions1. Preheat the oven to 375° F (190° C).

2. Whip butter with an electric mixer until fluffy. Stir in the confectioners’ sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.

3. Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don’t brown too much. Cool on wire racks.

Ingredients1 1/2 (8 ounce) packages cream cheese, softened1 (2.5 ounce) package thinly sliced smoked beef, chopped1 (2.25 ounce) can pimento-stuffed green olives, chopped1 small Vidalia or other sweet onion, minced2 dashes Worcestershire sauce, or to taste1 cup chopped walnuts

Directions1. Mix the cream cheese, beef, olives, onion, and Worcestershire

sauce together in a bowl until evenly blended. Keeping the mixture in the bowl, scrape it into a semi-ball shape. Cover, and refrigerate until firm, at least 2 hours.

2. Place a large sheet of waxed paper on a flat surface. Sprinkle with walnuts. Roll the cheese ball in the walnuts until completely covered. Transfer the cheese ball to a serving plate, or rewrap with waxed paper and refrigerate until needed.

DirectionsPlace blackberry puree and cranberry juice in a champagne flute. Add sparkling water to fill. Garnish with mint.

Ingredients2 large chicken breasts, cubed3/4 cup coconut milk3 long carrots1/2 onion, chopped2/3 cup pineapple, cubed 1 teaspoon ground coriander1/2 tablespoon fresh cilantro chopped

1 clove garlic1 teaspoon salt1/2 teaspoon dry basil leaves 1 tablespoon fresh squeezed lemon juice 2 teaspoons mild curry powder1 teaspoon chili hot sauce 2 stems green onions choppeddry parsley for garnish

Directions1. In a frying pan, put chicken breast and

coconut milk and stir until outside of chicken is hardened then cover for 10 minutes

2. Add onions, garlic, cilantro and stir in curry powder and sauté. 

3. Squeeze lemon juice, pineapple and add chili hot sauce. 

4. Put in all the rest of ingredients: basil leaves, salt, coriander powder, green onions. 

5. Stir until the pineapple is cooked. 

6. Garnish with parsley and serve it on a bed of brown rice.

Ingredients1 cup butter, softened1 cup packed light brown sugar1/2 cup white sugar2 eggs2 teaspoons vanilla extract

1 1/4 cups all-purpose flour1/2 teaspoon baking soda1 teaspoon salt3 cups quick-cooking oats1 cup chopped walnuts (optional)1 cup semi-sweet chocolate chips

DirectionsPreheat the oven to 325° F (165° C).

In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts (optional) and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.

Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Ingredients for sweet peanut sauce:

1 cup peanut butter1/2 cup sweetened condensed milk1/2 cup coconut milk2 tablespoons soy sauce2-3 teaspoons fresh lime juice2 large garlic cloves, minced1/4 cup fresh chopped cilantro1/4 teaspoon fresh ginger, mincedadd a teaspoon of brown sugar for added sweetnesshot sauce to taste

Ingredients for spring rolls:

Vietnamese Rice paperFresh cilantroFresh mint leavesFresh basilFresh lettuceFresh bean sproutsFresh carrotsFresh cucumberSauteed shrimp or beef strips

Directions1. Combine all ingredients for sweet peanut

sauce in a saucepan. Mix well and simmer, stirring occasionally over low heat until flavors are blended well. About 15 min.

2. Wash and prep vegetables. Sprigs of cilantro, mint and basil can be washed along with lettuce pieces and bean sprouts. Grate carrot and cucumber or slice very thinly.

3. Sauté meat of choice.

4. Have all ingredients ready on the table, family style, including a bowl of warm water to dip and soften the rice papers.

5. Dip and rotate the rice paper in the bowl of water or quickly immerse it in the bowl for about 2 seconds.

6. Fill the wrap and roll tightly but gently as it rips very easily at this point.

7. Use peanut sauce to dip or add to the wrap and enjoy!
