SERVES 2 SERVES 4 INGREDIENTS120g 240g dried pasta2 tsp 1 tbs olive oil 100g 200g mushrooms, sliced60g 120g shortcut bacon, fat trimmed, cut into thin strips
1 2 garlic cloves, crushed2 4 spring onions, thinly sliced1 3 eggs
1 tbs cup (60ml) light cooking cream 1 tbs cup (20g) shaved parmesan cheese1 tbs 2 tbs finely chopped fresh flat-leaf parsley
METHOD1. Cook pasta in a large saucepan of boiling salted water following packet
instructions, or until just tender. Drain well and return to pan.2. Meanwhile, heat oil in a large non-stick frying pan over high heat. Add
mushrooms and bacon and cook, stirring occasionally, for 5 minutes or untilgolden. Add garlic and spring onions and cook, stirring, for 2 minutes or until fragrant.
3. Whisk eggs, cream and parmesan in a small jug. Add egg mixture to hot pasta, along with mushroom mixture and parsley. Stir thoroughly for 1-2 minutes, ensuring egg does not scramble, until pasta is coated and a smooth sauce forms.Season with salt and freshly ground black pepper and serve immediately.
