SORTEX, CLEANING & GRADING OF AGRO COMMODITES:

Cleaning and sorting of agro commodities is in practice since ancient time. Initially, this

process was carrying out at household level is now scaled up to industrial level looking to

production and demand of all these commodities. It is necessary to clean, grade and sort

all raw cereals, pulses, legumes, oil seeds and whole spices before any type of

consumption or use in other products. Cereals, pulses, legumes, oilseeds and whole spices

are needed specific post-harvest operations, start right from farm after harvesting, and

divided into three stages: 1) Farm Level Operations; 2) Primary Processing and 3)

Secondary Processing.

The farm level operations include are: threshing, winnowing, drying

and storage. The primary processing of whole agro-commodities include: cleaning, grading,

sorting and packing; whereas, secondary processing includes value addition like grinding

(flour or powder making); blending, flaking, baking, roasting, puffing, etc. It is necessary

to use cleaned and sorted grains, pulses, legumes and whole spices for further value

addition.

1. WHEAT : (Tukdi, Lokwan, Mill Quality):

With a production reaching ten times in past five years, India is today the second largest wheat producer in the whole

world. Various studies and researches show that wheat and wheat flour play an increasingly important role in the

management of India's food economy.

Wheat production is about 70 million tonnes per year in India and counts for approximately 12 per cent of world

production. Being the second largest in population, it is also the second largest in wheat consumption after China, with

a huge and growing wheat demand.

Usually, the word "flour" used alone refers to wheat flour, which is one of the most important foods in European and

American culture. The corresponding Spanish word "harina" normally refers to Maize flour - wheat flour is "harina de

trigo".

Wheat flour is the main ingredient in most types of breads and pastries. Wheat is so widely used because of an

important property: when wheat flour is mixed with water, a complex protein called gluten develops. The gluten

development is what gives wheat dough an elastic structure that allows it to be worked in a variety of ways, and which

allows the retention of gas bubbles in an intact structure, resulting in a sponge-like texture to the final product. This is

highly desired for breads, cakes and other baked products.

An aromatic spice with a distinctive bitter flavor and strong warm aroma due to its

abundant oil content, cumin seeds are actually the small dried fruit of an annual plant in

the parsley family. Native to the Mediterranean, cumin is hotter to the taste, lighter in

color and larger than caraway, another spice it is sometimes confused with.

India is the main producer and consumer of cumin, producing 70% of the world

population and consuming about 90% of its own production (about 63% of the world

production).

Cumin seeds are an excellent source of iron and a very good source of manganese.

Cumin is a popular ingredient in Middle Eastern, Asian, Mediterranean and Mexican

cuisines, and is one of the main ingredients in curry powder.

Fennel: is highly aromatic and flavorful herb with culinary and medicinal uses. Fennel

seed look like cumin seeds, only greener, and have an aniseed flavor and a warm, sweet

aroma. They are oblong, elliptical, straight and slightly curved with prominent ridges.

The seeds emit a pleasant odor, are highly aromatic and have a pungent flavor.

Seeds of the fennel plant are widely used in many culinary traditions of the world. They

are used in spice mixes such as Chinese five spices and the Indian panch puran. Fennel is

also used as a flavoring in some nature toothpastes. In many parts of India and Pakistan,

coriander seeds can be eaten as a snack, while boiled seeds are consumed as a traditional
