MIXED GRAIN SALAD WITH LEMON AND HONEY DRESSING
INGREDIENTS
100 g pearl barley
100 g dried green lentils
1500 g water
2 tsp Vegetable stock paste (see Tip)
100 g quinoa
100 g pearl couscous
3 tbsp slivered almonds
1 tsp cumin seeds
1 lemon, zested (no white pith) and juiced
70 g olive oil
2 tsp honey
2–3 tsp Dijon mustard, to taste
salt, to taste
ground black pepper, to taste
80 g currants
¼ red cabbage, finely shredded
8–10 sprigs fresh coriander, leaves only, roughly chopped
8–10 sprigs fresh flat-leaf parsley, leaves only, roughly chopped
2 tbsp pickled capers, drained and rinsed (optional)

PREPARATION
1. Insert simmering basket into mixing bowl and weigh barley and lentils into it. Remove simmering basket with aid of spatula and rinse until water runs clear.
2. Place water and stock paste into mixing bowl. Insert simmering basket with grains and cook 25 min/100°C/speed 2.
3. Weigh quinoa and couscous into simmering basket with partially cooked grains, stir to combine and cook 10–15 min/100°C/speed 2 or until cooked to your liking.
4. Remove simmering basket with aid of spatula and transfer cooked grains onto a plate. Spread out over plate, then place into refrigerator to cool. Rinse and dry mixing bowl.
5. Place a small frying pan over medium heat and toast almonds and cumin seeds until golden brown (approx. 3–4 minutes). Set aside to cool.
6. Place lemon zest into mixing bowl and chop 5 sec/speed 9. Scrape down sides of mixing bowl with spatula.
7. Add oil, honey, mustard, lemon juice, salt and pepper and mix 1 min/speed 7. Transfer into a serving jug and set aside.
8. Transfer cooled grains into a large serving bowl. Place a bowl onto mixing bowl lid and weigh currants into it. Transfer into large serving bowl with cooled grains. Add cabbage, coriander, parsley and capers (optional) and reserved dressing, then toss to combine. Season to taste, then serve.

APRICOT CHICKEN RISOTTO
INGREDIENTS
3 sprigs fresh thyme, leaves only
3 sprigs fresh flat-leaf parsley, leaves only
2 garlic cloves
1 cm piece fresh ginger, peeled (optional)
100 g brown onion
40 g olive oil
100 g carrot, cut into pieces
120 g red capsicum, deseeded and cut into pieces
500 g boneless skinless chicken thighs, cut into cubes (3 cm)
400 g canned apricot nectar
300 g water
1½ tbsp Chicken stock paste (see Tip)
300 g arborio rice
80 g frozen green peas, to taste
1–2 pinches salt, to taste
1–2 pinches ground black pepper, to taste

PREPARATION
1. Place thyme, parsley, garlic, ginger (optional) and onion into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
2. Add oil and sauté 3 min/Varoma/speed 1.
3. Add carrot and capsicum and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
4. Insert butterfly whisk. Add chicken, apricot nectar, water, stock paste and rice and cook 17 min/100°C/ /speed 1. Remove butterfly whisk.
5. Add peas, salt and pepper, then cook 4 min/100°C/ /speed 1. Transfer into a thermal serving bowl (ThermoServer®) or other large bowl and cover to keep warm. Rest for approx. 5 minutes before serving.

CORNED BEEF WITH MUSTARD SAUCE
INGREDIENTS
oil, for greasing
1500 g water
4 whole cloves
50 g malt vinegar
900–1200 g corned beef silverside
400–500 g Kent pumpkin, peeled and cut into pieces (5–6 cm)
150 g frozen green peas
150 g frozen corn kernels
300–400 g sauerkraut, drained (see Tip)
Mustard sauce
30 g unsalted butter
30 g plain flour
300 g milk
½–1 tsp salt, to taste
1 tsp wholegrain mustard
1½ tsp mustard powder

PREPARATION
1. Brush Varoma dish with oil and set aside.
2. Place water, cloves and vinegar into mixing bowl. Place prepared Varoma dish into position and weigh beef into it, ensuring beef fits comfortably and lid closes securely. Secure Varoma lid and cook 60 min/Varoma/speed 2.
3. Set Varoma aside. Insert simmering basket into mixing bowl and weigh pumpkin into it. Place Varoma back into position. Weigh peas, corn and sauerkraut into Varoma dish around beef. Secure Varoma lid and cook 15 min/Varoma/speed 2.
4. Remove Varoma and check if vegetables and meat are cooked to your liking. If needed, secure Varoma lid and cook for a further 6–10 min/Varoma/speed 2. Transfer corned beef and vegetables into a thermal serving bowl (ThermoServer®) or other large bowl and cover to keep warm. Transfer 100 g of the cooking liquid into a jug and set aside. Discard remaining cooking liquid.
Mustard sauce5. Place all sauce ingredients, plus 100 g reserved cooking liquid, into
mixing bowl and cook 7–9 min/90°C/speed 3, to desired thickness. Serve beef and vegetables drizzled with mustard sauce.
