Principal

Catholic Character

Few people realise the enormous contribution the broader Catholic

Church makes to the economy of Australia and the social cohesion of our

big country. While sections of the church have deservedly been "put

through the ringer" in recent years, the facts about the true value of our Catholicism and

Catholic outreach is a heart-warming and inspiring story.

The following statistics have been compiled by Jesuit priest and learned academic Rev Dr

Richard Leonard SJ. I guess it's true that a team is only as good as its weakest link, but a

revitalised and sanguine Catholic Church is poised to bring the practical message of Christ's

love to all groups in the Australian community. Astute Governments in Australia are well

aware of the heavy lifting done by religious organisations and the need to work with them

for the betterment of the whole community. Persons employed in the spectrum of

endeavours undertaken by the Catholic Church can take some pride in being part of such an

august and purposeful institution.

The Good We Rarely Tell Anyone

Largest non-Government employer in Australia: at least

221,000 of which 165,750 are women (75%). Third largest

employer in Australia: Westfarmers, Woolworths, the

Catholic Church, Federal Public Service, BHP, Rio Tinto, NAB,

CBA, Westpac and ANZ.

758,000 school children are in the Catholic sector (-19,000

from 2018).

1,710 schools: 1,239 primary schools; 350 secondary schools;

95 primary/secondary schools combined, 17 special schools.

87,000 staff: 55,287 lay teachers and specialist staff, 70% of all teachers and 45% of all Principals are women;

26,348 general staff, 365 Religious.

There are at least 3,645 volunteer catechists in Australia

ACU is fastest growing, truly national university with 33,100 students producing the largest nursing and teaching

There are 1321 parishes, including 29 belonging to Eastern Catholic Churches, serving

5.26m Catholics of which 578,000 Catholics worship every Sunday (11 %), which means

we could fill the MCG almost six times every Sunday with Mass going. 92,334 were 13 to

18 year olds. In 1996 there were 764,310 Mass-goers; we are losing an average of

6,087per year.

3,100 priests in Australia; average age: 69.2.

Worldwide numbers are booming 1.2 billion.

Martyrs are still dying for the faith we hold and the justice we live.

Medical Advice

Whooping Cough Queensland Health has advised Rockhampton Catholic Education that whooping cough is currently prevalent in the wider

community.

Whooping cough is a contagious respiratory infection and can affect people of any age. In some individuals, the infection may

only cause a persistent cough, in others it may start like a cold with a runny nose, sneezing and tiredness and then progress to

the characteristic coughing bouts.

It is suggested that parents remind children of the following hygiene practices: stay home when you are sick wash your hands frequently with soap and water or hand sanitiser gel wash your hands before and after touching your eyes, nose and mouth when coughing or sneezing, cover your mouth and nose with disposable tissues which should be disposed of

immediately don't share items such as glasses or cups, lipstick, toys or anything which could be contaminated with respiratory

secretions maintain at least one metre distance from people who have flu-like symptoms such as coughing or sneezing.

Vaccination, exclusion and early diagnosis is important to limit the spread of whooping cough in our community. Anyone who

displays symptoms of whooping cough is encouraged to seek medical advice. For further information please contact

Assistant Principal Mission

Calming the Chatter Now that I have settled back into my work routine, I would like to acknowledge the great work of and sincerely thank Mrs Adrianne Mifsud who so competently stepped into the role of Assistant Principal Mission

while I was on Long Service Leave. During 2002, in my first year of university studies (yes I was a mature age student) I took part in my first practicum. I can still recall the Principal making a comment about holidays, stating “To ‘switch off’ you’ll need to get out of town.” It didn’t take long to understand how true this statement was, because throughout my years of teaching I have strived to be well planned, organised and fully prepared in case of any hurdles that may arise. However, this can also come at a cost; not being able to ‘switch off’ and overthinking things with frequent mind chatter. Prior to entering teaching, I ran my own beauty business for 11 years so extended holidays were not even thought of, let alone possible. If I didn’t work I didn’t earn an income, there was no such thing as Long Service Leave. Hence, in April as my leave drew near I was feeling a little nervous. Not for the reason you may be thinking as I knew the responsibilities of my role at the College were in capable hands, more so how would I spend some of my time? I was going from days crammed full of meetings, classes, supporting students and staff, planning masses, prayers and significant other events to deciding whether to go for a walk or a swim and deciding whether to prepare the garden for planting lettuce or tomatoes.

Along with getting some overdue jobs done around the house and spending precious time with my mother, I wanted to explore the central purpose for my Long Service Leave. It was for rest and renewal in addition to calming a chattering mind. During my leave I planned to walk (with my husband) the first and final stages of Camino de Santiago, totalling 280km (a 790km Ancient walk known as The Way of St James). As a pilgrim walking the path, it provided the perfect environment to pacify my thoughts, and take time to reflect on life and my spirituality. In the silence of nature during those days of walking, there were a number of external challenges which included but were not limited to, my hiking boots disappearing, walking 28km (with a 1.4km incline) in constant rain and getting lost on a number of occasions. However, while walking, I became aware and present to my surroundings; the rocks carefully placed one upon another like a waterfall, the marvellous wild cherry trees, the brilliant colours of greens and yellows and the magnificent red of the treetops. Just like the variety of fellow pilgrims I walked with, walked past or passed us, we all had a reason for leaving the busyness of

everyday life and walking this ancient path. I have learnt much during my time away from the College. Even though I went to the extent of an overseas pilgrimage we can all make the space, however limited for time we are. We can bring a sense of calm to our thinking and become present to ourselves, to others and to our surroundings which brings us closer to our God. Apostle Saint James, I am here, as thousands of pilgrims have been all through the centuries, offering Our Lord the tiredness caused by following the Way of Saint James. I have come here to learn how to walk through the way of Life, which is Christ. Help me, O Saint James, thou, who followed the Master to the point that thou gave your life for Him. Give me a big and generous heart, as thy heart, so I can also be an apostle of Christ. O Blessed Virgin Mary, Queen of the Apostles, let me feel thy heart’s love and affection. May thy smile and Maternal love help me to walk the way of life with the happiness of the sons of God. We make this prayer to thee O Lord, through your Apostle Saint James. Through our Lord Jesus Christ. Amen

Humanities Department

Welcome back to another exciting semester. Last semester, the Humanities Department was very busy with the

Humanities Tour, several excursions occurring in Geography, Civics and Citizenship and budding entrepreneurs

developing mini businesses in Business and Economics week in Term 2.

What is happening in the Department this semester?

History Year 7 – Introduction to History - Prehistory, Ancient Rome and Ancient China

Year 8 – Middles Ages - Medieval Europe

Year 9 – Revolutions - French, Russian, American and Chinese Revolutions

Year 10 - this is where the Year 10’s can choose to focus on either Ancient or Modern History

Ancient History – Significant ancient individuals and Ancient Egypt

Modern History – WW2 Pacific War focus and Freedom Rights

Geography Year 7 Term 3 - Water in the Word Term 4 – Place and Liveability

Year 8 Term 3 – Landforms and Landscapes Term 4 – Changing Nations

Year 9 Geographies of Interconnection – Focusing on trade, communication and tourism and the impacts on the

environment.

Year 10 Environmental Change and Management – Focusing on human induced changes on the environment with key

case studies (eg: Great Barrier Reef)

Civics students visit the Courthouse On the 24 April the Year 10 Civics and Citizenship class went to the Mackay Courthouse. We sat in on hearings presided

over by Magistrate Nolan, gaining knowledge about how the Magistrate Court works. Also later in the day, we

experienced a Supreme and District courtroom, learning more about the specific features and roles in the courtrooms.

Not only this, the highlight of the trip was when we were shown the holding cells where prisoners are held during

criminal trials. To finish the excursion, we were able to have a conversation with Magistrate Nolan, who shared his

experience in the Magistrate’s court and knowledge of how he works day to day. We were invited on another excursion

which helped deepen our knowledge and understanding of the court system. Overall, this was a very exciting excursion

for the Civics and Citizenship class, which helped us understand more about the justice system.

Three weeks later we again attended the courthouse to participate in a moot trial. Through this, we (as well as Mirani

High’s Legal Studies classes) gained a further understanding of the process of our justice system by going through Juror

selection. A number of us were selected to participate in the jury and thus decide the verdict of the moot trial. During

the trial we learnt a lot about the legal process and became familiar with the roles in the courtroom. We were shown

the jury deliberation room and fought off the temptation to eat the biscuits before deciding that the defendant was not

guilty due to insufficient evidence against him. We decided that Kodi was to be the jury speaker, however this was a

mistake because he blurted out the verdict way too early. In summary visiting the courthouse was an excellent

opportunity to learn more about the legal system and what is required to serve on a jury.

Human Powered Vehicle (HPV)

The Mercyless and MiniMercs Human Powered Vehicle teams raced in Emerald in the 16 hour

CQUniversity Central Highlands Endurance race. The teams of eight riders and two pit crew raced from

4:00pm until 8:00am making sure the vehicles raced continuously overnight.

MiniMercs came 1st in their category of Junior Mixed, while Mercyless came 4th in the very competitive Junior Boys

category. Mercyless were 3rd for most of the race, but slipped to 4th as the sun came up. While catching up the 3 laps

down in the last hour of the race, they broke the main drive chain - even with an hour of race time lost they still

maintained 4th spot in the largest of the categories.

The teams’ overall positions were 7th and 8th out of a field of 22 vehicles. This is their second race and an amazing

achievement for such young teams in their first year of racing. The best part of the Mercy teams was not the results, but

other schools commenting how they loved to watch our two teams. They were always supportive and up-beat during

driver changes and even when the chain broke they just got to work to fix it - with no complaints. They really displayed

excellent leadership and show cased the Values of our College.

Library Department

Whitsunday Voices The annual Whitsunday Voices Youth Literature Festival is one of

the highlights on the Mackay Festival of Arts calendar. In Week 1

of this term, Mr Crocker and teaching staff from the English

Department travelled to Whitsunday Anglican School with our

entire Year 8 cohort to be entertained and informed by renowned

authors such as Sophie Hardcastle (Author), Steven Herrick

(Author and Poet), Jeann Wong (Blogger and Reviewer) and

Astrid Scholte (Author).

Similarly, the following day saw 16 members of the Mercy Book Club

appreciate the likes of Li Cunxin (Author of “Mao’s Last Dancer), Steven

Herrick (Author and Poet), Michael Gerard Bauer (Author) and Jeann Wong

(Blogger and Reviewer).

Once again, it was an enjoyable day with marvellous weather and I trust the

students had a positive experience by engaging in an environment that

celebrated and promoted literacy and literature.

Birthing Kit Assembly Day Mackay Zonta is packing Birthing Kits again. This year it will be held at the Holy Spirit College Hall on Sunday 18 August

2019 from 10:00am. Did you know that 300,000 women die each year from pregnancy and childbirth related

complications, many from infections acquired during childbirth?

In 2019 Mackay Zonta would like to pack 2 600 Birthing Kits to provide a more hygienic birth for women in third world

communities. Each kit contains a pair of gloves, a plastic birthing sheet, a piece of soap, string to tie umbilical cords,

gauze and a scalpel blade.

Please come along and help pack these kits.

Cookies for Kindness

Justice@Mercy students delivered cookies for kindness in the afternoon of Wednesday

31July. We were able to deliver cookies to CASA Mackay Community Accommodation

and Support Agency, Mackay Women's Centre/Lowanna House & Samaritan House,

Lifeline/Uniting Care, Kalyan House, Ozcare Men's Shelter, Police Station, Department of

Child Safety and Headspace.

All of the agencies were very grateful to be recognised for the work they do. The

students learnt about what these agencies do to support our community. Thank you to

all the generous people who donated their time to make these cookies. Justice@Mercy

loved spreading these small acts for kindness for Catholic Education Week.

St Mary’s students joined Justice@Mercy students to deliver the cookies to the

Ambulance and Fire stations on Thursday. It was very exciting to watch the genuine joy

on the faces of both the recipients of the cookies for kindness and the students

delivering them.

Australian Air Force Visit On Wednesday 7 August, the Australian Air Force arrived at Mercy College

ready to provide some lucky students with an education in aviation. Forty

students were invited to participate in a range of flight simulations, virtual

reality experiences and airspace management challenges. This experience was led by an

amazing team of servicing service people and pilot training specialists. Through their

wealth of experience and simulation activities, students were able to get an insight into

the challenges and enjoyment of aviation.

The highlight of the experience was the F-18 Super Hornet simulator, where students were required to take off,

neutralise targets, complete aerobatics and then land their $90 million aircraft. Although many students left the

simulation defeated, some of our budding future pilots managed to bring the Hornet down with perfection.

This experience was outstanding for all students involved. They left the experience having learnt something new, while

some left with their eyes on the skies and a desire to spread some wings.

Mountain Bike Schools Championships 2019 Last weekend, 3 students from Mercy College took on the best in the Nation at the Schools MTBA National Championships. Tom Beswick, Tom Hall and Daniel Pearson braved the long trip to the Gold Coast ready to take on Australia’s finest. Both Tom Hall and Tom Beswick competed in the Year 9 Boys event with 58 competitors, while Daniel took on the Year 8 Boys division with 64 competitors.

On day 1, the boys took on the Cross Country Short Course, a technically difficult ride in a dense field of riders. The team performed outstandingly well, finishing in the top 20% of riders. Tom Hall came in 3rd place, Tom Beswick was 6th and Daniel finished 11th.

After a gruelling first day, the boys took on the downhill Enduro Race. This event requires competitors to complete 3 runs of the course at extreme speeds. As this event is both technically difficult and completed at high speeds, often this event is filled with crashes and demands competitors to be both skilful and brave. Again the boys served Mercy with pride. Tom Hall finished 12th, Tom Beswick placed 23rd and Daniel came in 17th place.

On the final day, the boys took on the most physically taxing event of the competition, the Olympic Cross Country event. The boys again showed their perseverance and physical stamina, with impressive results all around. Daniel finished in 10th place, Tom Hall impressed again in 5th place and Tom Beswick finished an impressive campaign with 11th place.

Languages Department

Meet Mercy’s Official Sister School!

On the Thursday 25 July, Mercy College signed an official Sister School Agreement with Seiko Junior High School in Japan. The Agreement was signed after an exchange of gifts. It states that both schools will strive to create a bond based on good will and generosity that allows students to gain a greater understanding of both Australian and Japanese cultures, contributing to world peace and prosperity.

About our sister school Seiko Junior High School is a private school located in the country town of Tokushima in Shikoku Japan. It is a unique school with approximately 100 students and offers 3 different pathways for students. These include a mainstream pathway, sporting excellence pathway (gymnastics and baseball) and an immersion English pathway where students are taught all subjects in both Japanese and English from 3 years old.

History of our relationship with Seiko Mercy students have been visiting Seiko since 2011. They spend 4 nights in a homestay arrangement with their students and families whilst attending school during the day. The 2 week trip to Japan is offered to our students every 2 years and the homestay and school visiting component to Seiko is always the highlight of the trip, with students creating life-long friendships. The staff and students at Seiko have been very welcoming and organise a variety of cultural activities for our students including cooking, sports, indigo dyeing, cultural and Japanese immersion activities.

Our relationship into the future… During the signing of our Agreement, exciting exchange opportunities were discussed including-

Seiko students visiting Mercy for a two-week period in June/July every year. We will be looking for host families from our school during these times.

Mercy students will continue to visit Seiko as part of our biennial Japan Study Tour and participate in homestay and school visits.

3 month reciprocal exchanges to Japan will be on offer from next year, with students attending school at Seiko with their host brother or sister flying back to Australia to spend 3 months here at Mercy.

This is very exciting for Mercy language students and we look forward to offering homestay and exchange opportunities to our students from next year.

Yamato:

The Drummers of Japan

On Thursday 1 August we had a group of Mercy students, from our

Percussion Ensembles and Year 9/10 Japanese class, attend Yamato:

The Drummers of Japan at the MECC. Thanks so much to Ms Kirsty

Mitchell, Mr Sam Bauer, Mr Tim McClelland, Mrs Tabby Sopa, Ms

Bernadette Marcel-Hubert and Ms Ai Wakasugi for accompanying

them to this valuable performance experience.

CQ Schools Jazz Festival

On Sunday 4 August the Mercy College Stage Band participated in their first CQUniversity Schools Jazz Festival at the

Central QLD Conservatorium of Music (CQCM) in Ooralea. The students experienced an hour long workshop with CQCM

lecturing staff before an adjudicated performance for Mr Ray Cassar. They then participated in a workshop with Ray

who helped them improve their style, musical understanding and performance skills. The day culminated in a public

performance where each school presented two pieces, with Ray Cassar performing alongside them. Special

congratulations to our soloists of the day – Jerome Rillera and Liam Gall. Overall the students had a fabulous day and

were awarded a Silver Award which is an awesome effort for a beginning ensemble!

Congratulations to their tutors Mr Sam Bauer and Mr Tim McClelland also!

ST PATRICK’S COLLEGE ENROLMENT PROCESS TIMELINE FOR ENROLMENT INTO

YEAR 11, 2020

Thurs 6 June Introduction to Senior Schooling will commence at 6:30pm in St Patrick’s

Hall. Canapés will be served from 6:00pm. All prospective Year 11

students, accompanied by at least one parent, are strongly advised to

attend. Enrolment forms and information will be distributed at this meeting.

Thurs 25 July Subject Selection Evening from 3:30pm – 6:30pm in St Patrick’s Hall.

Attend at a time to suit your family.

Wed 31 July Due date for Enrolment and Subject Selection forms to be returned to St

Patrick’s College.

Mon 5 August Notification of enrolment interview date posted in week beginning

5 August.

What’s Cooking in Class?

Impossible Quiche

3 slices bacon 1 small onion

1½ cups grated cheese 1/3 cup SR flour

4 eggs 190ml milk

Salt & pepper

o Preheat oven 200°C.

o Spray pie dish with cooking spray.

o Chop bacon and onion.

o Combine bacon, onion, cheese, flour, salt and pepper in a medium bowl then scatter over base of pie dish.

o Whisk eggs and milk together in a large jug and pour over bacon mixture.

o Cook for about 25 to 35mins or until puffed and golden

Double Chocolate Chip Cookies

1 ½ cup SR flour ½ cup cocoa

¾ cup chocolate chips ⅓ cup caster sugar

½ cup brown sugar 125g butter

1 egg 1 teaspoon vanilla

o Preheat oven to 180°C. Line 2 baking trays with baking paper.

o Sift SR flour and cocoa into a bowl. Stir in the brown sugar.

o Melt butter in a microwave safe jug for 20 seconds.

o Cream butter and sugar together until light and fluffy.

o Whisk egg and vanilla in a small jug then add to butter mixture. Stir in the

flour mixture.

o Mix until well combined then fold through chocolate chips.

o Roll a tablespoonful of mixture into balls and place onto baking tray.

o Leave space between cookies to allow for expansion.

o Flatten balls with a floured fork.

o Bake cookies in the oven for 15 mins. Allow to cool on tray before moving.

Apple Crumble

Filling Topping

4 medium cooking apples ½ cup plain flour

2 Tbsps sugar ½ cup coconut

1 Tbsp butter ½ cup oatmeal

¼ tsp cinnamon ¼ cup sugar

1 Tbsp water 1 tsp cinnamon optional

50g butter

FILLING

o Peel, core and slice apples.

o Place butter, apples, sugar, water and cinnamon in a saucepan over low heat and cook for 4-5minutes.

TOPPING

o Sift flour into a bowl and rub in the butter until mixture resembles breadcrumbs.

o Add sugar, coconut and oatmeal, and combine well or process all ingredients in a processor.

o Spoon apple mixture into a prepared baking dish then top with crumble topping.

o Bake for 10 minutes at 180°C until golden brown.

Chicken & Mushroom Pie

1 sheet short crust pastry 1 sheet puff pastry

2 tsp oil 1 spring onion

120g button mushrooms 1 chicken breast

2 bacon rashers, diced 2 tsps. Flour

⅓ cup chicken stock ¼ cup peas

¼ cup cream salt & pepper to

taste

o Cut chicken and bacon into neat even sized cubes, slice

mushrooms and chop onion.

o Heat half the oil in a fry pan and cook chicken till brown.

o Heat the remaining oil then fry the onion, bacon and mushroom until soft.

o Stir in the flour and cook for a minute. Add the chicken, stock and bring to the boil.

o Reduce heat and cook stirring occasionally for about 5mins until chicken is cooked through and sauce thickens.

o Add peas and cream and stir to combine. Season and place on a plate to cool.

o Preheat the pie maker and cut out the pie bases from the short crust pastry and tops from the puff pastry.

o Assemble pies and cook for about 4-5 minutes then remove from the pie maker.

Chicken Parmigiana with Mash & Green Beans

4 medium/2 large potatoes 1 egg

100g green beans 2 ½ tbsp. milk

1 ½ tbsps. butter ¼ cup bread crumbs

1 tsp garlic 2 Tbsp parmesan cheese

2 sprigs oregano 2 Tbsp olive oil

½ can diced tomatoes 50g mozzarella

1 chicken breast Salt and pepper

4 Tbsp plain flour 1 Tbsp butter & 2 Tbsp. milk for mash

o Preheat the oven to 180°C. Line baking tray with baking paper.

o Cut potatoes into cubes and boil. At the same time steam beans in a steaming basket or sieve.

o Gently fry garlic in a fry pan on medium heat.

o Add the chopped oregano and tomatoes. Simmer for 5-8 minutes until sauce thickens. Set aside.

o Cut chicken breast horizontally and pound with a meat mallet until flat.

o Whisk egg and milk in a bowl. Mix flour, salt & pepper together in a small bowl.

o Place breadcrumbs on a plate.

o Coat chicken in flour, shake off excess. Dip in egg mixture and coat in breadcrumbs.

o Heat olive oil in a frypan and shallow fry chicken for 3-4 minutes until golden brown thenplace on the oven tray.

o Top chicken with tomato sauce then sprinkle mozzarella & parmesan.

o Place in the oven and cook for 10 minutes until chicken is cooked through and cheese has melted.

o Mash potatoes with milk and butter until smooth. Serve with chicken and beans.

Chocolate Cup Cakes

2 cups SR flour Icing:

250g butter 1 cup icing sugar

1 cup caster sugar 2 tsp cocoa powder

2 eggs 1 tsp vanilla essence

4 Tbsp cocoa 1 Tbsp luke warm water

2 tsp vanilla essence

¾ cup milk

12 cupcake paper cases

o Preheat the oven to 180°C. Line cupcake tins with paper cases.

o Sift flour together with the cocoa onto a plate.

o Place sugar and butter in a mixing bowl and cream using an electric beater until light and fluffy.

o Beat in the eggs one at a time beating well after each addition.

o Beat in the vanilla essence.

o Fold in the flour a little bit at a time alternating with the milk. Mixture should be a soft dropping consistency.

o Spoon mixture into prepared patty tin.

o Bake for approximately 15-20 minutes or until skewer comes out clean when inserted in the middle.

o Mix icing ingredients together until smooth and decorated as desired.
