    Dainty CRUMBED FISH

    Allow 2 Ibs. any white fish for 4 people. Wash and dry fish , cut in slices ;J.!ld sprinkle with lemon juice. Coat with the following ingredients well mixed :- 6 tablespoonsful bread-crumbs, I tablespoon-ful grated cheese, I t ablespoonful each of chopped parsley, chopped cnion, and flour, I saltspoonful pepper and salt. Butter a baking tin thickly, lay the slices of fish in a'}d put a small piece of butter on each. Bake for 20 minutes.

    COOKING POT A TOES

    The difference between the weights of peeled and unpeeled potatoes is surprisi ng, amounting to approximatel y 40z. per lb. Careless and wastefu l peeling is the biggest enemy of potato economy.

    Potatoes cooked economicall y in their jackets need not be brought to table in this state. Try cooking a suppl y in advance and serving them in a different way each day.

    If you want boiled mea ly ones, you simply peel the pota toes after cooking. the skin being as thin as tiss ue paper. A rew minutes before dishing up you throw them into a saucepan of boi ling, salted water, let them boil for five or six minutes, strain, press a cl ean tca-towel on them, give the saucepan a shake or twO, put the saucepan back on the stove, and by the time yo u have dished up meat and vegetable your mealy potatoes arc dene.

    A good supper dish is made by selecting large potatoes and baking them in their skins. \'Vhen done. take them out of the oven, cut the top off. scoop a little of the potato out, and fill the hole with a lump of butter. a little salt, and a little grated cheese. Put the top on and return to the oven for a few minutes.

    Peel a large marrow, cut it into halves lengthwise and remove the seeds. Part! y boil 3Il onion, chop it finely 3Ild mix it with a breakfastcupful of soaked bread, an ounce of melted butter, a rea5poonful of sage, onc egg and a dust each of salt and pepper.

    Small wonder that she would not powder her lovely hair nor llse rouge nor " make her toilet," or in o ther words make up her fa~e, She always had an air of enchant-ing unpreparedness. You see, she \\'a~ 0 beautiful.
