The nationally-recognized Eagle Dance Team from Santa Margarita Catholic High School opened their 2013 competition season with a large haul of awards at the Shark Splash Spectacular at Santiago High School in Corona last weekend. The Eagles took home three first place finishes, winning in Hip Hop, Extra Small, and Large Lyrical dances. In addition, the team earned second place in Medium dance and fourth in the Small Lyrical/Contemporary dance categories.

Santa Margarita fielded three outstand-ing soloists, Senior Alyssa Henry, and Juniors Katherine Bogart and Ashley Jo Zaccagnini. Henry and Bogart each took first place in their respective divisions, and Zaccagnini took third from a field of highly skilled juniors.

The Shark Splash Spectacular hosted dance teams from seventeen Southland high schools, including some of the most competitive teams Santa Margarita will face throughout the year. It served as a good barometer of where the Eagle Dance Team is at the beginning of the competition season. Most notably, the

Eagles earned the award for Best Overall Technique.

“This weekend’s results made for a really exciting start to our competitive season,” said Santa Margarita Dance Director Bri Allard Blonigan. “The dancers work so hard to prepare for these events; it is truly moving to watch them experience having that hard work acknowledged and celebrated by others.”

While this is the first competition of the year, the Eagles began their preparation for 2013 last summer, under the direc-tion of Blonigan, Dance Coach Sarah Rayburn, and selected choreographers.

The Eagles travel to San Diego County this weekend to compete at the California Association of Dance/Drill Team Directors (CADTD) event at Westview High School. Future competitions will take them to El Dorado High in Placentia and another stop at Santiago, a National competition in Orlando, Florida, and CADTD State Championships in Glendale.

Following the competition season, the Santa Margarita Dance program concludes with the annual Spring Dance Concert, held on the campus of Santa Margarita Catholic High School from May 15-18.

With construction starting in mid-February, Caltrans hosted three community meetings last week to prepare the San Juan Capistrano resi-dents and businesses for upcoming improve-ments on the I-5 / Ortega Highway interchange. More than 200 community members attended an open house at St. Margaret’s Episcopal School in San Juan Capistrano last Thursday. Outreach staff shared proj-ect information including a project overview, construc-tion staging and a detailed traffic management plan. For those who could not attend the open house, Caltrans also hosted two neighborhood meetings on Saturday at Town Center Park and Cook Park in San Juan Capistrano. More than 60 residents braved the cold to share their questions and comments with members of the project’s outreach team.

In addition to the three community meetings, Caltrans will hold the second project Stakeholder Working Group meeting on Wednesday.

Project stakeholders including elected officials, city staff, ma-jor business owners as well as key community leaders are invit-ed to this event to share questions and feedback to project staff. The project, funded by county, state, local and Measure M funds, will pro-vide improvements to the I-5 / Ortega Highway interchange by widening the Ortega Highway bridge as well as reconstructing the on- and off-ramps at the interchange.

Now more than ever, Americans are aware of health and nutrition and look to their diets as a means to get nutrients naturally. Honey-Tart Cherry Glazed Salmon with Rustic Tart Cherry Salsa

Serves: 4

Salsa:1 cup chopped tart cherries (thawed from frozen) 1 small red onion, diced (about 1/2 cup) 1 jalapeño, chopped 1 tablespoon honey 1 clove garlic, minced 1 teaspoon grated ginger

Salt and pepper, to taste

Salmon:1 pound salmon fillet, cut into four pieces 1/4 cup tart cherry juice (juice from frozen cherries will work)

1/4 cup honeyIn medium bowl, stir together ingredients for

salsa until well combined. Cover; chill until ready to serve.

Preheat oven to 350°. Line baking sheet with nonstick aluminum foil or parchment (foil preferred). Rinse salmon fillets under cool water; pat dry with paper towel. Arrange on baking sheet.

In small bowl, whisk together cherry juice and honey. Spread half of mixture over salmon fillets, reserving second half.

Slide baking sheet into oven; bake for 15 to 17 minutes, until just about cooked through. Drizzle second half of tart cherry-honey mixture over fillets; bake for an additional 2 to 3 minutes, until slightly golden at edges.

Serve salmon fillets on bed of greens with tart cherry salsa on top.

The Sawdust Art Festival is pleased to announce its 2013 “Sustain Local Art and Cuisine” fundraising event scheduled for Sunday, March 10 from 3-7 pm at the Sawdust grounds, hosted under the umbrella of La-guna Beach Visitors & Conference Bureau’s Laguna A La Carte annual event. The Sawdust is excited to part-ner with local restaurant 370 Common owner Chef Ryan Adams to present a three-course meal with wine and beer pairings. Unique dining-ware, serving-ware and stemware will be made by a team of talented Sawdust artists specially for this event.

Sawdust artists will “meet and greet” event guests and demonstrate their creative processes at the event. Guests will take home special art gifts and will have the opportunity to purchase art pieces at the event.

A portion of the proceeds raised at the “Sustain Local Art and Cuisine” event will benefit the Sawdust Art Education Fund and will be directly utilized in the creation of a 15-min-ute educational artist video. Twelve Sawdust artists will be interviewed and captured on film, sharing and demonstrating their specific creative processes. The twelve artist demon-strations will be pieced together into a complete film and will be the fourth in a series of similar films. These films are an integral part in supporting Sawdust’s mission and will serve in educating the public as guests come through the festivals each year. Due to lack of funding, the Sawdust Art Festival has had to put the creation of these films on hold since 2009. In order to retain the knowledge of

unique art forms and how they are created, the production of these artist films is very important to the Sawdust Art Festival.

Students in the Capis t rano Unified School District can apply to one of 46 different academic programs during the annual Open Enrollment period that begins next month for language immersion elementary schools and in March for other programs.

Applications will be available online at www.capousd.org, at local schools, and at the District Education Center, 33122 Valle Road, San Juan Capistrano. The application period for the language programs in Spanish and Mandarin will run from Monday, Feb. 4 to Friday, Feb. 22. The general Open Enrollment window for other open schools will be Monday, March 4 to Friday, March 29.

Completed applications must be turned in between 8 a.m. and 3:30 p.m. either at the school to which the child is applying or at the District Education Center (33122 Valle Rd., San Juan Capistrano, CA). Applications for the Spanish and Mandarin language programs can only be turned in at the school of choice.

“In this era of school choice and accountability, our Open Enroll-ment period is an opportunity for increased parental involvement in the education of our children,” Board of Trustees President John M. Alpay said. “I am confident that families can find the right fit for their child among the various campuses and programs located throughout our District. Our schools have an excellent reputation for preparing students for college and career, which can only be enhanced with parents selecting what they be-lieve to be the best option for their child’s individual needs.”

Since the program began 19 years ago, more than 90 percent of parents have chosen to have their child attend the school in their attendance area. The Open Enroll-ment process provides parents with the ability to apply to a school outside of their child’s attendance area on a space-available basis. This year, there are 42 schools with space to accept Open Enrollment students. Detai led information describing each school and its aca-demic offerings is available online.

In the event there are more Open Enrollment applications than openings at a particular school, students will be selected by lottery. Notifications will be sent to families beginning on April 22.

There are many educational options in CUSD, including Or-

ange County’s only Mandarin language immersion program; t h e c o u n t y ’ s o n l y publ ic International Baccalaureate ( IB) candidate school for students in kindergar-ten through 8th grade; innovative Science, Technology, Engineer-ing, and Mathematics programs with part-nerships wi th local industry and federal government agencies; and onl ine schools for students who may thrive in an indepen-dent setting.

Mar ian Bergeson Elementary School offers Orange Coun-ty ’s on ly Mandar in language immersion classes for K-5 stu-dents, while Viejo, Las Palmas, and San Juan elementary schools and Bern ice Ayer and Marco Forster middle schools host the District’s popular Spanish two-way immersion program.

Carl Hankey K-8 School in Mis-sion Viejo features the IB Primary and Middle Years programs, which were created with the goal of de-veloping inquiring, knowledgeable, and caring young people who help to create a better and more peace-ful world through intercultural understanding and respect. This elite and rigorous program serves approximately 902,000 students at 3,140 schools in 140 countries.

Several schools are participating in the District’s partnership with the National Parks Service, U.S. Fish and Wildlife Service, and San Diego State University for Science Technology Engineering and Math-ematics education. Those schools are Castille Elementary School, Newhart Middle School, and Cap-istrano Valley High School; Don Juan Avila Elementary School, Don Juan Avila Middle School, and Aliso Niguel High School; and Marblehead Elementary School, Shorecliffs Middle School, and San Clemente High School.

At the high school level, Aliso Niguel, Capistrano Valley, San Juan Hills and Tesoro high schools are accepting Open Enrollment ap-plications for the 2013-2014 school year. Dana Hills, and San Clem-ente high schools are only accept-ing one-to-one transfers due to the

number of students they already serve. This means if a student leaves the school, his or her slot may be made available through the Open Enrollment process.

The District’s online programs are not part of the Open enrollment process, but are still accepting ap-plications. Those programs include California Preparatory Academy, the District’s online independent study high school; Capistrano Virtual School, which offers on-l ine curr iculum to students in kindergarten through 8th grades; and Capistrano Home School for families who prefer to educate their children with the support of creden-tialed teachers. Applications for the online programs are only accepted at those schools.

Parents of high-school student athletes are urged to learn more about California Interscholastic Federation sports eligibility re-quirements prior to pursuing the Open Enrollment process. Trans-portation to any school other than the home school is the responsibil-ity of parents.

In a unanimous decision, OCTA’s board of directors selected Direc-tor Greg Winterbottom as the new chairman and Director Shawn Nel-son as the new vice chairman of the 17-member board Monday morning.

Winterbottom, a public member on the board who has served as vice chairman since 2009, expressed his gratitude to fellow board members as well as his continuing desire to deliver on the promise of providing effective

infrastructure for the community. “I do thank you very much and will

do my best to uphold the seat that has been held by many excellent leaders,” Winterbottom said. “I hope to help move our organization along and make sure to meet all the needs of Orange County residents.”

Winterbottom brings more than 25 years of experience in transportation issues to the OCTA board, on which he has been a member since 1993, serving as chairman in 2004.

In addition to his work on the OCTA board, he currently is chairman of the Mobile Source Air Pollution Reduction Review Committee (MSRC). The MSRC works closely with OCTA and reviews funding proposals for projects that reduce air pollution from motor vehicles within the South Coast Air District.

Replacing Winterbottom as vice chair is Fourth District Supervisor Shawn Nelson, who joined the board in 2011. In addition to serving on the

OCTA board of directors, Nelson served as the mayor of Fullerton from 2004 to 2007. Nelson is an active member of the community and has served for six years as the city’s rep-resentative to the board of directors of the Orange County Water District.

1 1/2 pounds medium/large shrimp, peeled, un-cooked

1 jar (26 ounces) prepared marinara sauce2 cloves finely chopped garlic1 teaspoon dried parsley1 tablespoon olive oil2 tablespoons butter Crushed red pepper to taste1 pound angel hair pasta

Rinse shrimp and drain in colander. In large pot, boil water for pasta. Heat butter and olive oil in a skillet over medium heat. Add garlic and reduce heat to low. Sauté garlic until soft. Add shrimp and cook uncovered for approximately 5 minutes on each side, until shrimp turns pink. Remove from heat and reserve. In separate saucepan, heat marinara sauce and season to taste with crushed red pepper. Add shrimp to marinara sauce and keep warm. Add pasta to boiling water and cook for three minutes. Drain pasta and place in serving dish. Top with shrimp and marinara sauce.

The Island Hotel in Newport Beach was the setting for the 5th annual CHOC Cherishes Children Gala that honored the Sisters of St. Joseph of Orange and St. Joseph Hospital of Orange. Around 475 guests attended the black-tie affair that featured a cocktail reception, dinner, live auction and entertainment.

This year’s gala, themed “A Future Built on Hope,” raised money for the “Change CHOC, Change the World” campaign. Publically launched in spring 2010 and running through June 30, 2013, the comprehensive $125 million fundraising campaign aims to make Orange County one of the safest and healthiest places for children in the nation. Specifically, the campaign will help CHOC realize its vision of achieving national recognition as a premier children’s hospital by build-ing a state-of-the-art patient care tower, set to open this spring; establishing a substantial endowment to support recruiting more of the world’s top pediatric experts who can drive research and clinical breakthroughs; and building upon the academic and research affiliation with UC Irvine and its School of Medicine to advance innovative treatments and cures for children.

The décor was breathtaking walking into the ballroom. Since the gala commit-tee couldn’t bring the event to the new tower, the goal was to bring the beautiful new tower to guests. That was reflected in the decor with a dramatic video wall, spanning the entire length - floor to ceiling - of the ballroom.

Taking the stage to honor the Lifetime Achievement Awards was CHOC President and CEO, Kimberly Cripe, who presented the awards to Sister Theresa LaMetterey, CSJ, and Steve Moreau, president and CEO, St. Joseph Hospital. During the presentation, Cripe expressed her deep gratitude for the role the hon-orees have played in CHOC’s history and in supporting the health and well-being of children and families in Orange County.

Dinner was served and guests enjoyed for their first course Butter lettuce salad chevre, orange segments, and pomegranate with citrus vinaigrette. The main course consisted of a Petite filet of beef on potato au gratin with red wine sauce and chimichurri and Maine diver scallops on truffle risotto with Beurre Blanc with Ragout of mushrooms with carrots and Brussel sprouts. Decadent desserts were enjoyed; they were Chocolate salted caramel mousse and red velvet cheesecake.

A plethora of items were offered for auction this year, which included a Martha’s Vineyard Hideaway; Angels Ultimate Baseball Fantasy; a trip to Casa Fiesta - Zihuatanejo, Mexico, but the auction item yielding the highest bid of $26,000 was a luxury golf vacation on the big island of Hawaii.

This year, CHOC raised $900,000 which is up from last year’s total of $600,000. Towards the end of the evening, Cripe announced a $27 million gift from Newport Beach resident and retired businessman Bill Holmes to name the new tower, which opens in the coming weeks. The CHOC Cherishes Children gala was organized by a volunteer committee. Unified School District can apply to one of 46 different academic programs during the annual Open Enrollment period that begins next month for language immersion elementary schools and in March for other programs.

Applications will be available online at www.capousd.org, at local schools, and at the District Education Center, 33122 Valle Road, San Juan Capistrano. The application period for the language programs in Spanish and Mandarin will run from Monday, Feb. 4 to Friday, Feb. 22. The general Open Enrollment window for other open schools will be Monday, March 4 to Friday, March 29.

Completed applications must be turned in between 8 a.m. and 3:30 p.m. either at the school to which the child is applying or at the District Education Center (33122 Valle Rd., San Juan Capistrano, CA). Applications for the Spanish and Mandarin language programs can only be turned in at the school of choice.

“In this era of school choice and accountability, our Open Enroll-ment period is an opportunity for increased parental involvement in the education of our children,” Board of Trustees President John M. Alpay said. “I am confident that families can find the right fit for their child among the various campuses and programs located throughout our District. Our schools have an excellent reputation for preparing students for college and career, which can only be enhanced with parents selecting what they be-lieve to be the best option for their child’s individual needs.”

Since the program began 19 years ago, more than 90 percent of parents have chosen to have their child attend the school in their attendance area. The Open Enroll-ment process provides parents with the ability to apply to a school outside of their child’s attendance area on a space-available basis. This year, there are 42 schools with space to accept Open Enrollment students. Detai led information describing each school and its aca-demic offerings is available online.

In the event there are more Open Enrollment applications than openings at a particular school, students will be selected by lottery. Notifications will be sent to families beginning on April 22.

There are many educational options in CUSD, including Or-

ange County’s only Mandarin language immersion program; t h e c o u n t y ’ s o n l y publ ic International Baccalaureate ( IB) candidate school for students in kindergar-ten through 8th grade; innovative Science, Technology, Engineer-ing, and Mathematics programs with part-nerships wi th local industry and federal government agencies; and onl ine schools for students who may thrive in an indepen-dent setting.

Mar ian Bergeson Elementary School offers Orange Coun-ty ’s on ly Mandar in language immersion classes for K-5 stu-dents, while Viejo, Las Palmas, and San Juan elementary schools and Bern ice Ayer and Marco Forster middle schools host the District’s popular Spanish two-way immersion program.

Carl Hankey K-8 School in Mis-sion Viejo features the IB Primary and Middle Years programs, which were created with the goal of de-veloping inquiring, knowledgeable, and caring young people who help to create a better and more peace-ful world through intercultural understanding and respect. This elite and rigorous program serves approximately 902,000 students at 3,140 schools in 140 countries.

Several schools are participating in the District’s partnership with the National Parks Service, U.S. Fish and Wildlife Service, and San Diego State University for Science Technology Engineering and Math-ematics education. Those schools are Castille Elementary School, Newhart Middle School, and Cap-istrano Valley High School; Don Juan Avila Elementary School, Don Juan Avila Middle School, and Aliso Niguel High School; and Marblehead Elementary School, Shorecliffs Middle School, and San Clemente High School.

At the high school level, Aliso Niguel, Capistrano Valley, San Juan Hills and Tesoro high schools are accepting Open Enrollment ap-plications for the 2013-2014 school year. Dana Hills, and San Clem-ente high schools are only accept-ing one-to-one transfers due to the

number of students they already serve. This means if a student leaves the school, his or her slot may be made available through the Open Enrollment process.

The District’s online programs are not part of the Open enrollment process, but are still accepting ap-plications. Those programs include California Preparatory Academy, the District’s online independent study high school; Capistrano Virtual School, which offers on-l ine curr iculum to students in kindergarten through 8th grades; and Capistrano Home School for families who prefer to educate their children with the support of creden-tialed teachers. Applications for the online programs are only accepted at those schools.

Parents of high-school student athletes are urged to learn more about California Interscholastic Federation sports eligibility re-quirements prior to pursuing the Open Enrollment process. Trans-portation to any school other than the home school is the responsibil-ity of parents.

Universal Pictures Stage Pro-ductions, Working Title Films Old Vic Productions and NETworks Presentations, LLC bring the multi-award-winning Billy Elliot the Musical to Segerstrom Center for the Arts from April 16 – 28, 2013. Based on the international smash-hit film and featuring music by Elton John, book and lyrics by Lee Hall, choreography by Peter Darling and direction by Ste-phen Daldry, Billy Elliot the Musical has earned critical acclaim around the world and was the winner of ten 2009 Tony Awards including Best Musical.

Single tickets, which start at $20, will go on sale Sunday, March 10 at 10 a.m. PT. Tickets will be available online at SCFTA.org, at the Box Office at 600 Town Center Drive in Costa Mesa or by calling (714) 556-2787. Billy Elliot the Musical is the joyous celebration of one boy’s journey to make his dreams come true. Set in a small town, the story follows Billy as he stumbles out of the boxing ring and into a ballet class, discovering a surprising talent that inspires his family and his whole community and changes his life forever.

Currently alternating in the title role are Ben Cook, Drew Minard, Noah Parets and Mitchell Tobin.

Also featured are Janet Dickinson (Mrs. Wilkinson); Rich Hebert (Dad); Patti Perkins (Grandma); Cullen R. Titmas (Tony); Joel Blum (George); Jake Kitchin and Sam Poon (Mi-chael); and Samantha Blaire Cutler (Debbie).
