STEAM AND AIRFLOW SYSTEMS
How does a Baxter Rotating Rack Oven or Mini Rotating Rack Oven
create a repeatable steam/bake every time when others simply
can’t? The difference is in how the air and humidity are circulated.
Thanks to our high-performance systems, a fan pulls heated air
across the heat exchanger and through the bake chamber while the
weld-less, multi-tube heat exchangers equalize tube temperature
and allow maximum heat transfer. Steam, generated from our
patented self-contained spherical cast system, joins the airflow from
the heat exchanger to fill the bake chamber. Consistent water volume
is provided through a wide pressure range and a non-clogging
nozzle. The result? An even steam or bake, rack after rack after rack,
whether it’s beef or baguettes.
In addition to the unique heat and patented steam systems, Baxter
Rack Ovens (standard and mini) feature a rotating rack and
programmable controls. The heavy-duty rack lift/rotator
easily handles heavy loads while eliminating warm and cold
pockets. And to make loading and unloading easy, the rack
carrier automatically stops in the load/unload position when
the door is opened.

The rack, locked on the carrier, automatically lifts and rotates when the timer is started. The rack aligns with the door when closed and lowers when the door is opened.
A water-dispensing tube is so efficient, it never clogs, and it provides consistent steam every time.
The spherical cast plates in the Rack Oven interlock for stability and maximize surface area.
The spherical cast plates in the mini-rack oven capture every water droplet and convert them all to steam.
HEAT EXCHANGER
There’s no cooking without heat. And there’s
no better gas heat exchanger than the one from Baxter. It's
designed it to provide maximum, even heat transfer with a
minimum of parts. We figure when your heat system works
better, you do, too.
Baxter’s gas-fired heat exchanger provides premium performance
thanks to the weldless U-shaped heating tubes. Reliable and
even temperatures are crucial in the baking and cooking process,
enabling you to deliver consistent quality products to your
customers. Not only do the tubes provide consistent temperatures,
but they are also built to last. Since the tubes are not welded, there
are no weak points, making them less susceptible to the stresses
of heating and cooling metal. In fact, we've never had tube failure.
A turbulator within each tube helps equalize gentle flames to
provide an even temperature throughout each tube.

With a small footprint of 48" W by 38.1", the mini rotating rack oven contains the same airflow and patented steam system as the rotating rack oven.

All Baxter Rotating Rack Ovens are designed to give you
a jump on the day, with an easy-to-set Auto-Start that
enables you to turn on the oven before employees arrive.
The rest of the programmable digital controls are just
as user-friendly. A “Quick Set” feature lets you enter up
to 99 recipes and recall them at the touch of a button
for consistent cooking. Other features, including auto
vent, airflow delay and a 24-hour clock, make it simpler
to ensure quality results on your schedule. An auto/set
back mode is available to help conserve energy (after 90
minutes of inactivity, the oven will automatically reset
to 275°F). Control panel allows users to define settings
specific to their operation.
Programmable digital controls let the operator choose four-stage baking, program up to 99 recipes, activate auto on/off and more.
EpiconTM Visual Interface Control (VIC)
Currently available as an option on the OV310 mini rotating rack oven the
Epicon visual interface control is a true culinary tool. The Epicon control
allows you to maximize the true potential of Baxter ovens by customizing and
programming individual recipes using the control or a coumputer software
system and load onto a USB drive. It features two modes to create and save
your recipes—manual and auto to fit the needs of all operator skill levels.
Epicon control panels intuitively guide users through modes to customize
recipes or to preset recipes through a single knob to toggle between modes
and recipes as well as adjust temperature, time and steam. Controls and
recipes can be displayed in multiple languages to fit the operator's needs.
The manual mode enables you to create and customize every portion of
your recipe—temperature, time, airflow and steam injections throughout the
baking or cooking process. If you are happy with the end results, simply save
it into the recipe directory in order to repeat the results time after time.
Saved recipes are accessed through the auto mode to enable any baker or
chef to repeat the exact recipe by using the control or a computer software
system and load onto a USB drive. This feature gives you peace of mind that
every loaf of bread or pot roast is prepared the same way in order to deliver
a consistent product that customers will come back for.
