Sentosas beaches oer the most brilliant sunsetso aming horizons and glittering waters.
We came to that realisation while dining at Braise.
The three-month old restaurant conceptualisedby Loh Lik Peng o Hotel 1929 and New MajesticHotel, che Sebastian Ng o Ember and Dawn Teo,and ronted by che Desmond Lee is situated on
the second oor o the reurbished monorail sta-
tion at the edge o Palawan Beach, Sentosa.
Like most restaurants by the beach, diners have theoption o indoor or outdoor seating. Naturally, one
can experience the sea briny breeze and sun-sets in the alresco areas. But it is within therestaurants confnes where one can truly appre-ciate its dcor.
The interiors, designed by Bedmar and Shi, are pri-
marily composed o terrazzo, wood and sisal thatimpart a natural eel to the restaurant. AlthoughBraise is rather narrow and longish a constrainto the buildings structure its lo ty ceilings give
it much needed breathing room. Furnishing-wise,clean and straight lines are avoured. For example,
the white dining tables with mounted lamps resem-
ble minimal, uncluttered versions o watchmakersworktables. A narrow, koi-flled water channel runsparallel to the semi-open kitchen, which neatlypartitions dining spaces rom kitchen spaces. Full-length windows overlook Palawan Beach, the sea
and associated sea-side paraphernalia so that din-ers do not eel hemmed in.
O course, as pretty as the restaurant and the views
are, they pale in comparison to the ood.
Like its sister outlet, Ember, Braise oers modernFrench cuisine. I had sampled their many dishes
but I really liked their roasted illet o Western
Australian bee served with savoy cabbage and bee
cheeks in its own braising sauce (S$48). The fllethad a sot red centre ringed by a per ectly-grilledcrust o bee. The bee cheeks not only ell apartin our mouths; they were bursting with slowly sim-
mered juices.
A meal at Braise does not come cheap: a three-
course meal put together rom the la carte menuwould cost S$95. However, they oer more aord-able lunch sets star ting rom S$38 and six-coursedegustation dinners starting rom S$98.
Braise is a stones throw away rom Sentosas BeachCar Park simply walk or two minutes past the bigsign that states Palawan Beach. For the direction-ally-challenged, Braise has buggies that erry diners
to and rom the beach car park and restaurant.
