Ingredients:6 eggs1/4 cup half-and-half1/4 cup olive oil, with an extra Tbsp for saute4 spring onions, chopped1 cup field peas, cooked1 clove garlic, minced1 tsp salt1 tsp pepper1 cup shredded mozzarella cheese

Instructions:Blend the eggs, half-and-half, and olive oil in a blender for 30 seconds. In a medium-sized skillet, saute the peas, garlic, onions, salt, and pepper in the extra tablespoon of olive oil for 5 minutes, then remove from heat. Next, put the vegetables in a bowl and pour the egg mixture into the skillet. Sprinkle half of the vegetables and half of the cheese over the top of the eggs and bake for 10 minutes on 375 degrees F (190 degrees C). Finally, add the rest of the vegetables and cheese and bake for another 10 minutes.
