  • Research Invertase is an enzyme that comes from saccharomyces

    cerevisiae, which is a type of yeast found in the skin of grapes. It

    catalyzes the process of hydrolyzation, which is when sucrose is split

    into glucose and fructose during digestion. Invertase allows you to

    make more accurate measurements of how much glucose or fructose

    is in a food or drink. Invertase is commonly used in the food industry,

    where fructose is preferred over sucrose, since it does not crystallize. There are three forms of sugars: sucrose, fructose, and glucose.

    Since the body cannot use sucrose for energy, it splits it into fructose

    and glucose. Sucrose is also known as common table sugar. Fructose

    is commonly found if fruits, in small quantities. Most of the glucose

    goes into your bloodstream, or is stored for later use. Fructose has to

    go through the liver, resulting in a small change in blood sugar.

    Digestion of too much fructose, can permanently damage the liver

    and cause a lot of weight gain. Insulin, an enzyme made in the pancreas, allows the body to

    control blood sugar. Yet, patients still need to make sure that they do

    not consume too much or too little glucose. When patients with

    diabetes try to measure the amount of glucose that their body will

    convert from a drink, they cannot get the precise amount, since their

    body may not convert all of the sugar. This causes patients to have to

    estimate how much glucose they will get from a food or drink.

    Sometimes, patients are required to take more or less insulin, since

    they cannot test everything before they eat it.

    Diabetes is a non-contagious disease that is caused when the

    body cannot make or use insulin properly or effectively. Type 1

    diabetes, which is genetically inherited, is when the body naturally

    does not create enough insulin. Type 2 diabetes is caused when a

    person does not get enough exercise and/or does not eat the right

    types of food and cannot use the insulin created properly and

    effectively.
