TEDxRenfrewCollingwood seeks ideas worth spreadingFirst TEDx coming to our neighbourhood October 2013

Do you have an idea worth spreading? We want to hear it! We’re looking for the innovative, the risky, the ambitious, the diligent, the unique, but most of all the passionate -- to speak at TEDxRenfrewCollingwood. Do you have what it takes? “TEDx provides a great opportunity and platform for discovering and sharing the wealth of experience, wisdom & great ideas that exist in Renfrew-Collingwood. It is also an opportunity to invite some interesting people into the community, to share their knowledge with us.” said Niki Dun, TEDxRenfrewCollingwood curator. The first TEDxRenfrewCollingwood is a day-long event for thinking, discussing, and playing. We are looking for people with new ideas and stories to stimulate

and inspire the audience under the theme, “From Far to Here.” The opportunity to speak is open to anyone from

anywhere -- including non-English speakers. “To be truly representative of our community and our city, language shouldn’t be a barrier to participating. Great ideas do come in languages other than English,” says Dun.

Speakers will get up to 18 minutes onstage to present the talk of their lives. All TEDx presentations will be recorded and shared with the world via TED’s YouTube channel, connecting Renfrew-Collingwood to the global community and to people living miles—or even continents—away. The ideas we share on the TEDx stage will keep on living and spreading. Organized by a group of dedicated people in the local community, TEDxRenfrewCollingwood will happen on October 19th, 2013, at Windermere Secondary School. To nominate a speaker or to apply to speak yourself, please send an email to [email protected]. Let’s showcase what Renfrew-Collingwood has got!

About TEDx

In the spirit of “ideas worth spreading,” TED has created TEDx. TEDx is a program of local, self-organized events that bring people together to share a TED-like experience. Our event is called TEDxRenfrewCollingwood, where x = independently organized TED event. At TEDxRenfrewCollingwood, TEDTalks video and live speakers will combine to spark deep discussion and connection in a small group. The TED Conference provides general guidance for the TEDx program, but individual TEDx events, including ours, are self-organized.

About TED

TED is a nonprofit organization devoted to Ideas Worth Spreading. Started as a four-day conference in California 25 years ago, TED has grown to support those world-changing ideas with multiple initiatives. The annual TED Conference invites the world’s leading thinkers and doers to speak for 18 minutes. Their talks are then made available, free, at TED.com. TED speakers have included Bill Gates, Al Gore, Jane Goodall, Elizabeth Gilbert, Sir Richard Branson, Nandan Nilekani, Philippe Starck, Ngozi Okonjo-Iweala, Isabel Allende and

UK Prime Minister Gordon Brown. The annual TED Conference takes place on the West Coast, with simulcast nearby; TEDGlobal is held each year in Edinburgh, UK. TED’s media initiatives include TED.com, where new TEDTalks are posted daily, and the Open Translation Project, which provides subtitles and interactive transcripts as well as the ability for any TEDTalk to be translated by volunteers worldwide. TED has established the annual TED Prize, where exceptional individuals with a wish to change the world are given the opportunity to put their wishes into action; TEDx, which offers individuals or groups a way to organize local, independent TED-like events around the world; and the TEDFellows program, helping world-changing innovators from around the globe to become part of the TED community and, with its help, amplify the impact of their remarkable projects and activities.

Dear Dad,

You know, Dad, you are the world who really knows me.

You are the only one who deeply understands me.

Every day I come back from school, you give me a big smile and a lovely hug. Every night when I go to bed, you give me a night kiss and wish me a great dream. Every morning when I wake up, you are always ready to take me to school. I can say, Dad, you are my star, guiding me in the right direction.

Thank you for all the things you do for me.

Still Creek Lost and Found Walking Tours

May 20, more than 25 people enjoyed their Victoria Day holiday by taking a neighbourhood tour with historian Bruce Macdonald as part of the Still Creek Lost and Found Walking Tours.

“The walking tour was very successful,” Carmen Rosen, artistic director of Still Moon Arts Society, which organized the tour, was pleased to report. It was a great way to finish up the long weekend.

The walkers met at Joyce Skytrain station and followed Still Creek where it has been lost under the streets of the Collingwood neighbourhood.

They discovered that Collingwood Lake was likely created by beaver dams so that the lake was very shallow and almost a mile long between Earles and Boundary Road and Vanness and Kingsway. An old-timer, Don, who grew up in the neighbourhood, added a lot of colourful detail to Bruce’s stories.

Join Still Moon Arts for a Father’s Day celebration at Slocan Park on Sunday, June 16. You can also stay up to date with Still Moon Arts events and activities by signing up for their newsletter at stillmoon.org. See more activities on the Events Calendar, page 7.

Spicy optionsVegetarian options

Greetings food fans. How is every-one this June 2013? How many of you made it to Collingwood Days for an Indian Taco? Speaking of tacos, we journey to Mexico this time around, and in particular that city famous for its food, Acapulco. Welcome to El Sol Acapulco Café.

Yes folks, now you can experience the authentic taste of Acapulcon cuisine by travelling slightly west of the Renfrew-Collingwood com-munity border (Nanaimo), into friendly Kensington-Cedar Cottage territory, to 2269 Kingsway. If you hit the old Canadian Tire, you’ve gone too far. North side. Lots of underground parking.

OK, so now you’re there, relaxing in the clean, wonderful, Acupul-con-inspired dining area of El Sol. You have been greeted by one of the gracious hosts, perhaps owner Miguel or brother Manuel or Miguel’s wife Erica. Although she’s likely in the back working over a hot grill to bring us our much-loved Mexican and Salvadorian favourites. So you’re seated now and your host brings you tortilla chips and salsa—on the house, and you look threw the menu and your mouth is watering.

If you’re like me, your accomplice will be from Mexico and she’ll know exactly what to do and say and order. Now a word to the wise: apparently, the amazingly deli-cious Pozole soup is not just for Thursdays anymore, as the menu

indicates. Had we known this, I be-lieve we may have gone that way, but that’s OK because the Sopa (soup) Azteca was completely delicious. We shared a large ($7) of this tomato-and-chicken-based soup with fried tortilla strips, cheese, fresh avocado and lime.

Next up was our three tacos. Made of soft corn tortilla, these tacos come with a variety of meats, and/or vega-tariano (with sautéed eggplant or mushroom). We went with Suader-ero (tender slow-cooked beef); Tinga (juicy chipotle stewed chicken); and Cochinita Pibil (slow-roasted pork). All three of these super-delicious morsels can be had for a mere six dollars—nearly half the price you’d pay downtown and more, yes more, delectable!

We weren’t done yet though—I had to have some of one of my favou-rites—those Pupusas—El Salvador’s national dish. These consist of a hand-made, stuffed corn tortilla cooked golden on a griddle and served with Curtido (Salvadorean-style coleslaw) and salsa de tomate (savoury tomato sauce). Your choice of fillings include Revueltas (beans, cheese, pork); Frijoles (home-style refried beans); Chicharron (savoury ground pork rinds) or Queso (moz-zarella-feta blend of cheese, loroco, green pepper and zucchini). Pupusas are delicious and like pizza, you can eat it with your hands—a steal at $2.50 each.

To wash it all down we each had one of the specialty beverages—Horchata (ground almonds, rice, cinnamon, sugar and milk. Really delicious. Other specialtry drinks include Tamarindo and Naranjada (a blend of fresh-squeezed juices).

It is Erica who hails from Acapulco and studied cooking at home and at university. It is the brothers, from El Salvador, who bring us the Salvadorian influence in—like those Pupusas we now know and love—or for breakfast, the El Salvadoreno (two eggs scrambled with to-matada (tomato sauce), home-style refried beans, fried plan-tains, home-style cream and two hand-made Salvadorean-style corn tortillas). The El Sol fea-tures a complete line of break-fasts.

My accomplice and I thought that the food at El Sol Acapulco Café was excellent and I do look forward to getting back there soon. I also hope that you will take some time to try El Sol for yourself: for the excellent food and to meet the really nice Lin-ares family.

Bon appetit or, in this case, buen provecho.

How to plant a tree And help grow an urban forest by Julie Cheng

“Planting a tree is not hard,” says tree expert David Tracey. “Nature does it all the time.”

We just have to do what nature does.

Still, the dozen neighbours who’d come out to Slocan Park this chilly morning, with rain clouds overhead, learned many new tree-planting tips, like the proper posture to dig and an easy way to check how well your soil drains.

Most of us were picking up a tree we’d ordered through the Treekeepers program, which “helps Vancouver residents plant and tend the urban forest in the world’s greenest city.” By becoming a treekeeper, we have our tree monitored by volunteer citizen foresters.

What to watch for

Welcoming our questions throughout the hands-on lesson, Tracey gave easy-to-understand instructions with good humour and contagious enthusiasm.

The biggest problem is people plant too deep, he notes.

You need to plant above the graft line, he says, pointing to the bottom of the trunk where it bulges. If there is soil covering the graft line, roots will sprout from the rootstock tree, not the tree you want.

It’s most important to check the roots. Make sure the roots have not wound around the inside of the pot, called girdling. Girdled roots can continue to grow in a circle and choke the tree of air and water.

Steps to plant a tree

1. Choose a location that gets lots of sun, has well-draining soil and has lots of space for the tree to grow2. Dig a hole three times the width of the pot that the tree comes in. Rough up the edges of the hole so that roots can reach into them3. Check the roots for girdling4. Make sure the hole is not too deep. An easy way to do this is to place the shovel handle horizontally across the hole. Sit the tree in the hole so that the graft line is level with the shovel handle. If too deep, add more soil then line up the tree again

5. Tamp down the soil to make sure the tree doesn’t settle. Check again that the tree is not too deep6. Cover the roots with soil7. Water well8. Hammer in one or two stakes and loosely attach the tree to them with soft ties that will not cut into the trunk9. Until the tree is established, water twice a week and more often in hot weather10. Enjoy your tree for years to come

Near the end of our lesson, a light rain started. Perfect. Us neighbours happily carried our prized tree home and couldn’t wait to get planting.

Add mulch around the tree to protect it and keep moisture in and weeds down.

Local literacy activities Recipes needed for cookbook Do you have a family recipe for special comfort food or popular potluck dish? Recipes are being collected for the Potluck Cookbook by the Collingwood Neighbourhood House Literacy Outreach project. Selected recipes will be tested by Collingwood seniors for inclusion in the cookbook. Children from the Collingwood School BUDDY Program will create food poems and illustrations. Put a favourite recipe in an envelope to “Timothy Shay, LOC, Recipe Book” and leave it at the CNH front desk.

Janet Lee “Don’t be afraid to give it your all”

by Janet Lee and Timothy Shay

This month the Collingwood Neighbourhood House legacy interviews continue with Janet Lee, an active community member and participant. If you attend Tai chi, jazzercize, zoomba, the Seniors Advisory Committee or the Towers Conversation Group you’ll meet Janet. Born Lai Sieling, in Nanking, China, during 1936, Janet Lee’s childhood was disrupted by the brutal Sino Japanese War (Second World War). She recalls escaping as child, carried in a basket, to her grandfather’s Hainan Island home. She witnessed many hardships of war when the island was occupied by the Japanese military. Her family lived in the ruins of their buildings. Her father was absent, being of high military rank and closely associated with Chiang Kai Shek and the Chinese war effort.

Janet moved to Hong Kong at 10. She immigrated to Canada and learned English. Awarded a bachelor’s degree in nursing at Queens University, she worked at the Montreal Hospital. Janet married and raised her family of one boy and three girls in western Canada. She shares an important life highlight with this story:

“When my husband passed away in 1990 I was heartbroken but determined to regain my strength and take care of my family.”“In 1992, I met a lady named Jane Cherry and we talked. Since then, Jane has been a great source of strength to me. She told me she did Dragon Boat paddling as a sport. This piqued my interest. She invited me to Granville Island to meet the club.

“I met many paddlers. They were all encouraging. I joined the “The Grand Dragons” club right away. All 70 members are aged 50-plus. We are part of the False Creek Racing Canoe Club (FCRCC) with a membership of 13,000 people. “Besides practising twice weekly,

there were many social activities such as lunches, dinners, and out of town races. Our club is divided into three teams: A, B and C, according to each person’s paddling-time ability. I really wanted to be on Team A. But I knew I had to try to improve my physical condition. So I hired a personal trainer and worked out for one hour, two times per week with the result being that I made it onto the A Team.

“From May to late September we travelled to Victoria, Kelowna, Nanaimo, Seattle and San Francisco, among others, to race. We never came home without a medal. My drawer is full of medals.

“The most memorable race was the 2005 World Championship in Berlin, Germany. I was 69 years old. The call was announced to all Dragon Boat Clubs. With the coach’s approval, team members were chosen from across Canada, most from Ontario and BC. I was in the age 50-plus group. We left for Berlin on July 26th, 2005. The race site was one of the former Summer Olympic sites. Impressed, excited and very proud, I thought, ‘I must give my very best.’ “There were 26 countries in total joining this event so we worked to make sure we were ready.

“Between August 4th and 6th we participated in 10 races of varying lengths. On the third day we came in first in all three 1000m races. At home we seldom raced that far during our practices.

“We were so full of joy that any aches and pains we felt during the race were all gone. The awards ceremony and the moment we received our trophy are moments I will never forget. On stage, the Canadian flag was raised and we sang our national anthem, Oh Canada. It

was so emotional I felt as if there was electricity going all through my body.

“This confirms the old saying that ‘if there is something you want bad enough, try hard, follow your heart, try and try again. You will succeed.’ For me, it means don’t be afraid to give it your all.”

Timothy Shay is the Renfrew-Collingwood Literacy Outreach Coordinator based out of Collingwood Neighbourhood House.

Janet Lee’s drawer is full of medals from dragon boat racing.

Something Special is now celebrating it’s 22nd year here in Collingwood. Located just east of Joyce, at Kingsway, across from London Drugs, this ladies’ clothing boutique has something special for every woman and girl. Started by Allan and Christina Li in 1991, Something Special emerged after the success of their online business selling costume jewellery. The Lis decided that they should open a store and Something Special was born.

Now, in addition to the costume jewellery, the Lis have expanded the business to offer the full range of woman’s fashion and fashion accessories. Something Special has a large inventory of the latest in fashions from around the world, and continually bring in new pieces that they think their customers will love. And judging by their success, which has grown over these 22 years by word of mouth alone, the Lis obviously have discerning tastes.

Dresses, skirts, blouses, dainty under things, camisoles, pants, shirts, tops, socks—every clothing piece a woman needs and desires is here at Something Special. There are also kid’s ware items for all your girl’s needs. Then there are all of the clothing accessories and what got things started in the first place, and excellent selection of costume jewellery.

This is also the place to find the perfect gift for someone—Something Special carries a variety of novelties and gifts. We could also tell you about their wide selection of hand bags and a whole lot more, but ladies, may we suggest you check out Something Special for yourself.

When not busy with the store, Allan Li enjoys relaxing at home. He also enjoys taking off on his motorcycle and going for a long ride. Mrs. Li loves going for long rides with Allan too, but no longer on the motorcycle, preferring the car these days. “I love going for long drives with Allan and checking out the local sites, going to festivals…”

The Li’s migrated to Vancouver from Hong Kong in the 80’s. “We were searching for the best education as we could for our children,” says Mrs. Li. They were certainly successful there, as their two daughters both got their degree from UBC and SFU a few years ago, with the younger daughter now working as a professional CGA. Well done Li’s and congratulations on 22 years of successful business here in Collingwood.

The good neighbour by Robert Edwards

I would like to start by asking each and every one of us what is the good neighbour and how far is the neighbourhood? Is it your next-door neighbour? Or is the person across the street or maybe as close as across the hallway or across the world? For me, trying to be a good neighbour is wherever I am, with whoever I am with and, furthermore, whereever I am in the world. Like so many of us, I enjoy the Collingwood neighbourhood; it’s got everything. Well, almost everything that we need in a small community in the greater Vancouver area. We also have the good fortune of having a good neighbourhood and even in the greater Vancouver area this is not always the case.

But I’m not necessarily referring to our neighbourhood or even a neighbourhood in Canada. I’m pleased to share my happiness and success in going to another neighbourhood in Cambodia. I will be going with an organization called the Developing World Connections. We will help a community build viaducts, water irrigation wells and, maybe, homes and schools. I feel that I’m going to be a good neighbour and the address is in Cambodia.

Further to my delight I’m going to have the privilege of meeting (at my expense I might add) three of my sponsored children from World Vision. I will be able to see firsthand where my small monthly contribution turns into a hope for others, a future for children in a dream that I have just shared with them. I will also share and meet their family and their communities.

I sincerely hope that some of you will read this and share some of these feelings with our neighbour across the hallway or across the street. I also hope that many of you will share my larger concept of the neighbourhood by helping a neighbour wherever they are in the world and their children and families.

Keeping food safe by Kathy Romses, Registered Dietitian, Evergreen Community Health Centre

Warm days offer lots of opportunities for fun outdoor picnics with family members and friends. Keeping food safe outside can be more challenging on warm days because food bacteria enjoy the heat and grow quickly.

Take extra care with perishable foods like meats, poultry, fish, seafood, eggs, dairy products and dishes made with these foods. Keep perishable foods out of the “Danger Zone”—from 4°C to 60°C (40°F to 140°F)—by following these steps to keep food safe.

1. Digital thermometer – Use a digital thermometer to check the temperature of food.2. Separate – Keep perishable foods separate from foods that will not be cooked, e.g., breads, salads, fruits and vegetables.

3. Cold food – Anything that you would normally keep in your fridge at home needs to be kept in a cooler with ice or frozen gel packs. Put raw meat, poultry, and seafood in a leak proof container or re-sealable plastic bag. Meat, poultry and seafood can be packed while still frozen to stay cold longer. Place in a separate cooler or at the bottom, to keep juices from dripping onto other foods. The temperature inside the cooler should be at or below 4°C (40°F).4. Hot food – Wrap food and use an insulated container to keep hot food at or above 60°C (140° F). 5. Clean hands – Wash your hands before touching or eating foods. If water isn’t available, use hand sanitizer.6. Cook – Cook to a safe temperature:a. steaks, fish fillets and eggs to a minimum of 63°C (145°F). b. mechanically tenderized cuts of beef, pork and ground fish or meat to 71°C (160°F).

c. poultry, field dressed wild game, and stuffed meats to 74°C (165°F).7. Serve – Use a clean plate and utensils for serving. Do not use the same plate that was used for raw meats, poultry or seafood. 8. When in doubt, throw it out! – Contaminated or unsafe foods may not look or smell bad. If food has been in the “Danger Zone” for more than 2 hours or 1 hour on hot days, throw it out.

Food Safety Course

If you are interested in learning more about food safety, take the online Ministry of Health course, “Caring About Food Safety”, available at http://www.health.gov.bc.ca/protect/food-safety-module/files/home.htm. The course includes six sections on:• Why learn about food safety? • Buying food• Storing food • Preparing food• Cooking food • Cleaning up

The course is available in French, Traditional Chinese and Punjabi.
