The Edible Schoolyard Project helps students grow food.

Schoolyard Spring Salad

NEED Side Dish
Serves 5
NEED
5 plates / forks 4 bowls
1 (10 oz) bag spinachwashed / dried 1 turnip, diced * 1 beet, diced * 2 carrots, grated *
1. Put large handful of spinach on each plate.
1/2 C shredded cheddar cheese any salad dressing4 spoons
2. Put turnips, beets, carrots and cheese into bowls.
3. Let students spoon items on their salads.
4. Add salad dressing.
5. Eat.
This recipe is based on an actual Edible Schoolyard spring salad harvest.* Any vegetables may be substituted for this recipe.
