Somebody cares for these plants.

They come from plants.

Vegetables are one kind of healthy food.

The plants grow in a garden or on a farm.

That “somebody” could be you !

She wanted them to care for the environment too.

Chef Alice Waters began the Project in 1995.

The Edible Schoolyard Project helps students grow food.

Students would learn those lessons in a garden.

Soon the seeds grew into healthy plants.

The students planted vegetable seeds.

Alice helped a California school start a garden.

They watered the seeds and pulled the weeds.

The students learned about science.

They can also pollute the vegetables.

“Organic” means the students used no chemicals.

The school’s garden was organic.

Chemicals can pollute the soil.

Alice says organic vegetables taste best !

They learned about math and cooking.

They washed and cut up the vegetables.

Students harvested the vegetables.

Students measured the vegetables for recipes.

Today, more than 1,600 schools have the Project.

Many schools like the Edible Schoolyard idea.

Schools around the world now have gardens.

They love their Edible Schoolyard gardens.

Schoolyard Spring Salad

NEED Side Dish

Serves 5

NEED

5 plates / forks 4 bowls

1 (10 oz) bag spinachwashed / dried 1 turnip, diced * 1 beet, diced * 2 carrots, grated *

1. Put large handful of spinach on each plate.

1/2 C shredded cheddar cheese any salad dressing4 spoons

2. Put turnips, beets, carrots and cheese into bowls.

3. Let students spoon items on their salads.

4. Add salad dressing.

5. Eat.

This recipe is based on an actual Edible Schoolyard spring salad harvest.* Any vegetables may be substituted for this recipe.
