Pauline stops off for a late workout at Curvesthree times per week on her way home fromwork. She joined the club back in April 2006and is one of our longest serving members.

Having been slim all her life, Pauline never worried about the quantity or the kind of foodshe ate. However, over a number of years - ashappens with many women - pounds had crepton slowly without her noticing. When Paulinesaw herself in a photograph taken at a familyparty, she was shocked to see how she hadgained weight and realised it was time to dosomething about it.Previously, Pauline hadbelonged to a local gym but never enjoyed it.She found it to be expensive; there was nosupervision, help or motivation which resultedin her not attending frequently enough toachieve any results. Then she saw an advert forCurves in her local paper and decided to checkus out. First impressions were so good that shedecided to join as soon as she walked throughthe door!! The warm welcome Pauline received,together with the friendly atmosphere and thepersonal attention she was given at her fitnessassessment were all it took to convince her thatCurves was the place to be! She says that shewas made to feel “special”, which was some-thing she had never experienced before in a gym. Pauline enjoyed the encouragement and motivation she received during supervisedworkout sessions on strength training equipment, combined with cardio-vascular exercise, and saw positive results immediately.Not only did her fitness and energy levelsincrease, but she lost over a stone in her firstthree months. When Curves Smart (our uniqueelectronic personal coaching system) wasinstalled she was one of the first members tojoin the scheme because she wanted to work ashard as she could to achieve even betterresults.

Pauline knew that in order to maintain herweight and fitness she needed to pay moreattention to her eating habits. She was very

reluctantto subjectherself to a “diet”because shethought thatrestricting herselfto meagre portions oflow-calorie foods would be too punishing. The service provided by Curvesincludes advice on nutrition, and when theCurves Weight Management Programme wassuggested to Pauline, she didn’t show anyenthusiasm. It took a good deal of gentle coaxing to convince her that she had nothing tolose (except pounds and inches!!!) by giving ita try. Eventually, she made the decision tocome to one of our classes and hasn’t lookedback since. She has had some AMAZINGresults. The plan is easy to follow and staff atthe club provide all the support Pauline needsto stay on track. She is eating a healthy, well-balanced diet which she intends to maintain fora lifetime. Her energy is maintained at a con-stant level because she is eating correctly whichmeans that she is able to exercise more effec-tively, leading to even better results. Pauline islooking and feeling fantastic and her weight isstill dropping steadily. She has dropped a couple of dress sizes and is enjoying treatingherself to new clothes.

Pauline says she loves Curves because she finds the staff friendly and helpful. She enjoys contributing towards our charity events, socialising on the exercise circuit and takingpart in the games and challenges which are a regular feature in the club. Her favouriteactivity is our Christmas party where she can be spotted on the dance floor for most of theevening.

She says “Curves should be compulsory for allwomen – not just for fitness, but an overallsense of well-being”.

Raspberries

I will always champion ‘eating the seasons’, inother words, eating fruit and vegetables whenthey are in season and as freshly produced aspossible, rather than out of season when theyhave travelled halfway round the globe via monthsof cold-storage, to fill the supermarket shelves.British raspberries are a case in point. Althoughthis is a fruit which freezes very well, for me, itshard to beat the taste of the summer’s first crop ofthese luscious berries, an exquisite combination ofacidity and sweetness; an experience of flavourwhich will always far exceed that of any out-of-season imports.

If you grow your own raspberries in the garden oron an allotment, you will know the satisfaction ofpicking fresh fruit straight from the bush to enjoysimply, or as part of a stunning dessert. If youhave a bumper crop, then these berries are bestfrozen without sugar, spread out on trays, thenbagged when frozen, so that a few may be usedat a time. Alternatively, it is quick and easy tofreeze raspberry puree in containers of varioussizes, so that you have a readily available base forsauces, fruit drinks, milk shakes or mousses.Simply puree the ripe berries in a blender or foodprocessor and sweeten with 4oz/100g sugar to 1 pint/575ml of puree.

But if you are not lucky enough to grow your own,just treat yourself to a pound or two of fresh raspberries, and the possibilities are endless - raspberries are so versatile, and packed with

Vitamin C.This fruit caneasily be used togreat effect in baking, ice creams and sorbets, mousses, fruit salads and compotes, or even to enhance certainsavoury dishes.

¥ For a rather special Raspberry Coulis which issmooth and glossy, push the berries through afine nylon sieve with a ladle to remove the seeds.Add icing sugar to taste, then stir in a splash ofliqueur such as Framboise or Kirsch and servewith ice cream, Lemon Tart or Chocolate Gateau.

¥ Add a generous number of firm raspberries to a sponge traybake mix with the grated zest of a lime. Mix the lime juice with some caster sugarto drizzle on as soon as the traybake leaves theoven. This moist raspberry cake needs eatingwithin a day or two, but this is not a problem inmy household!

¥ Raspberries have a wonderful affinity with otherfruits and stirring a few berries into cooked andsweetened apples or rhubarb makes a fruit pie orcrumble filling which is colourful and bursting withflavour.

¥ Chilled Raspberry and Mint Soup makes a mostrefreshing starter or dessert in summer. Heat 11/2

lb/750g raspberries gently with 4 tablespoons oflemon juice and 2 tablespoons of sugar until thesugar dissolves. Press through a nylon sieve andadd to 3/4 pint/450ml white wine or sweet cider

Summer fruits, and in particular, raspberries, are quite possibly my favourite fruit. Childhood fruit-picking expeditions involved the whole family andwere the inevitable fore-runner of the annual jam-making sessions which filled the house with sweetsticky smells and the sound of clinking jam jarsbeing washed and dried.

and the juice of an orange. Stir in a handful ofchopped fresh mint, chill, then ladle into bowlsand swirl in some cream.

¥ A very simple Raspberry Fool can be served in elegant glasses or sundae dishes, accompaniedby almond tuiles or brandy snaps. Squash1/2lb/250g raspberries gently with a woodenspoon and sprinkle with 2oz caster sugar and asplash of rosewater, Cointreau or Kirsch in abowl. Whisk 300ml double cream until fairly stiff,add 50ml sweet white wine, whisking to softpeak stage. Fold in the squashed fruit until thecream is streaked with pink. Pile into servingglasses and decorate with extra raspberries orgrated chocolate.
