Stockport College, Stockport, Manchester is a major provider of post 16 education and training in Stockport and a key regional and national centre for a range of specialist courses. The college planned to invest in new catering facilities in both the refectory and teaching side of the catering areas. Radford Chancellor LTD was appointed to undertake a three phase consultancy project as follows:

PHASE ONE - CONDITION SURVEY OF EXISTING EQUIPMENT

Radford Chancellor LTD undertook a survey of the existing equipment, assessing its condition, making recommendations as to a schedule of repairs and identifying any equipment which should be replaced. An estimate of costs against the findings of the condition survey was provided to the client, and quotations for the repair of some equipment were sought by a competitive tender process.

PHASE TWO - DESIGN & SPECIFICATION

The consultancy carried out both conceptual design and detailed designs of the new catering facilities in relation to the Refectory (in particular the Refectory Counter), Refectory Kitchen, the

RWE Kitchen, the Training Restaurant Kitchen, the Training Restaurant and Bar and the Classroom demonstration kitchen. Our Consultants engaged with all stakeholders within the project, including end user client, operational staff, architect and other project consultants. The final detailed project design included full CAD ready

PHASE THREE - PROCUREMENT

Radford Chancellor LTD provided sufficient information in the form of schedules, drawings and instructions to tender to permit the competitive procurement of the equipment. The consultancy managed the whole tender process for the client including the PQQ stage, ITT stage and evaluating the returned bids.

Conference Aston boasts Birmingham city centre’s premier

portfolio of award winning conference, hotel and event venues;

purpose built to offer choice, flexibility, quality and expert

support, without compromise. Arguably one of the most

accessible city centre locations in the UK; it offers a leading

portfolio of dedicated conference and meeting venues.

Conference Aston is carrying out a multi-million pound

refurbishment, including a total refurbishment of the main

kitchens, bar and a new satellite kitchen. Radford Chancellor LTD

was appointed as the catering consultant to carry out conceptual

and detailed designs of the new catering facilities. During the

processes our consultants engaged with all stakeholders within

the project, including end user client, operational staff, architect

and other project consultants. The consultancy provided the

client with final detailed project design of the main kitchens,

bar and a new satellite kitchen, which included full product

specification, services schedule and services drawings. A tender

pack was prepared (with full CAD information) and Radford

Chancellor LTD tendered the project to a number of market

leading kitchen suppliers.

The consultancy managed the whole tender process including

managing site visits, answering questions from the bidders,

providing an interface between client and bidder and evaluating

the returned bids. After the design and tender process an award

winning kitchen house was appointed to the project to supply and

install the kitchen within client budgets

During June and July of 2014 Radford Chancellor LTD were

approached by Derby City Council to perform HACCP checks,

E-Coli compliance checks and a general review of the overall

kitchen and equipment standards. Checks were made in seven of

Derby City Council’s retirement homes. We were then invited to

perform the same checks in a number of children’s homes.

The work we did for Derby City Council consisted of an initial

review of each individual home. In our subsequent report for

each we explained where we felt they did well and where they

could improve. The reports were then summarised indicating

the different actions needed to improve the homes’ HACCP

results. A summary of the kitchen equipment due for service or

replacement was provided.

Once the reports had been completed and delivered to Derby

City Council, we started work on creating a new HACCP system

that could be implemented in each home. This is intended to

help them track the various parts of the HACCP better. Every

staff member at each home was trained on how to use this new

system by our team of in-house Consultant Chefs.

For this reason Sheraton Hotels take training and Food Hygiene very seriously. Radford Chancellor LTD was proud to deliver ‘Accredited Level 2 Food Hygiene Training’ and extra training on the ‘Principles of HACCP’ to the Sheraton Hotel in The Gambia.

The training ran over a number of days, and we trained over 60 staff at the Hotel and reviewed their HACCP standards. The internationally accredited level 2 course is ideal for all staff involved in preparing and serving food. The course covers:

With a seating capacity of nearly 48,000 spectators, the Etihad Stadium located just outside Manchester city centre is the twelfth largest in the UK. In addition to its main role as home to Manchester City Football Club, the Etihad Stadium also hosts occasional concerts (where its audience capacity grows to 60,000) and other high profile, non-football events.

As the main tenants of the stadium, Manchester City Football Club required a detailed assessment of all the catering facilities in the complex, with specification and budget requirements for asset replacement.

Radford Chancellor LTD assessed more than 50 public kiosks and 10 hospitality sites to create an up to date inventory, and identify equipment that required replacement. In a detailed report, Radford Chancellor LTD also highlighted areas for design and layout improvement that would lead to more efficient uses of space and staff resources.

As part this project, Radford Chancellor was contracted as an expert in the field of kitchen efficiency, catering design and equipment resource.

The completed report was passed to Manchester City’s Procurement Team to be used in an upcoming refurbishment project.

The O2 Arena is a multi-purpose indoor arena located in the centre of The O2, a large entertainment complex on the Greenwich Peninsula in London. It is named after its main sponsor, the telecommunications company O2. The O2 Arena has the second-highest seating capacity of any indoor venue in the UK, behind the Manchester Arena.

In July 2013 The Consultancy was recruited by the management company behind the O2 operations to create a detailed assessment of all the catering facilities in and around the O2 arena. This assessment was to include specification and budget requirements for asset replacement. Radford Chancellor LTD assessed a large number of kiosks to create an equipment inventory and to identify equipment that needed to be replaced.

After the initial assessment was completed by one of our experienced consultants we started to compile a report, which firstly outlined the methodology for the review. We then showed figures detailing the amount of equipment that was in need of repair, the carbon rating of each piece of equipment and the cost required for the repairs in each area.

Finally we summarised our report with a detailed asset list identifying each piece of equipment individually with an asset number. This asset number is also attached to the equipment to make identification easy for the client.

Rainhill High School is a comprehensive school near Liverpool with 1545 students ranging from ages 11 - 18, including more than 250 students in the sixth form.

The consultancy was asked to assist Rainhill High School in appointing an new caterer after they decided to move away from council catering and appoint an independent caterer.

Initially we provided Rainhill High School with a detailed report outlining our review of the current catering being provided and recommendations on how this could be improved.

We came to our conclusions in the report from extensive quantitive research, including face-to-face questionnaires of students, teachers and key stakeholders. Desk research was performed by us using a number of Mintel and FCSI reports. We also performed some market testing and provided consultant visits, where we were able to take a detailed look as the facility and the catering on offer.

Once the school had made the decision that they were going to tender out the catering contract we provided independent advice to our client and provided all the tender contract documents.

Our next step at Rainhill School was to submit the tender on the ‘Official Journal of the European Union’. After the closing date we submitted a PQQ (pre-qualification questionnaire) to the interested companies, asking questions that would give us an idea how they would like to run the school catering.

The PQQ also give us an insight into the financial standing of each company so we can decided if they are suited to take on a contract of this size.

When we have evaluated the PQQs and informed the successful parties that they can now submit a tender, we issue all the legal tender documents to be completed and submitted to the school.

We then evaluated all the tenders with the headmaster and Governors of the school. An informed decision of who should take on the school catering contract can then be made.

Ambatovy is one of the most ambitious industrial undertakings in the history of Madagascar, Africa, and the Indian Ocean Region as a whole. It will soon produce 60,000 tonnes of refined nickel and 5,600 tonnes of refined cobalt every year for the next three decades. Ambatovy was positioned to become the world’s biggest lateritic nickel mine by 2016.

Radford Chancellor LTD was contacted by Ambatovy in the late summer of 2012. We provided independent advice to our client and evaluated the bids from a number of leading international catering companies for the Catering, Housekeeping and Camp Services. Given the size of both the contract and the operation at the Ambatovy Project the client was keen to have an unbiased opinion of the responses from the catering company bidders.

The evaluation was carried out using weighted criteria and broken into three main sections: Commercial evaluation, Technical evaluation and a Compliance check. Each section was also broken down by further criteria i.e. Price, Quality & Functionality - Catering. During the evaluation process we carried out a number of international searches and credit reports for each bidder.

Once Radford Chancellor LTD had finished the evaluation, we provided our client with a detailed report of our findings, a number of graphs showing the scoring criteria for each bidder and clear recommendations. This report was then used by our client to help them award the Catering, Housekeeping and Camp Services to their preferred bidder.

In July 2014 Radford Chancellor LTD worked with Canalside Farm Shop in recruiting a new Catering Manager for their facility.

Canalside Farm Shop was undergoing large investment from its owners; the operation was to be a counter style service with enhanced table service. The catering operation will serve fresh, home-cooked foods with local produce from the Farm Shop. The Farm Shop is well known in the region and provides seasonal, fresh, local produce, together with a bakery, butchery and delicatessen.

They were looking for an experienced Catering Manager to drive the business forward during the very important start-up phase. They looked for experience and expertise from a Catering Manager responsible for controlling all aspects of the Catering facilities at their site.

Initially we created a job description which was posted with some of the leading recruitment agencies. We then reviewed the applications of all who applied. Subsequently we interviewed an initial batch of candidates, producing a shortlist of five to eight names.

Because it is very important that the client is involved with the final decision, we invite all of the final candidates to a group assessment day usually held at the clients’ facility.

The assessment day involves interviews with the client asking questions about different aspects of the business and the prospective candidates’ anticipated role.

We also hold a group exercise which is fully taken over by the candidates and gives the client an insight into the leadership skills of each candidate.

After this rigorous search had been completed the most suitable candidate was found and is now driving this business forward.

Garden centres have increasingly turned to coffee shops and restaurants as an extra source of revenue. They are a useful way to increase foot-fall, put empty space to good use, and increase the length of time visitors will spend on-site.

But as more garden centre operations create food retail spaces, competition is fierce and operators have to ensure that their food operations are of sufficient quality to cope with competition and deliver an effective revenue stream.

To help Swarkestone Nursery create a successful catering operation, Radford Chancellor LTD provided advice on business planning, human resources, budget forecasting and senior level recruitment. The site underwent a £1.5 million investment from its owners. The operation is counter service style, with fresh home cooked foods, local produce and an in-house bakery area.

Radford Chancellor also provided training for customer service to catering staff, ensuring that staff were able to use new equipment safely and to its full potential. To help ensure that business targets and food safety standards are maintained, Radford Chancellor will provide a three monthly audit.

Oman Oil Company Exploration & Production LLC (OOCEP) is an upstream oil & gas company based in the Sultanate of Oman. OOCEP is a subsidiary of Oman Oil Company S.A.O.C (OOC) with a primary focus on upstream investments as part of OOC’s strategy of pursuing local and international energy related investments. OOCEP’s activities combine the management of investments in nonoperated upstream assets in Oman and abroad, as well as operating upstream and service/midstream businesses in Oman.

Radford Chancellor LTD was appointed to OOCEP to review the field based catering and camp services. Our key objective was to ensure the catering offer is sustainable, of high quality, healthy and safe for the resident and non-resident workforce, partners and visitors to OOCEP’s accommodation and camps. As part of our work we developed the Catering and Camp Services Strategy, food safety / HACCP standards and the contractors’ scope of work plan. In addition we provided a detailed Catering and Camp services operations manual and a cloud based training resource for the catering department. The consultancy also provides OOCEP with contract start-up support as required by the client.

OOCEP is proud of its reputation as a leader in its field of work; the catering and camp services now reflect the company’s standing in the oil & gas sector.

Luton Borough Council approached us with a proposal to review the facilities at Luton Culture’s Wardown Park Museum. They had plans to redevelop and refurbish the ground floor of the building.

Wardown Park Museum is situated in the beautiful landscaped Wardown Park, on the outskirts of Luton town centre. The museum offers a range of displays including the Bedfordshire and Hertfordshire Regiment Gallery and the popular Luton Life Gallery. The museum also holds about four temporary exhibitions a year on different subjects. Wardown Park Museum also holds events and activities for all ages and interests throughout the year.

When starting this project we first visited the site to see what is currently on offer at the facility and gather our thoughts.

Our conclusions were then relayed in a detailed report outlining our review of the current catering provision with recommendations on how this might be improved.

Our conclusions in the report were based on our site visits, extensive quantitive research, including face-to-face

questionnaires of customers. We performed desk research using a number of Mintel and FCSI reports.

In addition to the recommendations report we provided Luton Culture with detailed financial information including lunch numbers, sales, revenue and cost forecasts.

Shugborough Estate is situated in a river valley in the heart of Staffordshire. Shugborough is the UK’s only complete working historic estate and a world class visitor attraction. The Estate, the ancestral home of the Earls of Lichfield, was acquired by the National Trust in 1966 and leased to Staffordshire County Council on a 99 year lease. The County Council is responsible for most aspects of the estate with the exception of the operation of the gift shop which is the responsibility of the National Trust.

The client appointed Radford Chancellor LTD to undertake a review of the catering operation at Shugborough Estate.The client was keen to have a new, fresh, innovative service offer once the current caterers’ contract runs out.

The report that was completed for Shugborough Estate comprised information on the current catering provision. This included information about culinary standards, nutritional standards, customer feedback, contractor purchasing and catering accounts. Also included in our report was TUPE information, a summary of our catering equipment review, market analysis, revenue opportunities and final recommendations.

The bulk of our report was the purchasing section, where we discovered considerable savings for Shugborough Estate.

In August 2014 Radford Chancellor LTD reviewed the catering department at the head office of The Federation of Jewish Services.

The Federation of Jewish Services is the largest Jewish communal organisation in Manchester, serving a community of approximately 35,000. It was originally established as a charity in 1867 and now provides a range of social care services including residential and nursing care.

Our review looked at areas of the catering establishment including, staffing levels, staffing skill sets, menus, costs, systems and provided general advice on the kitchen equipment. Radford Chancellor LTD also highlighted areas for improvement, provided detailed advice on how to improve the catering currently on offer.

Our review looked into all the purchasing the Federation were making and we discovered considerable saving to be made. These savings were discovered by reviewing all go the invoices for the previous 12 months so as to assess what the recommended purchasing price was in the current climate.

They have since made these changes to their purchasing and have benefited greatly from this.
