Welcome to Fairchild’s 9th AnnualInternational Chocolate Festival!

We invite you to join us as we celebrate the art and science of chocolate, one of our favorite treasures of the tropical rainforest.

We are presenting three full days of chocolate tastings, cooking demonstrations with master chocolatiers, activities for children, a ChocoWalk, informative lectures and displays, chocolate beer, information on growing your own cacao and much more. Our volunteers, staff, scientists and experts have come together to help you experience chocolate in ways you never dreamed possible.

Produced from seeds of the cacao plant (Theobroma cacao), chocolate is an ancient crop from deep in the forests of Central and South America. It was originally used to make a medicinal beverage that chocolate lovers of today would scarcely recognize. Modern chocolate is sweetened and crafted into rich and varied flavors.

Today, cacao plants are cultivated in rainforest habitats throughout the tropics. Most are grown on small farms that coexist with natural rainforests, making cacao one of the most environmentally sustainable tropical food crops. You can feel good about buying and eating chocolate. Please take this special opportunity to learn more about chocolate and the tropical world. It’s sure to be a memorable experience!

cacao growing tips

How to Grow Cacao Trees in South FloridaChocolate really does grow on trees; although not as little chocolates wrapped up in foil. Chocolate comes from the seeds of the understory tree Theobroma cacao, a tropical rainforest species that can be grown in South Florida with the proper care.

Select an area protected from wind and providing partial shade with rich, organic soil.

The soil should stay moist, but not water-logged, as too much water will cause root disease and damage the developing cacao pods of your plant.

In the absence of a rich organic soil, dig a large hole fill it with a 50/50 mix of peat moss and sand. This will allow for proper root development and improve the overall health of the plant.

Cold protection must be provided for young trees by covering the entire tree with a blanket or with the use of a large cardboard box. Even with protection, the leaves of the cacao tree will develop brown leaf edges during the winter and spring months due to cold, low humidity and winds.

A granular fertilizer like an 8-3-9 or similar formulation should be applied in June and August. The granular fertilizer should be spread lightly below the drip line. A foliar minor element spray and iron drench can be done in June and August to improve the growth of the tree.

Trees will take up to four years to begin to bear fruit.

How to MakeChocolate from ScratchMaking chocolate the old-fashioned way is a treat that the whole family can enjoy. If you have access to a cacao tree, follow these seven easy steps to chocolate nirvana.

1. Harvest: harvest mature cacao pods and scoop out the seeds. Remove the cacao beans, still covered in their sweet, fruity pulp.

2. Fermentation: soak the seeds in water for three days to ferment.

3. Drying: drain off the water and dry the seeds in the sun. The drying process takes approximately one week. During that period the color changes from reddish brown to dark brown.

4. Roasting: roast the dried cacao beans in your home oven. The temperature and time of roasting affects the flavor and color of the chocolate. Roast three times with the first roast at 425 degrees for seven minutes, then 325 degrees for eight minutes and finally 260 degrees for 10 minutes.

5. Winnowing: let the beans cool and then separate the beans from the hulls to get the nibs by first cracking the cacao bean and then blowing the husk away.

6. Grinding: place the beans in a coffee grinder and continue to pass the beans through the grinder to remove more husk and further refine the chocolate. After just a few moments the beans will be reduced to cacao paste. Keep the paste room temperature in a plastic container.

7. Enjoy: you have now created the base for any chocolate recipe!
