- NOW OPEN -COCKTAIL BAR AND RESTAURANT SILK & GRAIN

Stunning new destination cocktail bar and restaurant Silk & Grain is now setting the City’s drinking and dining

scene alight with pioneering, barrel-aged tipples and sizzling steaks from their Josper grill. Located on Cornhill,

a stone’s throw from Bank station, expect the best of British produce from the first floor restaurant and a trail

blazing drinks menu with never seen before concoctions and inventive twists on classics in the ground floor bar.

With original, stylish design touches throughout, there’s flare in the décor as much as the flavours. Enter the

ground floor bar and perch at the communal tasting table to watch the cocktail masters at work or grab a window

table on the raised seating area, complete with church pew-style seating and striking light fittings made from

taps. Alternatively, head straight upstairs to the mezzanine restaurant, taking in the quirky drinking water tap

disguised as a papier-mâché cow’s head made out of money and the life-sized copper coin deer watching over

the entrance and diners.

THE COCKTAILSShaking up convention as well as drinks, Silk & Grain has created a ground-breaking menu of creative aged

concoctions that will have cocktail connoisseurs fighting for a place at the bar.

Classics and new creations are given extra depth and flavour by ageing spirits and cocktails in dierent materials

including oak barrels, metal, glass and even leather. In some cases flavours are added, in others flavours are

mellowed out as components of the drink react together. While the results are never the same, they are always

exciting - a silky smooth, sophisticated selection of matured drinks with added complexity.

Silk & Grain’s signature cocktails are a true UK first, taking cocktail favourites, ageing and conditioning them,

before adding extra ingredients to create a cocktail within a cocktail. Must-tries include Gardening Leave – a fun

and innovative Barrel Aged ‘Elle’ Presidente and leather-infused whisky shaken up with pineapple, coconut and

grapefruit; the Queen of Cornhill which uses tequila and Silk & Grain’s very own leather-infusion before adding

mint, absinthe and bitters and being crowned with bubbly; and the Carney’s Brew – a Whisky Sour given a ginger

kick with house-made ginger syrup, a lick of lemon and a float of Innis & Gunn oak-aged beer.

For the classic palate, the Bottle Conditioned Cosmo uses the usual combination of vodka, Cointreau with fresh

lime and cranberry juice, but conditioned in a glass bottle for over a month, reviving this 1985 drink and giving

it a 21st century twist. For a serious Martini that vodka enthusiasts will love, the Metal Martini oers a drink with

added length and complexity following some hard time in the steel while the Barrel Aged Negroni is aged in a

heavily charred barrel for the perfect trilogy of gin, sweet vermouth and Campari. A New York classic is given a

dose of Silk & Grain’s leather-infused single malt for a hint of smokiness and a curious leathery finish the boys

will love.

THE FOOD

Page 3: PRESS PACK - RochecommBABY BREW The baby brother to our Carney’s Brew, this frothy non-alcoholic version tastes intriguingly like a fruit beer. Knock this one back and stay sharp.

If the thirst for cocktails leaves you feeling peckish the ground floor bar serves a very British grazing menu with

delicious snacks, including Clonakilty black pudding ‘scotched’ quail eggs; crispy pig’s ears; beer-braised bunny

‘sausage’ rolls; bourbon-glazed pork belly bites and a selection of British cheeses and charcuterie sourced from

Trealy Farm and Neal’s Yard.

For a more formal dining aair, head to the stylish first floor restaurant where you can indulge in the full three-

courses made from the finest seasonal British ingredients. To start, choose from the likes of Isle of Man scallops,

English garden pea purée and smoked Trealy Farm bacon; soft-boiled duck egg, asparagus, parsley butter and

Berkswell cheese; or dry-aged Monmouthshire beer carpaccio, horseradish crème fraîche, pickled onions and

capers.

For main course, Silk & Grain specialises in dry-aged steak cuts, matured on the bone for as long as 35 days using

time-honoured methods and then cooked in a Josper grill, keeping the meat succulent and flavoursome. Opt for

your favourite cut as an individual portion or order a steak to share, then simply add your choice of homemade

sauces (our favourite - mushroom and merlot) or butters with stand out options such as leather-aged Scotch

whisky or chilli and lime. Other British-inspired mains include Suolk cyder-soaked, slow roasted pork belly; and

heritage tomato, mint and quinoa salad with whipped goat’s cheese and beetroot pickled eggs.

Finish o with handmade desserts including gooey chocolate brownie with pistachio ice cream and banoee

pie sundae with crumbled toee macaroons. Alternatively, for the perfect excuse to try another, opt for an after

dinner cocktail such Silk & Grain’s Panky Club – using a naughty and delicious barrel-aged, gin-based Hanky-

Panky and adding raspberry, lemon and egg white to create a fruity and fluy dream – or perhaps a rich and silky

smooth digestive the Barrel Aged Manhattan.

Taking the traditional barrel-ageing process to brand-new heights and adding a truly original set of creations, Silk

& Grain brings serious cocktails to the square mile. Add to this a stylish backdrop and the finest, seasonal British

produce and drinking in the City just got a whole lot more interesting.
