40ml Oil, Olive
50g kNOrr Professional garlic Puree
200g Bread, brioche, crumbs
500g Speck, thinly sliced
400g Cheese, grana Padana
1kg Cos, baby
300g trout, hot smoked
20 Eggs, hard boiled
100ml HellMaNN’S real Mayonnaise
20ml water
300ml HellMaNN’S Caesar Dressing
methOD
1. Mix oil and kNOrr Professional garlic Puree together
and drizzle over brioche crumbs. Pan fry until golden brown.
2. lightly deep fry or pan fry speck until crispy, drain. Peel
cheese into slices. wash cos lettuce, cut into large wedges.
3. Place the trout into a preheated oven (150 °C) and allow to dry out
for about half an hour, remove and place into a robo coupe, blend
until it flosses, remove and set aside for use.
4. Hard boil eggs, scoop out yolks, reserve whites. Press yolks
through a sieve and stir through HellMaNN’S real Mayonnaise,
add water to adjust consistency. with reserved whites, slice into thin
strips and deep fry until crispy.
5. to serve, construct the salad on a plate, add the cos, pancetta,
grana, crispy egg whites and pipe egg and mayonnaise mixture
around the plate. drizzle with HellMaNN’S Caesar Dressing
and sprinkle over the brioche crumbs and trout floss.
Tip: Deep fried egg whites can be placed under
the heat light during service to remain crispy.

10 x 140g Chicken breast schnitzel,
Panko crumbed
500g lettuce, mixed salad leaves
250g Pineapple
100g Onions, red, diced
300g kNOrr Patak’s Sweet Mango Chutney
400g Bacon
10 x Bread, burger buns
300g HellMaNN’S real Mayonnaise
1kg Potato, wedges
methOD
1. deep fry schnitzels until golden. Remove from oil and keep hot.
2. wash and drain the lettuce.
3. Peel and cut the pineapple in large wedges and lightly cook on a
char grill. Remove and dice. Combine with the diced red onion and
kNOrr Patak’s Sweet Mango Chutney.
4. grill the bacon until golden and toast the burger buns. Remove from
heat and keep hot.
5. assemble the burger in the following order – Bottom bun,
HellMaNN’S real Mayonnaise, lettuce, schnitzel, bacon,
pineapple relish and top bun. Serve with wedges.
Tip: Panko Crumbs are a Japanese bread crumb and can be found in most supermarkets or Asian stores.

800g avocado, diced
400g Onion, red, julienne
300g HellMaNN’S ranch Dressing
600g Prawns, peeled
5 x Bread, baguette, halved
100g watercress
methOD
1. Roughly dice avocado and julienne onion; stir through the
HellMaNN’S ranch Dressing.
2. Peel the prawns and lightly drizzle with oil, char grill or BBQ until
golden and cooked.
3. to serve, halve each baguette by slicing lengthways add prawns,
avocado salad and watercress.
