Cheese 101The world of artisan cheese is a lot less intimidating with this collection of varied styles and flavors to introduce you to the basics of cheese. Alpine-style Güntensberg is meaty and savory; Podda Classico is a sweet and nutty Sardinian cheese made from cow and sheep’s milk. Cremont is another mixed-milk beauty, crafted in Vermont, and classic Roquefort, sweet with a slightly smoky finish, rounds out the selection. Presented with pickled mustard seeds, bright pepper relish, small-batch preserves and single source honey, all the components to a simple and refined cheese plate are packed into this collection.$89.99 add wine, starting at $20 | wooden gift box available for additional fee

How to Build the Perfect Cheese Plate

As a general rule, arrange your plates from mild to stronger flavors to get the most out of your tasting experience.

Don’t forget the accompaniments! Spiced nuts, dried fruits, preserves, mustard, honey, charcuterie, vinegar, pickles and so much more can make your cheese plate shine by cutting through richness or highlighting flavor profiles.

Always add wine. At Pastoral we firmly believe that the whole package is greater than the sum of its parts. Adding interesting wine pairings to your cheese plate is a wonderful way to elevate the experience for you and your guests.

When you add wine to any gift in this catalog, you can be sure that our resident wine experts have chosen a bottle that pairs perfectly with the collection.

For specific pairings, visit us online at www.pastoralartisan.com where you will find wine and accompaniment pairing suggestions for all our cheeses!

Create the perfect pair! Our Wine 101 collection (p. 10) contains 4 bottle of wine specifically chosen to pair with our Cheese 101 collection, creating the ultimate lesson in cheese & wine pairing.

Select the theme of your plate

Assemble the plate

When in doubt, let us help!

When entertaining with cheese, the most important thing to remember is to keep it simple and trust your instincts. The best cheese plates are focused and highlight three to five cheeses that complement or contrast each other.

One option for building a cheese plate is to focus on textures by selecting cheeses from each category such as: a soft-ripened cheese, followed by something firmer like cheddar or pecorino and finally a fudgy cheese, like a decadent blue.

Another approach is exploring the wide variety of flavors and aromas represented by cheese. Highlight a mild, nutty sheep’s milk cheese, followed by a stinky washed rind, and finally a spicy, sweet Alpine for a beautiful progression of flavors.

Sampling cheese by milk type can also make for a perfect plate. For example, showcase a variety of cow’s milk cheeses with different ages or pasteurization, or explore the differences between types of milk be preparing a plate with cow, sheep and goat’s milk cheeses.

New World wines come from places like New Zealand, USA and South America where wines tend to be more fruit-centric and have higher alcohol levels. This collection offers a selection of each plus a third that blurs the lines between old and new. $69.99 includes 3 bottles of wine
