WALTER SCOTT’S

Christina Wilson and Gordon Ramsay

Jim Carrey in 2011

Q: How many gallons of

slime have been used

over the years at the Kids’

Choice Awards? —Loni

Drazin, Elon, N.C.

A: More than 230,000 gal-lons of green goo have been poured over celebrities and kids since Nickelodeon hosted its fi rst awards show, in 1987. Tom Cruise, Jim Carrey, and Sandra Bullock are just a few of the stars who’ve been hit with the edible mixture, which consists of oatmeal, water, green dye, and “secret ingredients.” Tune in to this year’s show on March 23 to see the next batch of victims, and go to Parade

WALTER SCOTT ASKS…

EVA LONGORIAThe actress, 38, is executive producer of the new real-ity dating series Ready for Love (NBC, March 31).

What separates this series from other dating shows?

We use matchmakers to fi nd the person that’s going to be the best match for our three guys. I interviewed hundreds of guys, and I handpicked these three myself. They’re some of my best friends now, and I would absolutely introduce them to my sister or my friends. What qualities do you look for in a date? I love humor and intelligence. Patience is also a big one in a relation-ship, and knowing that people are always growing. I’ve learned you either grow together or you grow apart. It’s been almost a year since Desperate Housewives

went off the air. Are you still in touch with your

costars? Defi nitely! I actually just hung up the phone with Felicity Huffman. I miss the cast, and I miss the character of Gabby. That show was life-changing, so I’ll always hold those memories very dear to my heart. You now own two restaurants, Beso in Los Angeles

and SHe in Las Vegas. Are you a good cook? Oh, yeah. I love making Mexican food. My most requested dish is chicken tortilla soup. Everybody loves it! Send questions to [email protected] or P.O. Box 5001,

Grand Central Station, New York, N.Y. 10163-5001.

As for the secret to the program’s longevity, Brady says: “The one thing that never changes is people want money!”

Q: Did last year’s Hell’s

Kitchen winner actually become head chef at one of Gordon Ramsay’s restau-rants? —Alex R., Eagan, Minn.

A: Yes. Christina Wilson, who won a stint as head chef of Gordon Ramsay Steak at Paris Las Vegas, has been at her new post since

September. “After surviving Hell’s Kitchen, there’s noth-ing I don’t feel prepared for!” says Wilson, 34. The prize job for season 11 of the Fox series (Tuesdays) is head chef at Gordon Ramsay Pub and Grill at Caesar’s Palace.

Q: Who does designer Zac Posen think is the best-dressed celebrity? —Caryn B.,

San Mateo, Calif.

A: Posen has worked with celebs from Gwyneth Paltrow to Michelle Obama,

but it’s actress Cate Blanchett who tops his list of Hollywood’s

best-dressed. “She exudes elegance and glamour,” says the fashion designer, 32. Posen, the

newest judge on Project Runway (Lifetime, Thursdays), reveals the

Stuffed French ToastFrom THE COTTAGE in La Jolla, Calif.

There is no sunnier way to start the day than with breakfast on the patio of the Cottage, a side-street bungalow café where meals exude the laid-back joie de vivre of a village founded by California’s surfi ng pioneers. Laura Wolfe, who runs the Cottage with her husband, John, calls stuffed French toast “the dish I most look forward to eating in the morning.” Try it once and you’ll understand why.TRY THIS AT HOME: Mix together 1¼ cup sliced fresh strawberries, ½ cup sugar, 1 tsp brandy, and ¼ cup grated orange peel. Let compote sit 30 minutes to allow strawberries to soften. Lightly beat 4 eggs in a medium bowl. Add 2 cups cream, 1 Tbsp brandy, 1 Tbsp brown sugar, and 1 tsp vanilla and beat well. Soak 12 pieces thickly sliced brioche or egg bread in egg mixture. Melt 2 Tbsp butter on a griddle over medium heat and cook each piece of bread for 4 minutes per side. As toast comes off griddle, immediately spread 1 tsp mascarpone cheese and 2 Tbsp compote in middle and fold in half so cheese melts and straw-berries warm. Sprinkle with confectioners’ sugar and drizzle with maple syrup. Serves 6.

Whisk together 6 large eggs and ¼ cup milk. Add 1 cup bite-size pieces of unsalted tortilla chips and pour mixture into skillet with onion. Cook, stirring, until eggs begin to set, about 1 minute. Add ½ cup diced tomatoes and cook, stirring, until eggs are set. Remove from skillet and immediately top with ²∕³ cup grated cheese (preferably Monterey Jack or cheddar). Corned Beef HashFrom MCBOB’S in Milwaukee

Although McBob’s is best known for its fi ne Friday fi sh fry, the corner tavern is also a favorite breakfast spot thanks to its superb corned beef hash. Cooked long and slow, the meat is so tender it starts to fall apart when you slice it. For hash, it’s torn into a merry jumble of slices, shreds, and chunks. This recipe calls for just enough potato to create a starchy balance and includes caramelized onion for a sweet note.

TRY THIS AT HOME: In a large heavy skillet over medium heat, sauté ½ cup chopped red onion in 1 Tbsp cooking oil until onion begins to soften. Add ½ lb red potatoes, boiled (but not mushy) and cubed. Fry until edges begin to crisp. Add 1 lb cooked corned beef, thickly sliced against the grain and broken into pieces. Toss hash together over medium heat for 2 minutes. Remove to a plate, sprinkle with paprika, and garnish with ¼ cup chopped parsley. Serves 4.

At the dutch kitchen, a family-owned vintage diner in the heart of coal

country, you’ll always fi nd squares of shoofl y cake set out on the countertop. Baked with the same ingredients as Penn-sylvania’s famous shoofl y pie, the cake version lacks the messy, gooey fi lling, which

In a large bowl, work together 4 cups all-purpose fl our, 1 cup sugar, 1 cup brown sugar, and 1 cup shorten-ing to form crumbs. Reserve 1 cup of the mixture. In a separate bowl, mix 1 cup molasses, 2 cups hot water, and 2 tsp baking soda. Combine wet and dry mixtures. Pour into prepared baking pan. Sprinkle reserved crumbs on top. Bake 10 minutes. Reduce heat to 350°F and bake 30 to 40 minutes more or until a sharp knife inserted in center comes out clean. Serves 12.

Egg, bacon, and cheese

are always a winning combo, but ’Wichcraft takes it to a

whole other level. Watch guests’ faces light up when they bite into a breakfast sandwich made with superlative bacon, fi ne Italian cheese, good bread, and curly frisée. TRY THIS AT HOME: Slice a ciabatta or other crusty, light roll in half and spread 1 oz Gorgonzola on top piece. Place 3 strips of bacon on bottom. Heat both halves in a very hot oven (or toaster oven) until cheese softens. Fry 2 eggs in butter to over medium and

Cheese Grits

From

HOMINY GRILL

in Charleston, S.C.

The hominy grill, a

happy café housed in a for mer barbershop, is all

about Dixie food traditions—grits foremost among them. Often grits are watery and boring, but here the dish is served rich and cheesy. Chef-owner Robert Stehling says the key is to start with great grits: He buys stone-ground fl int corn grits from Boonville Mill (boonville mill.com), which taste just like the kind his family ate when he was a kid. “They have a warm fl avor, like the summer sun,” he says.TRY THIS AT HOME: In a medium saucepan over high heat, bring 4½ cups water to a boil. Whisk in 1 cup stone-ground grits and 1 tsp salt. Reduce heat to low and cook, stirring occa-sionally, until grits thicken, 35 to 40 minutes. Remove from heat and add ¾ cup grated sharp cheddar cheese, ¼ cup grated Parmesan cheese, 3 Tbsp butter, ½ tsp freshly ground black pepper, and ½ tsp Tabasco sauce. Serves 6.

Chef mitch

Omer got the idea for this

porridge from the journals of 19th-century fur trad-ers, who described

a mixture of rice, nuts, and berries eaten by the local Cree. Omer adds heavy cream for a dose of luxury, and now the dish is a popular selection at

his edgy, anything-goes eatery, where the slogan is “damn

good food.” TRY THIS AT HOME: In a heavy

nonstick or enameled cast-iron saucepan,

mix 4 cups cooked wild rice; ½ cup roasted hazel-nuts, cracked; 1 cup dried blueberries; ¼ cup sweet-ened dried cranberries (Craisins); and ¼ cup pure maple syrup. Stir constantly over medium heat for about 3 minutes. Add 1 cup heavy cream and continue to stir until heated through, about 2 minutes. Serves 4.

Potato LatkesFrom MANNY’S DELICATESSEN in Chicago

You are never alone at Manny’s. Seating at this boisterous deli is communal, and regulars (businesspeople, cops, politicians) hobnob loudly with one another and with Ken Raskin, Manny’s son, who works the dining room. Ken says the secret to great latkes is to make them thick enough so they’re crunchy on the outside while packed with plenty of creamy potato shreds on the inside. Remember: Crispness requires the oil to be very hot—just this side of smoking.

TRY THIS AT HOME: Peel ¾ lb baking potatoes (russets) and grate medium-coarse. (Yield should be about 2 cups.) Combine potatoes and ¼ cup grated onion in a colander, pressing out as much moisture as possible. Stir potato mixture with 2 large eggs, lightly beaten; 1 tsp salt; 8 tsp freshly ground black pepper; 1 Tbsp all-purpose fl our; and 8 tsp baking powder. Let stand for 5 minutes. In a heavy skillet, melt ¼ cup butter over medium-high and add ½ cup vegetable oil or more—enough to total about a ¼-inch layer of fat. Drop potato mixture into skillet in 2-Tbsp portions, using a wooden spoon to slightly fl atten each one. Don’t make them too thin, and don’t let them touch. Fry for about 2 minutes or until golden brown. Flip and fry 1 minute more. Use a slotted spatula to remove from oil; drain on paper towels. Serves 4.

After I get over a cold or the

one, will I catch the same ill-

ness again? —Al Lasso, Las Vegas

First, you can’t get the same cold or fl u virus twice, at least not anytime soon and probably never. During your recovery, you develop antibodies that protect you the next time you run into those viruses.

And second, you can’t re-catch a disease from your toothbrush anyway. If you could, you never would have gotten well; your toothbrush would have kept you sick.

Bacterial infections are dif-ferent; you can get them more than once. But not from your toothbrush. The same evidence applies. Antibiotics or not, if your toothbrush could reinfect you, you’d have to use a new one every time you brushed!

Log On, Save Your Life?Whether it’s new research, the best doctors, or simply support, social networks can lend a helping hand

When Clarissa State’s 4-year-old daughter, Bella, was diagnosed

with Idiopathic Pulmonary Hemo siderosis in 2008, her pedia-trician had to look up the spelling. The disease, which causes bleeding in the lungs, affects only about 200 people in the U.S. “We felt so alone,” says State.

Then she stumbled upon MadisonsFoundation.org, a site for parents of children with rare diseases, which instantly matched her with 10 other families battling IPH. “I couldn’t believe there were other people who shared our exact struggles,” she says.

One study has found that one in fi ve Internet users are searching

for others with similar medical conditions, and with

good reason: Online health communities can offer patients both support and information about new treatments. Here are a few that may help you. —Colleen

Oakley

1 IHadCancer.com

For: Cancer survivors,

patients, and caregivers. In this growing community—more than 8,000 people touched by cancer—users share stories, triumphs, and treatment recommendations. A search engine helps members fi lter profi les by age, gender, year of diagnosis, type of diagnosis, and status (fi ghter, survivor, or supporter).

2MyAutismTeam.com

For: Parents of children

with autism. The fl agship social network site of MyHealthTeams, MyAutismTeam.com helps users connect with similar parents and add them to

their “team” (much like following someone

on Twitter). Members can also search among more than 30,000 autism specialists and autism-friendly businesses in their local community—all recommended by other members.

3DiabetesDaily.com

For: People with type 1

and type 2 diabetes, as well

as their friends and family. What began as a blog by Elizabeth Zabell about her daily challenges living with type 1 diabetes quickly turned into an online community where readers can share their own stories with more than 93,000 members and fi nd recipes, health news, and more.

Page 13: Parade 03-17

4 FertileThoughts.com

For: Anyone having

trouble conceiving. With more than 4.5 million posts, the self-proclaimed “Facebook of Infertility” connects people who are dealing with similar diagnoses and emotional struggles. Patient-care coordinators help users fi nd fertility specialists who fi t their needs.

5 Madisons

Foundation.org

For: Parents of kids

with rare and life-threatening

diseases. In the past six years, nearly 30,000 parents of children with rare illnesses around the world have found each other through MadisonsFoundation.org. Users are connected with other moms and dads whose children have the same condition and can search a database of info on 550 rare diseases.

6PsychCentral.com

For: Anyone who is

struggling with a mental

health issue. Founded by psychologist John Grohol in 1995, this network now includes more than 180 targeted support groups for everything from addictions to ADHD to depression to bipolar disorder.

7 Caring.com

For: Adults caring for

aging parents, spouses,

or other loved ones with

debilitating diseases. In 2006, when cofounder Andy Cohen was caring for his mom (who had lung cancer), he couldn’t fi nd information online on how to hire a nurse, navigate Medicare, or answer any of the hundreds of other questions he had. Now, nearly 2 million people visit his website each month for support and local senior care referrals.

Views By Connie Schultz

After my parents died, Charlie came to live with me. He has a new job this year. Several times a week, I lift his hat to toss in a note about something good that has hap-pened in our lives. On New Year’s Eve, we’ll read all the notes of small wonders. In the meantime, I look at Charlie’s smile and think of that long-ago beginning for two kids in love.

4 Two pages of quotations,

tied with a bow

On our fi rst date, Sherrod Brown presented me with this. If you don’t think that’s fl irting, then you’ve never dated a writer.

The quotations gave me glimpses into the man I’d soon marry. I broke out in goose bumps when I got to the same George Bernard Shaw quote that was taped to my computer: “I want to be thoroughly used up when I die.”

That’s our plan.

5 Two photo ID badges

One badge is Mom’s, issuedon her fi rst day as a nurse’s

aide in 1974. She took the job so that I could go to college. She was 36 and anxious abouther new life as a working mother. Working for pay, that is.

The second badge is mine, issued the day I started as a reporter at the Plain Dealer in Cleveland. I, too, was 36 and anxious about my new life as a single mom with a full-time job.

“We do what we have to do,” my mother said. “Just like me, you’ll be fi ne.”

Just like her, I was.

greatest disappointments cannot break us if we lead with love.

3Charlie the cookie jar

This face-shaped jar was a wedding gift to my parents

in 1957. Mom was 19; Dad, 20. Mom said the jar reminded her of Dad because of its red hair. I named it Charlie, Dad’s nickname on the softball fi eld.

2Polaroid of my son

In 1982, Andy posed for this picture. “To keep with

you all the time,” he said. “So you don’t forget what I look like.” As if I could. His father had introduced us a few weeks earlier, and already he had a two-fi sted hold on my heart.

Andy’s 38 now, married, and the father of my fi rst grandson. Call Andy anything other than my son and you’re picking a fi ght. He will always be my boy.

This photo reminds me that families are cobbled together in all sorts of ways, and life’s

First, i want to

thank the local fi refi ghters who stood in my hallway

and didn’t say, “Ma’am, no one over the age of 4 thinks a carbon monoxide detector chirps like a chickadee when a family’s life is in danger.”

Instead, they showed me where to insert the fresh battery and off they went.

Later that day, I started to wonder what I’d save if I had to fl ee the house. Ever ask yourself this: Assuming all sentient beings are safe, what things would you grab on your way out?

Here’s my list, in no order of importance.

1The Statue of Liberty

Daughter Cait made this out of papier-mâché when she

was in second grade. Lady Liberty is sitting down and slumped to the side like a sack of quinoa. When I asked Cait why, she sighed. “She’s tired, Mommy. America is hard work.”

It should be noted that, 18 years later, Lady Liberty’s crepe paper torch still burns brightly.
