CASHIERSLocated at 3,486 feet above sea level,

Cashiers is said to be named for a lost horse— an acknowledgement of the area’s denseforests, replete with laurel and rhododendronthickets. The town was hailed as a cool respitefrom the hot, humid shipping towns furthersouth for mid-nineteenth century aristocrats.

One such aristocratic family was theHamptons. Wade Hampton III was the best-known member of the family due to his serv-ice as a general in the Confederate Army andactive political career. In 1890, Dr. William S.Halstead, who married into the Hampton fam-ily, bought the Hampton home, renaming it

High Hampton after his ancestral home HighHalstead in England. The High HamptonCountry Club later was constructed on thesame property. Now, Cashiers is home to sev-eral similar resorts and golf courses but alsoboasts great opportunities for outdoor recre-ation such as hiking and mountain climbing.

Also of note are some of the smaller com-munities one passes traveling south on N.C.107 from the county seat of Sylva to Cashierssuch as East LaPorte. Located alongside theTuckasegee River past Cullowhee, EastLaPorte was once the site of an Indian tradingpost established by the French Huguenots asthe eastern entrance to Indian territory. InFrench, East LaPorte means “eastern door.”

CULLOWHEECullowhee, which means “white lily” in

Cherokee, is an unincorporated townshipcomprised mostly of Western CarolinaUniversity and the surrounding businessesand residences designed to service faculty andstudent needs.

Professor Robert Lee Madison foundedWestern Carolina University — originallychartered as Cullowhee High School — inAugust of 1889. Beginning about 1912, the sta-tus of the school was gradually raised. The uni-versity went through several name changes asits course offerings increased and it wasn’tuntil 1967, when the school was designated aregional university by the North CarolinaGeneral Assembly, that the name WesternCarolina University was finally settled upon.

Near Cullowhee is the Forest Hills town-ship, named for the 1878-1880 postmaster’shome, Forest Hill. Today, the township is hometo a number of university faculty members.

DILLSBOROToday a village of shops, crafters

and family restaurants, Dillsboro hasalways been a center of railway activity.During the 1880s when the WesternNorth Carolina Railroad was built, thevillage bore a variety of names —Depot, New Webster, or WebsterStation. In 1882, the Tunnel Post Office(named for the railroad’s CoweeTunnel) was established with WilliamAllen Dills as postmaster. It was therailroad’s developer, A.B. Andrews —for whom the town of Andrews inCherokee County is named — whosuggested the town adopt the name of itspostmaster, becoming Dillsboro. Dills wasresponsible for building the Riverwood Shops,which overlook the Tuckasegee River, andwhat later became known as the C.J. HarrisHouse. Harris is the namesake of HarrisRegional Hospital in Sylva. Dills’ own homestood next to the Mt. Beulah Hotel — con-structed in 1884 and today known as theJarrett House. By 1888, Dillsboro had becomethe most important town along the railroad interms of industry, with two sawmills, two clay

mines, two livery stables, six general stores, ashoemaker and several wood yards.

GLENVILLEThe Glenville community is centered on a

large man-made lake with 26 miles of shore-line at 3,500 feet above sea level. The lake isthe highest of its size east of the MississippiRiver and is a favorite place for aquatic recre-ation. The area originally was known as the

Hamburg Township, settled in 1827. Inthe late 1880s the area was thrivingwith industries including forestry, tan-ning and mining. It was in 1891 thatthe area was renamed Glenville. Thelake itself was not created until 1940-41, when Nantahala Power and LightCompany — owned by ALCOA —constructed a dam on the TuckasegeeRiver. The hydroelectric dam providedmore electricity to help make alu-minum for the war effort. The creationof the lake flooded Glenville’s schools,homes, businesses and farmlands.Today, the community is settled alongthe shores with several second andvacation homes, boating businessesand small shops.

SYLVASylva is Jackson County’s retail and profes-

sional center where day-to-day services meetunique history. The town’s development rosewith the construction of the Western NorthCarolina Railroad in the 1880s. Its name cameabout at the suggestion of Mae Hampton,daughter of E.R. Hampton, who is credited asbeing the founder of Sylva. E.R. Hampton hadmarried into the Cannon family, which owned

a sawmill where William D. Sylva, an itinerantDane, had helped saw the logs that built theHampton’s home.

The railroad’s route through Sylva made ita prime location for the county seat — origi-nally located in Webster — but the issue ofrelocation resulted in years of bitter disputebetween the two town’s representatives. Thestate legislature settled the dispute, givingSylva permission to construct a courthouse solong as the town paid the moving costs to relo-cate. On Feb. 28, 1914, the new Sylva court-house, located on a hill overlooking MainStreet, opened. Construction costs totaled$30,000. Today, the courthouse is reputed tobe the most photographed in the country.

WEBSTERThe town of Webster is a quiet residential

community situated on top of a hill overlookingthe Tuckasegee River. The town was created in themid-1800s with the purchase of an 18-acre tractspecifically designated to become the county seat.Within a few years of its settlement, a courthousewas erected. The town was incorporated in 1859,but over the next 20 years the town governmentbecame inactive — the first of several rises andfalls in the town’s municipal development, andperhaps an early indicator of the town’s future.The story goes that during the construction ofthe Western North Carolina Railroad, county res-idents fully expected the railroad to run throughWebster. However, the county’s state governmentrepresentative — said to be fond of his drink —was taken aside at a crucial moment in the votingprocess and plied with liquor by an individualdesiring a more direct route from Sylva toDillsboro. The location of the railroad later was aprimary factor in the movement to relocate thecounty seat from Webster to Sylva.

WHITTIERWhittier, Jackson County’s closest commu-

nity to Cherokee, was another railroad town.Upon calling the area’s residents together, ClarkWhittier proposed the formal establishment ofa town: “It is my wish and I so move that westart operations here upon the principals andWord of God, including all morality, especiallytemperance and prohibition of the strongestform.” The town was incorporated in 1907 andby 1913 boasted a dry store, hotel, physicianand surgeon, plus sawmills, lumber yards, threechurches and a school. However, with the GreatDepression the town lost much of its industryas the demand for lumber declined. By 1993Whittier’s charter was repealed and today thecommunity is mostly residential.

T hey are dubbed by some in the communityas the “three amigos:” a new chancellor atWestern Carolina University, David Belcher;

a new president at Southwestern CommunityCollege, Donald Tomas; and a new superintendentof schools for Jackson County, Mike Murray.

Each started their respective positions July 1,2011. Each promises a new era of leadership thatconnects their respective institution’s educationalefforts to the overall good of the community. Eachseem comfortable in, and energetic about, theirroles as institutional and community leaders.

“Openness, honesty and transparency,”Tomas said during his introductory remarks at acommunity meeting last summer. SCC, whichserves residents of Jackson, Macon and Swaincounties and the Cherokee Indian Reservation, ispiggybacking strategic planning efforts on thoseof neighboring WCU.

Tomas said the three educational leaders havebeen meeting and discussing educational andcommunity issues.

“This is an extremely exciting and uniqueopportunity,” he said.

Right after Belcher took the helm at WesternCarolina University, he and other WCU leadersheld a series of seven community meetings in theregion to hear what residents had to say about theschool’s future. During those meetings, manycalled on WCU and SCC to help bolster a saggingeconomy, but to do so while protecting the

region’s natural resources and great beauty. Belcher described himself as a consensus

builder, a leader who makes decisions only afterfirst seeking the wisdom and opinions of thoseworking with him.

“My M.O. is a consultative approach,” saidBelcher, adding that he’s not shy, however, about

making unpopular decisions independently ifthat’s what is needed in a given situation.

Murray, who is from Madison County andgot his graduate degrees from Western CarolinaUniversity, said he also likes to mix it up with thepeople who will be affected by his decisions.

“I really believe I’m in the right place, at theright time, with the rightgroup of people — rolling upmy sleeves to work side by sidewith the educators, parentsand people in the communityto make good things happenfor the children of JacksonCounty,” Murray said.

Vance Davidson, an SCCtrustee, said he is optimistic

that the new educational leaders in JacksonCounty will build bridges that will help thecommunity.

“We are a lot better together than we areapart,” Davidson said. “We have not enjoyed thebest university, town, community relationships— we need to change that.”

J ackson County’s new public library — attached to the scenic his-toric courthouse atop a hill overlooking Sylva— opened in 2011to rave reviews.“I love this library,” said Karen Wall, a patron who was working

on her laptop in the reference section. She was seated in a comfort-able chair at a desk near huge windows affording a bird’s eye view ofthe Plott-Balsams mountain range. “It’s a joy for me to be able tocome here.”

The new library cost $8 million and included renovations tothe historic courthouse to build an auditorium and communitymeeting space. The Jackson County Friends of the Library raised$1.8 million to outfit and furnish the new library.

Prior to the library’s opening, many were concerned that thenew space and offerings would not attract new patrons. However,the opposite has happened. The number of people applying forlibrary cards in Jackson County has doubled since the new libraryopened; use of circulation materials has increased by 38 percent;and, with 28 public computers, computer use is up 154 percent.

A counter on the front door of the library logs visits. JacksonCounty Head Librarian Dottie Brunette said that it isn’t just peopleliving in Jackson County driving the higher numbers, however,though they obviously are beating a track into the library.

“Daily, we get people in just to look at it,” Brunette said.To top it off, the library won the Outstanding Facility Award for

new libraries larger than 26,000 square feet presented by the N.C.Public Libraries Directors Association.

Former County Commissioner William Shelton, who played acritical role in helping keep the library in Sylva’s downtown area andin approving the needed funding, described the new library com-plex as a symbol of something wonderful, a place where “our histo-ry, our culture and our quest for knowledge” merge.

Harrah’s expansion to be aboon for Jackson economy

The nearly complete $633 million expansion atHarrah’s Cherokee Casino is good news for JacksonCounty and all of Western North Carolina.

When totally complete, the expansion will add800 new jobs to the casino’s existing labor force of2,100. About 795 Jackson County residents have jobsat Harrah’s Cherokee Casino right now, more than anyother county in the region. Nearly 700 Swain Countyresidents work there while 308 casino workers callHaywood County home. And these numbers areprior to the hiring to fill the additional 800 jobs.

Harrah’s payroll accounts for 8 percent of allwages and salaries in Jackson and Swain counties. It’sone of Western North Carolina’s largest employers.

The expansion added a third hotel tower — giv-ing the complex 1,100 rooms — more gaming space,a spa, and several new restaurants and retail outlets.Harrah’s officials say the idea is to turn the complexinto a resort destination rather than just a casino.

In the most recent numbers available, it is esti-mated that the casino attracts up to 3.5 million guestsa year. It is the state’s largest tourist attraction.

Future looks promising atBalsam Mountain Preserve

Over the past 10 years, Balsam MountainPreserve has established itself as one of WesternNorth Carolina’s premier private club communities. MedWest Health System opened a newUrgent Care Center in Sylva in August 2011.Located at the Walmart Plaza, MedWestUrgent Care Center-Sylva provides walk-inexaminations six days a week to patients withnon-emergency illnesses or injuries. The newCenter has eight patient exam rooms, X-rayand full lab services in 3,770 square feet. TheUrgent Care Center-Sylva staff will includetwo physicians, two physician assistants ornurse practitioners, two medical assistants,two registered nurses, and four radiology andlab technicians.

The new Center is the only Urgent Care inJackson County. Garza’s ongoing effortshonored by Duke Energy

Amy Ammons Garza was the recipient of the2012 Duke Citizenship & Service Award for her con-trition’s to Jackson County.

The award is given annually by Duke Energy tohonor a citizen for their volunteer leadership and is atribute to individuals who make a difference in theircommunities by using their time, talents and compas-sion to positively impact the lives of others. Garzawas nominated for her outstanding community serv-ice by Catch the Spirit of the Appalachia Board mem-ber Norma Clayton.

Garza is a Jackson County native who foundedCatch the Spirit of Appalachia in 1989 with her sister.CSA is a nonprofit dedicated to honoring the heritageof mountain people. Festivals and events she hashelped establish or worked closely with includeGreening Up the Mountains; the Patchwork Folk andFabric Festival; and Colorfest, Art of the Blue Ridge.She also founded the Heritage Alive Mountain YouthTalent Contest.

New gym/fine arts centerapproved by commissioners

A new fine arts center and gym are in the futurefor Smoky Mountain High School.

Jackson County leaders in December OK’d aplan to build a new 754-seat fine arts center and a1,500-seat gym. The theater would include all theamenities for concerts and plays including anorchestra pit, full stage rigging, shop and rehearsalspace for the school chorus and band.

Initial plans are for a 41,000-square–foot gymna-sium and a 15,000-square-foot arts center/theater.

The project is expected to cost $10.5 millionand will be paid for with state sales tax revenuesdesignated for public school capital projects.

Supporters of the project, including CountyCommissioner Joe Cowan who was formerlysuperintendent of schools and a principal, said thearts center is long overdue.

“I think it’s time to acknowledge the importanceof the arts as well as athletics,” said Cowan.

Jackson County School Board member Ali Laird-Large, said she was “ecstatic” that the project is mov-ing forward. “We’ve been waiting a long time for this.”

The architect is expected to have drawingsready to go out to bid by summer 2012.

Lulu’s Café on Main Street in Sylva isknown for its eclectic, ethnic foodand a consistently warm atmos-phere that brings back tourists andlocals alike year after year.

T wice featured in Southern Living as their “favoriterestaurant in the region” and voted a “2010 best ofWNC” restaurant by Mountain Xpress readers,

Lulu’s popularity is no secret. Customer favorites includethe pasta salad a la greque, tropical pork tenderloin, andgluten-free desserts. Lulu’s also caters to vegans and vege-tarians, who reportedly are fans of the eatery’s Asian-fusion flavors.

Founded in 1989 by Louise Turner, Lulu’s was pur-chased in 1999 by business partners Kim Anthony andLaura McBane. Both began working part-time at Lulu’swhile students at Western Carolina University in theearly 90’s. Kim started at Lulu’s as a dishwasher in 1992.

“You’ve got to know a little bit about everything inthe restaurant business,” she said.

Back in 1999, Kim had just sold Sylva’s In Your EarMusic Emporium, which she co-founded. She had to be con-vinced by Laura to invest in Lulu’s.

“She conned me into purchasing Lulus’s,” Kimremembered.

Today, Kim, who juggles payroll, the books, and theregister along with her fulltime job as a Jackson Countyparamedic, has no regrets about her investment. Her staffclearly mean a great deal to her. During the recession, Kimand Laura have taken pay cuts to avoid laying anyone off.

“We genuinely love everybody who’s here,” said Kim.“We have 23 children and counting.”

Laura agreed.“We’re a real family here.”One of her key family members is Erica Sharrett, who

has worked her way up at LuLu’s from dishwasher to mainchef at age 25.

“She’s a natural,” Laura said of Erica’s talents. “Herbeef tenderloins are incredible.”

Erica, who is self-taught, said she loves making cur-ries and chilled summer soups and creating new dishes.Her current project is perfecting squash casseroles.

“I do a lot of experimenting, and it turns out good,”she said.

Erica also enjoys incorporating seasonal flavors into herspecials. Dining out also inspires her.

“I see if I can recreate stuff,” she said.

Lulu’s menu changes every three to fouryears, Laura said, though they keep favoriteslike original owner Louise Turner’s pasta salad ala greque. Yet Laura, who is both restaurantmanager and the inventor of Lulu’s desserts,said customer tastes change over the years.

“You have to change things with the times,”she said. “You’ve got to go in the kitchen and fig-ure it out.”

During the summer months, customerscan dine outdoors at Lulu’s, which serves lunchand dinner Monday through Saturday. Dogs arewelcome on the patio, which seats about 20people. Tourists often have their animals withthem while they travel, and Laura said, “We’drather they bring them on the patio than leavethem in the car.”

Ultimately, Kim said the secret to Lulu’s suc-cess is staying humble.

“We’ve been so successful and weatheredthe economy. Being so consistent and having alocal following has made the difference.”

T he Smokehouse, which was ranked thirdin the nation for barbeque in 2006 byNational Geographic Traveler, has had a

slew of memorable events, from the visits ofactors and crew members during the filming ofThe Fugitive to the numerous parties they’vehosted over the years, including when theybought the Smokehouse’s historic building,which was built in 1930 as a garage/car dealerand has a landmark gas pump out front.

The Harts started the Smokehouse in 1992after 10 years of owning Mexican restaurants inCullowhee and Franklin. They asked each other,“What would work in Dillsboro, what foodwould appeal to all ages?” Barbeque was theanswer. “The Floridians, tourists, and localscome back year after year,” Janet said, notingthey have a big return business with travelers.

The Harts are truly a team, working on theconstruction of the Smokehouse kitchen in1992 and searching for décor and furnituretogether at auctions and garage sales until theyfound the right mix of 1950’s tables.

Recipe development was also a hands-on proj-ect for the couple. “We worked hard on the bakedbeans,” CB said. The restaurant has six barbequesmokers out back, and CB is sure to trim the fat offthe pork and beef. “We have the leanest barbequearound,” he said. Another trademark is not sauc-ing the meat in the kitchen—the sauces are on thetable for the customer to add to her taste.

The Smokehouse is renowned for baby backribs in peach sauce, and manager Jonny Russosaid 100 quarts of slaw recently sold in twoweeks through their popular carryout business.The traditional options bring in the crowd, butas Janet is a vegetarian, she made sure the menuhad options like veggie pizza and bean wraps toaccommodate those who don’t eat meat.

The Harts reside in Jackson County. Bothhave an education background. Janet recentlyretired after teaching elementary school for 31years in the Swain County Schools, and CB lefthis job as an administrator at SouthwesternCommunity College in the early 1980s. Hestarted a food program at SCC and alwaysdreamed of having his own restaurant.

After 30 years in the restaurant business, soft-spoken CB reflected, “I always loved to be in thekitchen as a kid. I guess that’s where it came from.”

Business has been in “steady slow” during therecession, according to CB. Their peak time is fall,followed by spring and summer. “We’re lookingfor something to happen in the spring,” he said.“We’re established enough to make it through.”

Janet added, “We truly appreciate the localfolks who keep coming back, the way the econ-omy is going. A lot of people are gone, but we’restill here.”

Dan and Lee Ann are working owners, put-ting in 60 to 80 hours per week, open to close,Tuesday through Saturday. Though 2011 wasbetter than previous years, Dan said it’s still abumpy ride through the recession:

“It’s hard, we’re trying to do what we can tohold our head above water.”

Dan, who is originally from Raleigh, andLee Ann, a Jackson County native, met whilestudents at Western Carolina University. Theylive in town in Sylva.

Dan started out bussing tables at restau-rants in high school, and Lee Ann waited tables.Dan said his mother taught him how to cook,but, “I didn’t know it would lead to owning arestaurant.” He said he started out in therestaurant business because jobs were alwaysavailable when he needed one, and he was deter-mined to stick with it.

“S peedy’s has a ‘Cheers’-type atmosphere,” said Charlie, where, as the TV show’s themesong goes, “everybody knows your name.” Charlie is the son of owners Carolyn andWally Schmidt, who bought Speedy’s in 2004 at the suggestion of their daughter,

Amy, who was working as a server at the restaurant at the time.“Our daughter talked us into buying, and it’s been a very good investment,” Carolyn

Schmidt said. “It’s always busy and fun, especially on a Friday night.” The location is perfect, says Wally Schmidt, because “people can drive by and recognize

their friends’ cars.”Originally from Florida, the Schmidt family arrived in Jackson County 23 years ago. Charlie

and Amy were raised here. Purchasing Speedy’s created a ripple of career change for the familyand strengthened their ties to Sylva.

Previously, Wally was in manufacturing andhad an aluminum-casting foundry, and Carolynworked as a veterinary technician at SylvaAnimal Hospital. She still works as a reception-ist there. After college, Amy became a writerand now lives in Vietnam. Meanwhile, Charlietackled a number of roles at Speedy’s, fromhosting to serving to cooking to dishwashing,until he took over as general manager. Today hisduties include covering the day-to-day function-ing of the restaurant and ordering ingredients.

Speedy’s, which was founded in 1973 inCullowhee and moved to Sylva in the early1980s, was the first pizza place in the area, aheadof the chain restaurants. The original owner wasa racing fan and carried the nickname “Speedy.”By focusing on homemade recipes with all-natu-ral ingredients on hand-tossed pizzas, theSchmidt family has kept Speedy’s fresh.

Carolyn Schmidt said the food is substan-tially the same since the restaurant’s foundingnearly 40 years ago. “We haven’t changed any of

the recipes,” she said, though they have added aThursday night prime rib dinner.

A renovation in 2001 added 30 seats inside.“The Pit” room, renovated by the Schmidts,serves groups, and outside, large picnic tablesseat around 25 guests with heaters turned on inthe cooler months. Dogs are allowed to accom-pany their owners on the patio.

With all of that space, Speedy’s is known forhosting groups from Western CarolinaUniversity.

“We rely on the college. Faithful students,teachers, and professors come in groups,” saidCarolyn Schmidt. Charlie Schmidt also notedthat about half of the 15 employees are WCUstudents. Carolyn Schmidt added: “We havegood help and low turnover.”

In addition to pizza, Speedy’s is known forits strombolis and calzones, according to CharlieSchmidt.

“Pizza can be made a thousand ways,” hesaid, but the secret to Speedy’s success is “con-sistently good pizza, beer, service, and a greatlocation.”

S ylva native Phyllis Gibson and her hus-band, Gary, have owned and operated TheCoffee Shop since 1985. However, if you

read the menu, you will learn Rolle Painter andhis daughter, Mayme Bailey, first opened thediner’s doors in 1926.

Gary Gibson, who hails from Waynesville,has been in the restaurant business all his work-ing life, for 41 years, but Phyllis began helping outin 1985 on the side — while working for a sewingfactory — and stayed. For a time she was a linecook in The Coffee Shop’s open kitchen — a posi-tion she notes has little turnover but is stressful— but now sticks to the register. The grandkidshelp out in this family-run place on Saturdays.

The Gibsons have renovated The CoffeeShop over the years, including remodeling thefloor and adding sidewalks and wheelchair

accessibility. Phyllis said installing a credit cardmachine and increasing advertising have made adifference in business the past year.

Memorabilia from bygone days are TheCoffee Shop’s trademark and catch the curiosityof local and tourist alike. Portraits of JohnWayne, Johnny Cash, and Robert E. Lee adornthe walls — Phyllis Gibson describes them as“people we admired growing up.” Vintage Coca-Cola signs and cleverly personalized licenseplates from Hawaii, Alaska, and as far away asAruba are signature décor items too. Patrons ofthe restaurant mailed these tags in, and nowcustomers can also leave with a bit of the diner:a stylized Coffee Shop, “Oldest restaurant inSylva” T-shirt.

Many find refuge in The Coffee Shop’sdozen orange booths. “A lot of people from

everywhere come in, and they always come backagain,” said Gibson.

Her regulars, including old timers, early-ris-ing construction workers and Western CarolinaUniversity students, pitch a fit if the menu, whichis extensive, changes. “It makes a difference tothem,” she said. “It’s just like Mom’s cooking.”

Six retired men at a nearby table say theyregularly make it to The Coffee Shop for break-fast. They come out for “conversation — and thefood’s good, too!” said Sylva’s Marion Jones, whois retired from the district attorney’s office andowns Jones Country Store. The men say they gofor a BLT for lunch, but the morning favorite isan egg sausage breakfast with biscuits and gravy.

“Oldest café, with the oldest biscuits,”teased Max Blanton, who is retired from thePost Office.

The Coffee Shop is also known for its rea-sonable prices. For example, from the breakfastmenu, the “Gypsy Omelette” made of cornedbeef, onion, peppers, and cheese with grits orgravy and toast or biscuits, is just $6.25.

Though the Coffee Shop definitely appealsto those wanting to look back, Gibson said hercountry restaurant’s appeal is timeless: “Peopleappreciate a hometown diner and a home-cooked meal.”

Y et in January 2010, it was the air inside restaurants thatgot cleaner. A N.C. law banning smoking in enclosedareas of restaurants and bars went into effect, and light-

ing up at outdoor tables became a legal alternative to the ban.At Soul Infusion Teahouse & Bistro off Highway 107, there is

plenty of outdoor space to smoke — on the porch, the picnictables or just standing outside and listening to one of their verypopular shows, which feature local musicians. Haley Milner, co-owner and head chef, also stressed the restaurant’s family-friend-ly nature. “We are dog-, animal-, and kid-friendly,” she said.

In September 2010, dining rules outside changed again:the N.C. Department of Environmental and NaturalResources altered a state law, allowing leashed dogs and cats toalso tag along at outdoor tables, at restaurants’ discretion.Previously, the state considered non-service animals in restau-rants a public health violation.

Owner Dan Gibson of Mill & Main Restaurant andPizzeria in Sylva said he was relieved by the state’s revision ofthe pet law. Gibson’s restaurant, which accommodates up to45 guests outside, sits at the intersections of Mill and MainStreets, a kind of downtown cornerstone for pets and theirowners. “We used to lose business all of the time based on

S everal restaurants in Jackson County,including City Lights Café, GuadalupeCafé, and Soul Infusion Tea House &

Bistro, offer farm-to-table and field-to-table din-ing. Buying from local farmers is more thantrendy, however. “It’s healthier, it tastes better,”said Bernadette Peters, owner of City LightsCafé. “If I could afford it, that’s all I’d do.”

Currently, farm-to-table is a supplement toCity Lights’ organic food. The café is a sup-porter of ASAP, the Appalachian SustainableAgriculture Project, and Peters buys producefrom Shelton Farms in Whittier, the JacksonCounty Farmers’ Market, and Eric Wilson’shydroponic, pesticide-free greenhouse. Thebeers Peters serves are from Sylva’sHeinzelmännchen Brewery, which uses ingre-dients from local farmers.

Peters said economic pressures keep herfrom making farm to table City Light’s primaryfood source. “We do as much as we can,” shesaid, noting that the previous tenant of City’sLights’ space, Spring Street Restaurant, didmore like 80 percent farm-to-table cooking buthad higher prices as a result.

Haley Milner is also an ASAP supporter.She is co-owner and head chef of Soul

Infusion Tea House & Bistro, which is located ina farmhouse off Highway 107. “We try to getas much local as possible,” she said. SoulInfusion also uses Tree of Life, a higher-endorganic food distributor.

At High Hampton Inn in Cashiers,Executive Chef Sean Ruddy says 95 percent ofthe produce comes from the local farmer’smarket. “Local farms in the area enables us toget the freshest foods available,” said Ruddy,noting that most of the tomatoes in the DiningRoom’s daily grand buffet come from OsageFarms in north Georgia, south of Franklin, N.C.,as well as trout from Andrews, and goatcheese from Three Graces Dairy in Marshall.The Dining Room specializes in what Ruddyterms “Southern gourmet fare,” with a differenttheme each day, though fried chicken is a sta-ple of the Sunday brunch buffet.

Last year, High Hampton Inn started a small,fresh-air market on the property that opens forthe season beginning in May. The daily marketis open to the public. In addition to fresh pro-duce like blueberries and blackberries, the mar-ket offers gourmet coffee, beer and wine, andfresh panini sandwiches are available. InSeptember, apple growers from HendersonCounty bring in cider and pies. Shelf productsincluding candies, chips, and salsas are provid-ed by UNFI, a leading organic distributor.

The 1400-acre Inn opens for its 90th sea-son in late April.

Eateries embracefarm-to-table dining

Around town, restaurants like Speedy’sPizza, and City Lights Café leave out waterbowls for itinerant pets.

At Speedy’s Pizza, regarding pets outside,co-owner Carolyn Schmidt said, “If the countysays it’s OK, we’re OK with it.” She said thealtered law hasn’t made for a big change in busi-ness. Speedy’s also has outdoor heaters in thecooler months around their picnic tables, whichseat about 25 people. The restaurant’s centrallocation and ample parking have made it a hang-out for students and families.

On the fourth Tuesday evening of eachmonth, City Lights Café hosts “Yappy Hour,”from 6 to 8 p.m. on their porch. Pets and about10 owners mingle, and coffee drink proceeds aredonated to ARF, the Jackson County HumaneSociety. Smoky Mountain Dog Bakery inWaynesville provides the dog treats.

City Lights Café owner Bernadette Peterssaid outdoor dining — she can seat about 22outside — is a big part of her business. “Peoplelike to come hang out with their dogs or just sitand enjoy the beauty while they eat a leisurelymeal or enjoy a glass of wine.”

Co-owner and special events coordinatorPat Thomas said Yappy Hour “can allow the petowners to meet other like-minded people and tolet people know we are a pet-friendly business.”

A group of Sylva residents who call themselves“Sylva Dog Park Advocates” on a Facebook pageare in talks to create a place for canine exercise.“There are lots of pet owners in Sylva, who wouldlove to have a dog park here,” said Pat Thomas.

Kessa Thomas, the manager for PAWSAnimal Shelter in Bryson City, said she is a regularat Yappy Hour with Oscar, her longhaired dachs-hund mix. “I’d like to see more opportunities foranimal lovers to get together,” she said.
