In the early days, that reputation spread only as far as the tantalizing scent of Tom’s mesquite-grilled Texas beef. In the decades since, we’ve catered all over the United States and the world, to include the Presidents of the United States, Russia and China. Our chuck wagon style Texas cooking is a hit from the prestigious James Beard House in New York City to vineyards in California, from Russia to the Texas Governor’s Mansion, to the “Today Show.” Since 1995, our Mesquite Smoked Peppered Beef Tenderloin has been served in homes and at events across the country. This special beef tenderloin is a tradition that the Perini family is proud to share. It is a favorite among presidents, world leaders, movie stars and cowboys. In fact, in our first year, the “New York Times” named Perini Ranch’s Mesquite Smoked Peppered Beef Tenderloin the best mail order gift in the country, calling it “superlative...spectacular...the tasting star...” Further national acclaim came in the form of The Critics Choice Award at the 1999 Hill Country Wine and Food Festival, annual participation since 2002 in the Food and Wine Classic at Aspen, as well as recognition in “Forbes FYI” and “Gourmet”. Each tenderloin is individually selected, hand trimmed and rubbed with our special seasoning of ground pepper and herbs. Then it’s roasted and mesquite-smoked using the traditional style of cooking introduced by Texas settlers in the 1800s. Over the years, we have perfected the delicate balance of seasoning, mesquite smoke and the natural taste of beef that has made our tenderloin so famous. The fully cooked, medium-rare-tenderloin is cut into two pieces, vacuum-sealed in individual pouches and flash frozen to capture its wonderful flavor. IMPORTANT TENDERLOIN INSTRUCTIONS• Upon receipt of tenderloin, place immediately in either freezer or refrigerator. If the

vacuum seal has not been broken, the beef can be stored in the freezer for up to one year. In the refrigerator, up to seven days.

• Thawing – remove beef from vacuum seal and place on a plate covered loosely with plastic wrap. This tenderloin will thaw under refrigeration in 24 hours or at room temperature in 4 hours.

• We do NOT recommend heating or microwaving the tenderloin. The beef has maximum flavor when served at room temperature or chilled.

• When thawed and ready to serve, slice into 1/4’’ medallions for hors d’ oeuvres (yielding approximately 40 slices), no more than 1/2” medallions for entrées (yielding approximately 20 slices).

• A tenderloin should serve approximately 15 guests for hors d’oeuvres or 8 guests as an entrée.

• This tenderloin is fully cooked to a perfect medium-rare and meets all USDA standards.

Our tenderloins leave Perini Ranch only after they are smoked to perfection. No cooking required! They’re great as a gift, and since they require no preparation, you can keep one or two in the freezer at all times for those unexpected guests.

To serve, it’s simply thaw, slice, and serve. But for a little variety, try these suggestions:

• The Mesquite Smoked Peppered Beef Tenderloin is perfect on a cocktail buffet. Traditionally, beef is served with horseradish cream, and here’s a simple, elegant way to present the tenderloin.

• Slice tenderloin into 1/4 inch medallions. Serve on party rolls and top with Perini Ranch Horseradish Sauce.

• On the light side, top a salad with thin slices of Mesquite Smoked Peppered Beef Tenderloin. We love it with crisp romaine, blue cheese crumbles and spicy Pecans tossed in a light vinaigrette.

• For a twist, arrange thinly sliced tenderloin medallions on a large plate, sprinkle with chopped fresh arugula and fresh grated Parmesan, then drizzle with a really good extra virgin olive oil and serve with a sliced baguette.
