Celebrating 100 years of Cookies and Companions Happy 100th Anniversary Girl Scouts!

uliette�“Daisy”�Gordon�Low�assembled�18�local�girls�from�Savannah,�Georgia�on�March�12,�1912,�for�the�very�first�Girl�Scout�meeting.�She�believed�all�girls�should�be�given�the�opportunity�to�develop�physically,�mentally,�and�spiritually.�Within�

a�few�years,�Daisy’s�dream�for�a�girl-centered�organization�was�realized.�Today,�Girl�Scouts�of�the�USA�has�a�membership�of�over�3.2�million.�

March�of�this�year�marks�the�100th�Anniversary�of�the�Girl�Scouts�and�their�first�meet-ing.�In�addition,�Girl�Scouts�of�the�USA�(GSUSA)�has�declared�2012�the�“Year�of�the�Girl”:�a�celebration�of�girls�and�recognition�of�their�leadership.�In�their�honor,�we�are�happy�to�have�a�few�of�those�distinguished�girls�on�our�cover�this�month.

Girl�Scout�Cadette�Troup�#6084�from�Dallas�consists�of�5�girls� -�Alex,�Bailey,�Kylie,�Morgan�and�Sarah.�Their� troop� leader� is� Jeanette�Huntington�and�Rhiannon�Shaw�is�co-leader.�For�Troop�#6084,�being�a�Girl�Scout� is�more�than�selling�cookies;� it’s�building�“Confidence,�Courage�and�Character.”�The�girls�participate�in�service�proj-ects�such�as�collecting�items�for�our�military,�helping�needy�families�during�the�holi-days�and�helping�correct�an�erosion�problem�at�a�local�school�by�planting�a�garden.�They’ve�also�enjoyed�camping,�horseback�riding�and�archery.�These�girls�have�been�together�six�years�and�have�made�friendships�that�will�last�a�lifetime.�

o�you�ever�feel�the�only�green�going� in� your� child’s� mouth�is�a�green�M&M,�a�green�Lego�

or� what� they� pick� from� their� nose?�So�many�parents�have� trouble�getting�

their�children�to�“go�green”�–�to�eat�their�green�vegetables,�or�any�vegetables,� for�that�matter.�This�all-too-common�challenge�can�be�exasperating�to�already�battle�weary�parents,�but�there�are�some�tricks�to�help�achieve�the�triumphs.

Children�model�parental�behavior�and�learn�what�they�live.�As�always,�actions�speak�louder� than�words.� It� is� imperative� that�parents� set� the� right�example�by�choosing�healthy�foods�and�snacks�for�themselves�in�the�hopes�that�children�will�emulate�the�behavior.�After�all,�parents�need�vegetables�too!

Sometimes�eating�vegetables�is�more�a�matter�of�control�and�we�all�like�to�think�we�are�in�control.�Giving�a�few�options�and�allowing�the�child�to�choose�may�improve�his�consumption�of�vegetables.� If� you�meet�with�resistance,� remind�your�child�you�are�not�a�short-order�cook�and�this� is� the�meal�you�are�preparing� for� the� family.� If�your� child� suddenly�decides�he� is�not�hungry,�be� sure�not� to� inadvertently� reward�the�behavior�by�allowing�him�to�snack�later�in�the�evening,�but�rather�offer�him�his�uneaten�meal�instead.

Other�ways�to�get�your�children�involved�in�making�healthful�food�choices�is�to�have�them�plan�and�plant�a�garden,�go�grocery�shopping�or�peruse�the�farmer’s�market,�and�assist�you�in�preparing�meals.�Younger�children�can�wash�vegetables,�shuck�corn�and�hull�peas,�while�older�children�can�chop�vegetables,�make�salads�or�make�dips�for�raw�vegetables.

Be�creative.�Try�a�different�vegetable�every�week�or�learn�to�prepare�the�vegetables�they�already�eat�in�a�variety�of�ways.�Vegetables�can�be�served�raw,�baked,�steamed,�grilled,�stir-fried,�broiled,�dipped�in�sauce,�covered�in�cheese,�in�salad,�and�in�juice�form.�Try�a�variety�of�vegetables�in�different�ways�until�you�find�vegetables�your�chil-dren�like�and�in�the�style�they�will�eat.

Be�sneaky�and�hide�them.�Boiled�cauliflower�can�be�combined�with�boiled�potatoes�to�make�a�tasty�dish�of�“mashed�potatoes.”�Julienne�carrots�and�mix�them�into�spaghetti�sauce�or� lasagna.�Take�stage�2�baby� food�green�beans,�peas,� carrots�or� squash�and�mix�it�into�pizza�sauce,�soup,�or�smoothies.�Bake�zucchini,�pumpkin�or�squash�into�baked�goods,�next�to�the�blueberries,�strawberries�or�chocolate.�The�trick�is�to�use�vegetables�that�blend�with�the�rest�of�the�meal,�match�the�texture�of�the�food�or�have�mellow�enough�flavor�to�keep�it�from�standing�out.

Be�prepared.�Leave�a�bowl�of�cherry�tomatoes�in�the�refrigerator�for�a�quick�grab�and�go�snack.�Make�celery�with�peanut�butter�for�the�snack�before�basketball,�gymnastics�or�football.�Have�a�raw�vegetable�tray�for�snacking�before�dinner,�when�the�children�are�usually�circling�the�kitchen�or�working�on�homework.

Offer�visually�appealing�vegetables.�Try�not�to�overcook�vegetables�because�it�will�help�to�preserve� taste,�bright�colors�and�valuable�vitamins.�Try�making�edible� faces�with�carrot�circles�for�eyes,�strips�of�peppers�for�eyebrows,�baby�sweet�corn�for�the�nose�and�green�beans�or�mushroom�caps�for�the�mouth.�Add�crazy�hairdos�with�shredded�cabbage�or�broccoli.�A�little�silliness�is�good�for�everyone.

Five�to�nine�portions�of�vegetables�a�day�can�be�a�daunting�task�even�for�adults.�Avoid�forcing�children�to�eat�vegetables-�or�any�food�for�that�matter�because�it�is�a�power�struggle� parents� too� often� lose.� Encourage� your� child� to� try� a� bite,� but� don’t� get�upset�if�it�is�refused�and�be�sure�to�keep�reintroducing�the�food�from�time�to�time.�Eventually,�they�will�try�it�and�may�even�like�it.

“There’s� too� much� competition.� No�one� will� publish� my� book”.� What� if�you� flip� flop� the�picture� so� you� are�pulled� towards� the� intense� vision�you�had� in�regret� like� it�was�a�mag-net.�Why�not�create�that�vision�soon-er� rather� than� later.� Procrastination�leads� to� stress,� poor� health,� and�regrets� that� last� for� life.� Action� results� in� fulfillment,�life� experience,� and� wisdom.� Get� the� 4� steps� to� break�through�procrastination:�

Step 1- What are you procrastinating on?� Is� it� appropriate�to�hold�off�or�irrational�postponement?�Will�this�make�a�positive�impact�in�your�life?�Choose�the�area�that�you�will�stop�procrastinating�and�make�a�renewed�commitment.�

Step 2- Discover the source to find the solution.� Consider�

P when�your�car�doesn’t� start.�You� look�for� the� source� of� the� problem.� When�you� find� the� source� it� is� easy� to� take�action�to�make�the�repair.�Look�behind�procrastination�to�find�what�is�restrain-ing�you.�It�may�be�an�unpleasant�task,�lack�of�interest,�someone�else’s�goal,�a�large�overwhelming�project,�fear,�poor�time� management,� or� indecision.� Be�brutally�honest�and�get�to�the�source.�

Step 3- Based on the source; decide if this is a goal you want to keep.�If�so,�choose�a�strategy�that�feels�good�to�you.�It�may�mean�developing�new�habits.�Discover�the�source�and�set�up�the�strategy�in�a�way�that�you�know�you�will�take�action.�Here� are� some� possible� solutions� to�get�your�ideas�flowing:

l� �An Unpleasant Task/ Lack of Interest� -�Schedule� it�at� the�beginning�of�the�day�so�it’s�not�hanging�over�your�head�all�day�long.

l��Poor Time Management�-�Schedule�small�blocks�of�time�daily�or�weekly�to�work�only�on�this�project,�and�be�con-sistent.�Then�you�can�consider�committing�more�time.

l� � Indecision -�When�you�don’t� know�what� to�do,� set� a�deadline�to�make�up�your�mind.�Then�get�whatever�sup-port� and� information� you� need� to� be� able� to� make� an�educated�decision.

Step 4- Hold an intense vision.�Think�of�the�clear�picture�that�shows�up�in�regret;�allow�that�to�pull�you�towards�it.�You�have�great�capabilities�when�you�take�action,�even�if�it’s�learning�in�action.�Focus�on�how�great�you�will�feel�when�you�go�for�it!�After�all,�it�is�through�the�journey�that�the�great�and�memorable�moments�take�place.

If you’ve had disc problems for years, recently injured your back, or you’re suffering with sciatica, you must hear about these new studies.

Scientific studies tell us that spinal discs are responsible for most of the aches and pains people suffer from. Discs act like a cushion between our backbones and allow for a space at each level so the nerves can exit the spinal column.

When these discs get injured or wear out from bad posture, they begin to degenerate and cause pain. Bulging and herniations begin to form, pressing on the nerve roots. If the herniations occur at L4-L5, they can severely compromise the large sciatic nerve, causing muscle weakness, tingling, and severe pain.

The most common invasive treatment for disc hernia-tions is surgery. This costs quite a bit of money. Even with health insurance the patient is left with their own portion of the bill, in excess of $10,000-$15,000, and sometimes more. The recovery time and missed work can be anywhere from 3 to 6 months, not to mention the obvious severe risks associated with all surgery.

But here’s the biggest problem… there is a high failure rate of back surgery. One medical study found that on average, 53% of L5-S1 back surgeries fail to produce relief of symptoms (International Orthop 1987.)

and�lack�of�nutrients�in�the�soil.�To�understand�the�effects�of�thyroid�malfunction,�it�is�important�to�understand�what�exactly�the�gland�does�in�the�body.

The�thyroid�is�a�small�butterfly�shaped�gland�located�directly�below�the�Adam’s�apple.�This�gland�swells�up,�accompanied�by�an�inflammatory�sensation,�when�not�working�properly.�This�can�be�seen�as�a�small�bulge�in�the�area.�Doctors�might�feel�the�size�of�the�gland�by�keeping�a�hand�around�your�neck�and�making�you�swallow.

The� thyroid� is� known�as� the�hormone� factory� as� it�manufactures� a�number�of�hor-mones�for�the�body.�T3�and�T4�are�the�major�hormones�amongst�them.�Among�various�other�things�these�hormones�control� the�body’s�metabolism�and�energy� levels.�The�body�fails�to�function�properly�in�case�of�excess�or�lack�of�these�hormones.�A�lack�of�these�hormones�can�make�the�body�sluggish�and�slow,�while�an�excess�can�make�the�person�hyper�active�and�sending�the�body�into�overdrive.

Thyroid�malfunction�affects�the�entire�body�over�a�period�of�time.�The�brain�might�be�affected�in�terms�of�memory�loss�and�moodiness.�Other�affects�to�the�body�include�problems�with�reproductive�health,�heart,�body�weight,�etc.�It�can�also�affect�the�auto-immune�system�and�cholesterol.�The�body�may�experience�arthritis�type�pain�which�usually�diminishes�as�soon�as�the�hormone�levels�are�back�to�normal.

Thyroid�problems�affect�patients�regardless�of�age�or�sex.�According�to�the�American�Thyroid�Association,�half� the�people�with� thyroid�problems�do�not�know�they�have�it.�It�often�goes�unnoticed�as�the�symptoms�are�mistaken�for�some�other�disease.�For�example,�tiredness�is�a�major�symptom�but�is�generally�is�overlooked�as�a�“feeling”�or�is�associated�with�other�health�problems.�However,�women�are�eight�times�more�likely�then�men�to�face�the�disorder.�Also,�you�are�more�prone�if�you�have�a�family�history�of�the�autoimmune�diseases.�In�such�a�case,�a�regular�checkup�of�the�thyroid�gland�is�highly�recommended.�Similarly�elderly�people�also�run�a�higher�risk�of�disorder,�as�do�people�with�a�high�exposure�to�radiation.

Symptoms�can�be�painful�and�tend�to�pull�you�down.�The�first�step�is�getting�the�right�treatment�from�the�right�doctor.�Being�proactive�is�very�important�and�if�medications�don’t�prove�effective,�tell�your�doctor�immediately.�Eat�healthy�and�avoid�a�diet�rich�in�sugar�and�processed�food.�Being�a�victim�of�thyroid�disorder�can�be�a�sad�story�and�at�times�is�really�discouraging,�however�the�facts�remain�that�you�can�live�with�it,�and�live�happily�at�that.

ouldn’t� it� be� great� to� have� a� private� putting� green,� right� in� your� own�backyard?�If�you�keep�it�small,�surprisingly,�it’s�not�that�big�of�a�job,�but�maintaining�it�takes�a�certain�amount�of�commitment�and�discipline.�Here�

are�the�steps�for�creating�your�very�own�putting�green:

1.��Decide�if�you’ll�be�doing�the�work�or�using�a�contractor.�It’s�more�expensive�to�go�with�the�latter,�but�if�someone�else�is�doing�the�work,�you’ll�get�a�quality�result�and�a�warranty.

2.� Choose� between� one� of� the� synthetic� grasses� out� there� versus� using� natural�grass.�The�climate,�amount�of�sun�or�shade,�and�precipitation�in�your�area�will�all�factor�in�when�deciding�what�type�of�grass�to�go�with.�Consider�if�it�needs�to�be�mowed,� fertilized,� and�maintained.�Although� synthetic�materials�have� their�own�

pros�and�cons,�they�are�less�work.

3.�Decide�where�the�green�will�go,�making�sure�you�choose�higher�elevations�that�won’t�collect�as�much�water.�Avoid�areas�near�buildings,�bodies�of�water�or�trees.�Also�avoid�close�proximity�to�common�pathways�or�play�areas.�Measure�the�space�you’ve�allotted�for�the�green�and�obtain�square�foot�measurements�to�get�quotes�from�contractors�or�price�out�material�if�you�plan�on�tackling�the�job�yourself.�

4.�After�enlisting�help�from�your�friends,�rent�a�bobcat�or�start�digging�with�shovels.�You�need�to�dig�out�the�entire�area�you’ve�selected,�removing�any�debris,�rocks,�weeds,�etc.�Get�a�soil�sample�while�you’re�at�it.

5.�Plan�your�irrigation�channels�so�the�water�will�run�down�hill�and�away�from�your�green.�Learn�where�the�dry�spots�are,�the�shadows,�where�the�low�spots�are,�and�where�the�sun�hits�it.�This�knowledge�will�help�you�understand�how�to�care�for�your�putting�green.�

6.�Research�the�type�of�grass�that’s�best�for�your�soil�and�conditions.�It’s�vital�when�apply-ing�topsoil�to�elevate�the�green�above�the�surrounding�soil,�and�use�a�sandy�loam�topsoil�for�the�root�zone�and�a�slope�of�about�1�percent�for�surface�drainage.�

7.�Maintain�and�fertilize�your�green�on�a�regular�basis.�You’re�working�with�a�delicate�bal-ance�and�extremes�in�water,�drought,�fertilizing,�or�even�excessive�cutting�can�damage�your�lawn.�Also,�do�not�use�the�same�types�of�fertilizer�used�on�professional�golf�courses,�they�are�highly�toxic�and�may�kill�your�neighbor’s�cat.

Have�fun�and�don’t�forget�to�have�a�tee-off�celebration�with�your�friends�when�the�job�is�done.

ike� many� of� you,� I’ve�used� a� lot� of� hand� tools,�power� tools,� and� power�

equipment�over� the�years.�Table�saws,� routers,� sanders,� tile� cut-ters,� chainsaws,� generators,�nail� guns,� jack� hammers,� lawn�mowers,� pressure� washers� and�more.� Each� tool� has� its� own�special� function� and� appeal.�Of�course,�running�the�jack�hammer� to� take� out� my�front� concrete� sidewalk�was�the�big�he-man�moment�of� all� time� for� me.� Wow!� I’m� sure� the� kids� were�incredibly�impressed�with�their�old�man,�and�you�can’t� even� imagine� what� my� wife� thought.� Ratta�tat� tat!�But�of� all� the�above,�nothing� is� as� fun�or�satisfying�to�run�as�a�pressure�washer.

Power�washers�do�jobs�that�just�can’t�be�done�with�any�amount�of�scrubbing�or�elbow�grease.�Hot�or�cold�water�under�pressure�is�just�about�one�of�the�

most�powerful� forces�out�there�for�cleaning,�blasting�or�washing.�The�last�time�I�used�this�tool�it�was�to�clean�out�30�years�of�embedded�dirt�from�the�light�colored�brick�on�the�front�of�my�house.�Worked�like�a�charm,�and�gave�me�more�bragging�rights�with�the�family.

When� it� comes� to� pressure� washers,� please� realize� that�they�are�extremely�powerful�and�can�be�destructive�and�

t Top 10 Uses for Pressure Washerseven� dangerous� if� not� used� properly.�Like� any� power� tool,� use� caution� and�follow�manufacturer’s�instructions�care-fully.�Having�said�that,�pressure�washers�can� be� used� on� many� things;� pretty�much� anything� you� need� to� clean� or�blast.�Pressure�washers�come�in�various�strengths�and�features,�but�today�I�just�wanted� to� run� down� the� top� 10� uses�for�your�pressure�washer.

1. Washing a Car, truck or RV�-�With�the�right� wand� and� attachments,� wash-ing�your�vehicle�will�be�something�to�

look�forward�to�rather�than�dread.

2. Washing a Boat -�You�know� that�mystery�discoloration�on�your�boat.�Sort�of� like�hard�water� stains�on�a�glass.�Well,� never� fear,� pressure� washers� to� the� rescue!� And�barnacles� and�other�nasties� are�no�problem.�Your�boat�will�thank�you.

3. Cleaning a Sidewalk�-�Sidewalk�cleaning�is�easy�with�this�tool.�Just�remember,�pressure�washers�can�be�extremely�powerful� and� will� actually� destroy� the� concrete� if� you�aren’t� careful.�And�remember,� there� is�no�more� impor-tant�safety�rule�than�to�wear�these�-�safety�glasses.�(Any�other�Norm�Abrams�fans�out�there?)

4. Cleaning Wood Decking� -� Here’s� the� thing� on� wood.�Don’t�linger�too�long�or�too�close�or�you’ll�ruin�whatever�

you�are�working�on.

5. Cleaning a Fence� -� Iron,� chain� link,� wood,� plastic,� or�whatever.�It�doesn’t�matter�what�your�fence�is�made�out�of,�a�pressure�washer�will�get�into�all�the�nooks�and�cran-nies�no�problemo.

6. Cleaning Patio Furniture�-�Mold�or�dirt�is�no�problem�to�remove�from�patio�furniture.�If�you�want�to�remove�paint�for�repainting,�there�are�pressure�washers�that�will�tackle�the�job.�Watch�for�small�bits�flying�and�dream�about�how�great� your� new� furniture� will� look� when� you’re� done.�Hey,�if�you�don’t�like�the�color�you�can�just�hit�it�again!

7. Washing Out a Gutter -�No�more�yucky�squishy�goop�to�handle�by�hand.�Just�blast�it�out.�Period.

8. Cleaning a Driveway�-�Cleaning�a�driveway�is�really�only�done� right� with� pressure� washers.� The� right� chemical�cleaner�with�that�right�pressure�washer�and�that�oily�dirty�surface�will�become�a�thing�of�the�past.

9. Cleaning Siding�-�My�personal�favorite.�It�doesn’t�matter�what�the�siding�is�because�when�you�get�done�it�will�look�like�brand�new.�Again,� just�don’t� linger�or� get� to� close�because�you�can�harm�the�surface.

10. Cleaning or Washing _____� -� This� is� the� best� one�because�you�get�to�fill�in�the�blank.�Just�get�creative�and�stay� safe.�Pressure�washers�are�powerful,� effective,� fun,�and�your�wife�and�kids�will�be�so�proud�of�you!

daily�grind�of�providing�love,�care�and�guidance,�you�have�to�think�about�their�future�as�well.�If�you�haven’t�sat�down�and�put�a�pencil�to�your�plans�for�them�in�the�event�something�happens�to�you,�it’s�time�to�get�that�taken�care�of.

Important family considerationsWith�estate�planning,�one�of�the�most�important�tools�at�your�disposal�is�a�guardianship�and�trust.�More�powerful�than�a�simple�will,�it�not�only�establishes�a�legal�guardian�for� your�dependents,�but� it� also� can�protect�minors’� interests�until� they� reach� the�age�of�majority.� If� you�are�caring� for�a� child�or� family�member�who� is�mentally�or�developmentally� disabled,� there� are� many� good� reasons� that� you� should� consider�setting�up�a�guardianship�and�trust,�even�if�the�child�has�not�yet�turned�18.�After�the�age�of�18,�even�a�developmentally�disabled�individual�may�be�considered�competent,�which� leaves� your� loved� one� vulnerable.� With� a� guardianship,� you� will� be� legally�responsible�for�your�loved�one�for�their�lifetime,�which�means�you�can�better�keep�them�safe�and�provided�for.

pril� Estes� is� native� of� Paulding�County.�She� graduated� from�Paulding� County� High� School�

where� she� met� and� dated� her� high� school�sweetheart,� Michael� Estes.� They� have� been�happily�married�for�nearly�10�years,�and�have�three�children,�Landon�age�5,�Easton�age�3,�Marlow�age�1�and�baby�#4�on�the�way!�Mi-chael� is� a� Paulding� County� Firefighter� and�has�been�with�the�PCFD�for�almost�7�years.

April�went�to�Kennesaw�State�University�and�graduated�in�2002�with�a�BBA�in�Finance.�After�graduation,� she� began� her� career� at� a� local�bank,� while� acquiring� her� Residential� Real�Estate�license�as�well.�A�couple�of�years�later,�she�had�her�first�son�who�forever�altered�the�direction� of� her� life.� Although� she� always�had�an� interest� in�photography,� this� is�where�her�passion�grew�while� trying�to�preserve�and�capture�every�sweet� little�moment.�She�began�classes�at� the�Showcase�School�of�Photography�and�officially�opened�her�own�photography�business,�Reflective�Images�Photography�in�2007.�

April�is�a�custom,�on-location�photographer�and�specializes�in�maternity,�new-borns,�toddlers�&�children,�senior�portraits,�families,�engagements�and�wed-dings.�It’s� important�that�her�clients�feel�relaxed�and�have�a�good�time.�She�says,�“Whether� their�playing�with� the�kids�or�spending�an� intimate�moment�

he� � Paulding� County� Special� Olympics�have� been� around� for� approximately� 15�years.� Just� like� the� national� organization,�

founded� in� 1968� by� Eunice� Kennedy� Shriver,�the� PCSO� works� to� provide� year-round� sports�training� and� athletic� competition� in� a� variety� of�Olympic-type�sports�for�children�and�adults�with�intellectual�disabilities.

Throughout� the� year,� the� Paulding� County� Special�Olympics� hosts� and� participates� in� several� fundraisers�and�sporting�events.�There�is�no�age�limit�to�be�involved,�although� participants� need� to� be� at� least� 8� years� old.�Just�recently�about�250�athletes�participated�in�a�Winter�Bowl-A-Thon� event� at� the� Paulding� Bowling� Center� in�Dallas.�

Their�next�event�is�the�upcoming�Spring�Track�and�Field�day�scheduled�on�Thursday,�April�26th�(rain�date�is�April�27th)�at�Hiram�High�School.�Athletes�are�divided�into�to�different�age�groups,�and�each�participant�chooses�one�track�and�one�field�event.�The�track�events�are�the�25M�run,�25M�walk,�30M�wheelchair�unassisted,�30M�wheel-chair�assisted,�50M,�100M,�200M�or�400M�runs.�The�field�events�are�running�long�jump,�standing�long�jump,�soft-ball�throw,�tennis�ball�throw�or�Frisbee�throw.

Marianne� Bishop� has� been� the� coordinator� for� the�

Paulding� Co.� Special� Olympics� for� the� past� seven�years.� She� emphasizes� the� track� and� field� event� is�the� athlete’s� day� to� shine� and� compete� in� a� sport�they� wouldn’t� normally� get� to� do.� Each� athlete�is� paired� up� with� a� regular� student,� called� their�“Buddy”.�Their�“Buddy”�spends�the�day�with�them,�and�makes�sure�the�athlete�is�at�the�designated�event�at�the�time�specified.�It’s�a�special�day�for�ALL�the�children�to�come� together,�and�realize�very�similar� they�are�and�have�fun.�

Each� county� is� responsible� for� raising� the� necessary�funds�to�send�their�athletes�to�state�events�and�purchas-ing� their� own� equipment.� The� PCSO� have� two� major�fundraisers�each�year.�One�is�selling�t-shirts�and�the�sec-ond�is�the�annual�golf�tournament.�The�seventh�annual�tournament�is�scheduled�for�May�11th�at�Creekside�Golf�and�Country�Club�in�Hiram.�The�athletes�do�not�partici-pate,�but�it’s�a�chance�for�the�community�to�join�in�and�help�this�organization.

Marianne� has� big� plans� for� the� PCSO� but� needs� your�help.�She�hopes�to�start�different�sport�programs�includ-ing,�basketball,�bocce,�swimming,�baseball,�etc.�Any�sport�the� Olympics� offers,� the� Special� Olympics� of� Georgia�also�has.�She�is�hoping�to�recruit�some�coaches�so�these�events�can�get�organized�and�the�athletes�can�compete�in�these�events�at�the�state�level.

ere�we�are�at� the�beginning�of� the�year�and�so� far,�so�good,�weather�wise�at� least.�Schools�are�back� in�session�and�we�are� in� the�midst�of�what�normally�might�be�called�the�“Winter�Doldrums”.�The�rush�of�the�

holiday�is�long�behind�us�and�we�now�have�time�to�think�of�what�we�can�do�to�enjoy�some�wonderful�family�weekends�and�of�course,�Spring�Break.

Now is the time to start planning.

For� weekend� trips,� there� are� so� many� great� destinations� nearby.� The� Cloister� is� a�beautiful�place�to�get�away�for�the�weekend.�A�short�4�hour�drive�from�Atlanta,�there�is�golf�for�Dad,�a�super�Spa�for�Mom,�and�kids�programs�for�the�younger�set.�A�week-end�here�comes�wrapped�up�in�spectacular�surroundings�of�beach�and�marshes�with�villas�complete�with�living�rooms�and�kitchens�to�cook�up�some�great�seafood.�Drive�a�little�north�to�Sanctuary�at�Kiawah�Island�or�the�Inn�at�Palmetto�Bluff,�where�both�destinations�offer�similar�attractions�to�the�Cloister�and�are�not�far�from�Atlanta�for�a�wonderful�weekend�of�fun.

If� you� prefer� a� mountain� getaway,�why� not� visit� the� Old� Edwards�Inn� and� Spa� in� Highlands,� North�Carolina?� � In� addition� to� golf� and�spa�activities,�one�can�hike�to�beau-tiful�waterfalls,�pan� for�gemstones,�go�geo-cashing�or�fishing�in�nearby�lakes.� Family� Learning� Weekends�are� also� offered� where� everyone�can� take� a� cooking� class� or� paint-ing� classes� or� just� learn� about� the�Appalachian�Mountains.

If�you�prefer�a�longer�trip,�say�for�Spring�Break,�Europe�is�especially�inexpensive�and�not�as�crowded�in�the�early�spring.�Our�US�dollar�is�going�farther�these�days,�and�what�could�be�better�than�giving�the�kids�a�great�education�at�the�same�time�you�vacation?�There�are�no�crowds�at� the�British�Museum,�and� the�Eiffel�Tower� is� great�without�a�line�to�get�in.�There�are�short�river�cruises�in�Germany�and�France,�and�Italy�can�also�be�a�great�bargain�at�this�time�of�year.�For�those�studying�Spanish,�a�great�short�vacation�in�Spain,�Mexico,�or�South�America�to�practice�your�“espanol”�might�be�fun!�Prices�in�the�off�season�are�much�less�than�in�the�middle�of�summer�when�everything�is�crowded�with�tourists�from�all�over�the�world.�It�can�be�a�great�family�vacation,�as�well�as,�a�learning�experience.

As� for� Mexico,� it� is� such� a� beautiful�country� and� is� suffering� such� a� “bad�rap”� what� with� TV� shows� and� news-casts�blaring�about�the�drug�lords�and�killings.� The� great� majority� of� Mexico�is�just�a�delight�to�travel�through.�The�beaches� in� Cancun� and� Cozumel� are�also� lovely.� But� be� sure� to� include� a�visit� to� the� ruins� of� Chichen� Itza� and�Uxmal�near�Merida.�Stay�in�a�wonder-ful� and� historic� hacienda� and� get� a�true�feel�of�what�old�Mexico�was�really�like.� Even� Mexico� City� can� be� a� great�vacation� spot� with� its� art,� museums,�and� history� around� every� corner,� and�it�IS�safe.

So,� start� planning� now.� � It� is� a� good�time�to�check�with�your�travel�advisor�and� find� some� really� good� bargains.�Enjoy� some� really� wonderful� family�time�this�Spring�Break�or�any�time�this�year.

Taco with Spicy Chicken, Peanuts and Grilled Pineapple

3�chicken�breast3�cup�chicken�stock1/2�cup�peanut�salsa12�fresh�corn�tortillas1/2�cup�queso,�crumbled�cilantro,�fresh�and�finely�chopped1/2�cup�peanut�salsa4�oz.�pineapple,�peeled�and�sliced2�oz.�peanuts,�roasted�and�coarsely�chopped

Bring� chicken� stock� to� a� simmer� add�1/2� cup�of� the�peanut� salsa� and� the� chicken�breasts.�Simmer�for�20�minutes�or�until�breasts�are�well�done�but�juicy,�keep�in�broth�at�room�temperature,�then�shred�the�meat�into�strips�and�place�them�in�the�broth.�Add�cilantro.�Grill�pineapple�quickly�and�chop�into�small�pieces.�Place�queso,�cilan-tro,�and�peanut�salsa� in�a�bowl.�Heat�tortillas.�To�make�the�taco,�add�some�peanut�salsa�inside�your�taco,�then�chicken,�cilantro�and�cheese.�Sprinkle�with�some�of�the�roasted�peanuts.�
