Jean's first visit to Philadelphia Hi Dear Member, When our center was filling up with lots of people, I decided to call Jean and ask her to come and speak to our members. She was happy to come to Philadelphia and see how things were moving along. The night came when Jean was to speak and the place was packed! We waited and waited for her arrival. When she did appear, my mother who was the clerk, looked at her and said, "YOU ARE LATE". I could have died. Jean came all the way from Long Island to be with us and leave it to Mom to scold her for being late! Jean brushed it off and quickly started to speak to the waiting crowd. There were many more times that Jean came to Philadelphia to speak to our members. There were two occasions which are very memorable. One was when we were celebrating our fifth anniversary. We engaged the Philadelphia Academy of Music; presented a fashion show with all the models being Lifetime Members and Jean was the guest speaker. We had 3000 members in attendance! When I walked on the stage, everyone applauded; words could not tell you how I felt. I then knew how actors felt when they were received with applauds. I took acting classes when I was very young, I was just too shy to follow through-but that day, just for that moment, I may have felt a tinge of regret. The other memorable occasion was when we were celebrating our twenty- fifth anniversary. We engaged the civic center. This was a black tie event for our staff and their husbands, wives, boyfriends and girlfriends. Jean Nidetch, Al and Felice Lippert* and Chuck and Jane Berger* were also our guests. Franchisees from all over the United States and our friends were invited, too! We had two orchestras, performers from New York, and even the Mummers! We entertained over seven hundred people at that event! It was a blast. And you know what? Bob and I still love to give parties . . . just small ones! Sweet corn, of course, is the variety we cook as a vegetable (though it's technically a grain), and corn on the cob routinely tops lists of Americans' all-time favorite vegetables. Boil it. Choose a pot large enough to hold the number of ears you're cooking plus enough water to cover them all by at least 2 inches. Bring the water to a rolling boil, add the corn, cover, and cook until the kernels brighten and plump slightly and are just tender, 1 to 6 minutes after the water comes back to a boil. Drain and serve. Steam it. Pull down (but do not break off) the husks back over the ear and tie the top with a piece of kitchen string. Steam over simmering water, covered, until the kernels feel just slightly tender when you press on the husk. 5 to 10 minutes. Grill it. Pull down (but do not break off) the husks and remove the silk. Smooth the husks back over the ear, tie the top with a piece of kitchen string, and soak in a large bowl or tub of cold water for at least 30 minutes and up to an hour. Grill over medium coals until the kernels are softened and the husks are slightly charred. 10 to 20 minutes. Corn on the "Cobb" Salad 6 PointsPlus Spread 2 cups chopped romaine lettuce on plate. Arrange ½ cup diced cooked turkey breast, ½ cup halved cherry tomatoes, and ½ cup cooked fresh corn kernels in rows on top of lettuce. Drizzle with 2 tablespoons fat-free blue cheese dressing and sprinkle with 1 slice crumbled crisp-cooked turkey bacon. Sweet Corn Hash 5 PointsPlus Cook ½ cup fresh or frozen corn kernels, ½ diced red bell pepper, ¼ cup diced zucchini, and 2 tablespoons sliced scallions with 1 teaspoon olive oil in skillet until crisp-tender, about 6 minutes. Add ½ cup halved cherry tomatoes and ¼ cup diced lean ham. Cook until tomatoes just begin to soften, 2-3 minutes. Stir in 1 tablespoon chopped fresh tarragon. Velvety Corn Soup with Edamame 5 PoinsPlus Cook 1 minced garlic clove, 1 teaspoon peeled and minced fresh ginger, and ½ minced seeded jalapeno pepper with 1 teaspoon oil in skillet until fragrant, about 1 minute. Add 1 ½ cups fat-free low-sodium chicken broth, ½ cup fresh or frozen corn kernels, and ¼ cup frozen shelled edamame; simmer until corn and edamame are tender, about 8 minutes. Sprinkle with chives. Hi Dear Member,
