One Banana, Banana Bread SimplifiedFeast.wordpress.com – September 2013 Yield: 1 loaf Ingredients: 1 ripe banana ½ c. salted butter (1 stick), softened ¾ c. sugar 2 eggs ½ tsp. vanilla extract 1 c. all-purpose flour A pinch of salt ¼ tsp. ground cinnamon ½ c. walnuts or pecans, chopped Method: Preheat oven to 350 degrees. Peel and mash banana well and set aside. Cream the butter and sugar together in a large bowl until well blended and lightens in color. Add eggs, one at a time. Mix well to incorporate after each addition. Fold in the mashed banana. Add vanilla extract and stir to combine. Next, add the flour, salt, and cinnamon. Combine, without beating, to form batter without any lumps. Lastly, fold in the chopped nuts. Pour batter into a greased loaf pan and bake for 30-35 minutes, or until toothpick inserted into center comes out clean. Let loaf cool in pan for 15 minutes before turning out onto a wire cooling rack. Let loaf cool completely before slicing. Store in airtight container or wrapped with plastic wrap at room temperature.
