Spoon chilli over eggs, covering eggs, and cook – covered – until eggs are almost set, 4-6 minutes. 5. Let sit 5 minutes. Cut omelette into 2-4 wedges before serving. Notes *Serve with a green salad at lunch *Can be eaten at room temperature * Chilli can be meat or bean based, or both * Can use can of chilli or bolognaise sauce instead of leftovers
