HISTORY OF AIGUES-MORTES

Louis IX and Aigues-Mortes In 1240, Pope Innocent IV called upon the European sovereigns to lead a crusade to take back Jerusalem and the Holy Land. King Louis IX responded and took charge of the Seventh Crusade. In the 13th century, the French king had no land on the Mediter-ranean shore; Provence belonged to the Holy Roman Empire and Languedoc Rous-sillon to the Kings of Aragon (Spain). King Louis decided to build a port at Aigues-Mortes, situated at 6 km from the sea. Offering high country land near Sommières, he arranged a trade with the Abbey Brothers of Psalmody to acquire the swamplands known as “dead waters” or stagnant waters. Aigues-Mortes, then situated on the shore of a large lagoon, joined the sea via a branch of the Rhône and river delta channels. In order to attract settlers to his new city, unfortunately surrounded by acres of malaria-riddled swamps, Louis granted exemptions from tolls, port taxes and forced loans in 1246. Aigues-Mortes thrived as a trading port. At last, after much preparation, King Louis IX left Aigues-Mortes in 1248, with 100 ships. He returned to France six years later, embarking a second time in 1270 from Aigues-Mortes to Tunisia, on the Eighth Crusade. Within a month, he felt victim to typhus at Carthage. Tour de Constance The name of this tower, built between 1241 and 1250 during Saint Louis’ lifetime was known, according to an authenticated deed, as the “Tour du Seigneur du Roi” - The King’s Tower. At the end of the 14th century, it was called the “Tour de Constance”. The Ramparts In 1268 a tax on merchandise was ordered to finance the building of the rampart wall. At the time of St Louis’ death the wall foundations were not yet finished. His son, Philippe le Hardi (Philip III the Bold), undertook the construction of the wall stopped by the war against the Kingdom of Aragon; in 1285 his successor, Philip IV (Philip IV the Fair) completed the construction. Although designed by Louis IX and his architect, Eudes de Montreuil, the work was completed by the architect Cominelli after Montreuil’s death in 1289. At the beginning of the 14th century, the surrounding wall was finished. Built on a wooden foundation supported by oak staves, the limestone blocks, quarried at Beau-caire and Les Baux de Provence were transported to Aigues-Mortes by boat. The rampart wall forms an irregular quadrilateral of 1634 metres (~1 mile) flanked by gates and towers.

History

Religious wars In 1685, religious conflicts between Protestants and Catholics continued. The Death of King Louis XIII and the social pressures led Louis XIV to sign the revocation of the tolerant edict. In 1705, the “Tour de Constance “ became a prison for Protestants. Abraham Mazel succeeded in escaping from the tower but Marie Durand stayed imprisoned for 38 years (1730 - 1768). Because the force of her character was an example to prisoners, she became a symbol of heroism and courage. The church Notre Dame des Sablons 1183: The first church made of wood and reed was dedicated to “Beata Maria de Sabulo”. It was rebuilt in 1246 in stone and ogival style. In 1293, the chapel was dedicated to Saint Anthony. The first cult was in 1248 when Saint Louis came before the start of his first crusade. In 1537, it erected as a collegiate church but in 1575 Protestant plundered and van-dalized it. The bell tower collapsed and the roof was destroyed in 1634. Its reconstruction began in 1711. The contemporary stained glass is from 1991 by Claude Viallat. Aigues-Mortes - A port At the time, the Rhône River carried huge quantities of alluvial deposits into its delta, quickly changing its coastal configuration. The “interior port” found itself two kilome-tres south from the sea lagoon and linked to the maritime port. Important works were begun at the beginning of the fifteenth century: the Grau de la Croisette channel replaced the Grau-Louis channel and the “interior port” was rede-veloped into the city outskirts. In 1481, the annexing of Marseille to the Kingdom of France precipitated the ruin of Aigues-Mortes, losing its strategic value as a com-mercial and military port. Facing continual silting up, King François the First had the Canal de Peccais dug to connect the salt works with the sea. It became a river port thanks to the “Rhône à Sète” canal built in 1806 and it remains a viable pleasure and commercial boat link today. Aigues-Mortes - The salt Dating from antiquity, the Salins du Midi salt works remind one that the Camargue is the most important French centre of sea salt production. At the beginning of the 13th century, nearly all the surface of the salt marshes called at this time “Salins de Peccais” belonged to the Monks of Psalmody. Today, the salt works at Aigues-Mortes stretch over 8 000 hectares (nearly 24,000 acres) of delta land called the Camargue. Seawater is pumped into carefully pre-pared earthen pond beds and circulates five months, the level of salt progressively concentrates until crystallization occurs. This pure sea salt is harvested by special machinery then stocked in a gleaming white mountain more than 20 metres high and 400 metres long called : “la camelle”.

Far from the touristic ways, let's discover Camargue with a local guide to share his passion for this land so difficult to enter alone. This trip through paths, marshes, ponds gives you the chance to watch a remarkable fauna and flora (flamingos, herons, egrets, eaters, samphire, saladelle ...) and visit to the horses and bulls in a real "Manade". Wine cellars

Le Vin des Sables The « Vin des Sables » cultivation is very old. It’s dating back to 1406 (letters from Charles VI and Charles VII). These first certifications regulate the sale of wine in the territory of Aigues-Mortes, capital of Vins des Sables. The appearance of “phylloxera” has not hindered the cultivation on the contrary, the sandy soil of Vin des Sables has withstood this insect pest allowing the development of the vineyard. The cultivation of Petite Camargue required drainage and sanitation of this initially saltwater environments, wet, flooded regularly. These are the " roubines " ( dug canals built by man since the XII century ) around these plots which are used for water management. To produce ex-ceptional wines, the Camargue sand winemakers associated with traditional regional varieties of renowned national wines.

La Fleur de Sel de Camargue - Salt Hand harvested, in the respect of traditions, naturally composed of white and damped crys-tals. It melts in your mouth and highlights deli-cately the flavours of meals it is served with. L’asperge des Sables - Asparagus Delicately hand harvested with the help of a “gouge” into the sand mounds, the sand aspar-agus is white, violet or green, according to the way it is harvested: before or after it sprout out of the soil. It has a flavour and a fragrance unique to our region. La fougasse d’Aigues-Mortes Until quite recently, the “Fougasse” was cooked only for Christmas. The customer had to bring all the ingredients to the baker: Bri-oche-style dough, sugar, butter and orange flower. Nowadays you can buy some “Fougasse” all over the year. It was often imi-tated, but rarely equalled ! And also : « La Pomme de Terre des Sables » « la Carotte de Camargue », the rice beer.
