What a fantastic job by the Great Peppers’ Meeting committee! Gil Hewlett, David Sexton, Donna Conrad and Diane Stimson, in addition to all of the volun-teers who helped orchestrate this meeting, did another amazing job! Thank you all for the time that you took out of your weekend to make sure that this meeting ran smoothly.

I would also like to take a minute to thank Ken Rodd. The time and effort he put into the Directors' Challenge Bid Board really paid off in a huge way for CASI. Through his efforts, we raised over $1,800 for CASI, which makes this the most successful Directors' Challenge EVER!! I would like to congratulate Kit Rudd for being the CASI Director with the highest bid, coming in at $830!!!

To Keith L, Randy Pittman, and Ricky Powell: Thank you for your time and service to our great organization. It has been a pleasure serving with you three. To your families, thank you for putting up with the constant emails, phone calls, and time away at local cookoffs, TICC, and the meetings. Thank you for supporting them while they were on the Board. When each Director gets elected, they are the face, but the families are the body!

I know that by now she is getting tired of the farewell tour, but once again I must say thank you to Melissa Pate. Melissa, we are going to miss your expertise as our Assistant Tallymaster. You have put out many fires, fixed many problems, helped many people, and done an amazing job. Thank you for stepping up when we asked for help, and for doing such an outstanding job.

Mike, James, and Brian, congratulations on being elected to the Board! Welcome to the fray; we all look forward to the fresh eyes and new perspectives that you three will bring to the Board.

My final thank you is to the Great Peppers, membership, and Board Members for reelecting me to a three-year term. CASI has been an integral part of my life for all 34 of my years. The friends, family, love, and heartbreak that I have shared with many of you is what fuels my desire to be active in this orga-nization. I believe that we have the STRONGEST, MOST VIBRANT, MOST SUCCESSFUL organiza-tion that is the best at what we do – changing people’s lives with every pot of chili cooked.

We must work together, as cooks, as members, as leaders of this organization to continue to help CASI succeed. We need your help with growing this organization. We need your ideas, your time, and your ef-forts to increase membership, recruit new cooks, train new monitors/tally teams/GPs, etc. Help us grow YOUR organization. We are all in this boat together, because we have the same purpose – continue to see CASI succeed. The only way that CASI will continue to succeed is by putting your oar in the water and helping us ROW THE BOAT!

Cooks judging chili. People have differ-ent opin-ions on this subject and it can stir passions.

So, let’s have a look at how CASI Rules deal with the subject.

Cooks who participated in the day’s cookoff may judge on pre-liminary rounds (II.B.1). There are situations, e.g., large cookoffs with no public nearby, when this is absolutely necessary. There are also cases where the cookoff gets a larger than expected turnout of cooks. A good problem. But if you don’t have a sufficient number of non-cook judges for the extra judg-ing round, cooks are often the only solution.

There are people who are totally opposed to using cooks for judg-ing. While not ‘totally opposed’ to the idea, I would prefer not to do it. In my area we usually have a lot of extra judges just in case we need to add an additional round. But, the rules allow it so it is up to the cookoff head judge.

The final table, or only table of small cookoffs is a different story. CASI Rules (II.B.1) prohibit cooks from judging at this level. Make no mistake, if you sit at a final table of a cookoff you participated in, you have disqualified yourself from the competition. This has been tested by the Rules Committee. This is quite straightforward and does not need further explanation.

Rule II.B.3 is not quite as clear. The first sentence says that final table judges may not have tasted chili the day of the cookoff. We

have occasional cookoffs that are combined with the other chili organization, and we also have home-style chili divisions. Any-one cooking or judging in those contests may not be a CASI finals judge. Chili means chili, not CASI – just chili.

The next sentence leaves a lot of options on the table. It states that a final table judge not be ‘associ-ated’ with any cook at the cookoff. It does give examples of spouse or cooking team member, and that is well defined, but what about par-ents or siblings or children? Clear-ly they are ‘associated’ with the cook. We have members of my pod who do not cook, but they judge. As fellow pod members, are they ‘associated’ with the pod members who cook? So, what is the answer?

The answer lies in the rule of common sense. The intent of this

rule is to keep the judging fair for all cooks. We do not want a finals judge who would recognize the chili of any particular cook, thus giving them a higher score. That’s not fair. If the head judge feels an associate of a cook did not taste their chili and can be fair in their judgment of all the chilis, they could be seated. However, if for no other reason than appearances, you should stay away from close relatives. I don’t know if my father ever tasted my chili. (We Swedes don’t like spicy food.) However, it would look very suspicious if he had been on a final judging table.

The integrity of our judging process is very important to CASI. Yes, appearances matter.

on hand reaches $500, that money will be deposited into the lock box at the gate. A second person (witness) will attest to the deposit. A Board member, or their designee, will pick up from the lock box and take to the safe.

Each qualified cook will be issued one (1) wristband for themselves and one (1) for their guest. Any guest or qualified participant under the legal drinking age in Texas will be given a wristband to denote the “minor.”• If qualified cook is not a CASI member, they must pay full admission.• If spouse/guest is a qualified cook, they will not be issued an additional

band.Show Teams are as follows:• For One Man Show, one (1) wristband will be issued.• For Small and Large Shows, the qualified team captain will be issued

one (1) wristband at the gate at no cost.• For a Small Show team, a total of three (3) bands will be issued on a

reimbursement basis.• For a Large Show team, a total of five (5) bands will be issued on a

reimbursement basis.• For Small and Large Show teams, if the team captain is also a qualified

FIRE POLICY

IF ALLOWED, rules for having fires on the Ranch site are as follows:Fires must be contained in a fire pit, fire ring, or some type of

containment. There are to be no unconfined tires on the ground!

NO LARGE FIRES!

NO ACCELERANTS are to be used on fires, i.e. gas, lighter fluid, etc.

Fires MUST be attended at all times.

NO furniture, cars, tires, or non-earth-grown items will be al-lowed to be burned on site. If you haul it in, you must haul it out when you leave.

The Ranch will be patrolled by the Terlingua Fire Department at all times. Individuals in violation of the fire rules will be given one warning. There will be no second warning; violators will be immediately evicted from the property without a refund.

It is requested that all persons entering the Ranch have a work-ing FIRE EXTINGUISHER in their possession.

ABSOLUTELY NO FIREWORKS!

Highway Cleanup This year’s highway clean-up is scheduled for

Thursday, November 1. I’d like to encourage all cooks and their friends to come out and join us again this year. We will meet at the Rancho entrance at 8 am.

There’s a new “deal” this year. The Directors have asked those volunteering to go to Signup Genius at the address above. When you do, please indicate your shirt size and you should receive a TICC Staff t-shirt for your troubles. I’ll also ask you to sign up again when you arrive at the gate on Thursday so I can write the appropriate follow-up article for the December Terlingua Trails. There will be pictures so bring your smiles.

The effort is not difficult at all and there will be chase vehicles to shuttle folks back and forth. No one will have to walk very fast or very far at all. Indeed, last year many of the folks simply chose to walk rather than ride.

There will be more roadside prizes for folks to find, and these should make your Thursday a really fun day once back at camp. We will scatter markers along the roadside that can be found as you gather up rubbish. Just bring in your marker at the end of the exercise and you’ll get a prize.

Toys for Tots Don't forget to bring your unwrapped toys for children (ages 5-12) to TICC this year. The teachers of the Terlingua school will make sure the toys get to the needy families of the area.The school also makes cookies for the families at Christmas, and they can use donations of flour and sugar. Checks for cash donations should be made out to TCSD; cash will be used to purchase flour, sugar, and other staples. Director Cindy Noe will collect all donations daily at the main concession area. Terlingua Rosebuds Party The Terlingua Rosebuds Party is open to all women at Rancho CASI de los Chisos. It will be held on Wednesday, October 31, at 7 pm in the Mexene Judging Pavilion. The theme this year is Drink the Rainbow. We are sponsored by Svedka Vodka with four flavors of vodka – Strawberry Lemonade, Mango Pineapple, Blue Raspberry, and Cucumber Lime. This is a night of camaraderie and fun, with sprinkles of surpises along the way. As in the past, we plan to entertain you and touch your heart. The dress code is – your favorite flavor. Tequila in Terlingua Society Party Join all the men of Terlingua behind the TICC Stage on Wednesday, Oc-tober 31, at 7 pm for the Tequila in Terlingua Society Party, as we celebrate life, liberty and male bonding, without the trappings of tablecloths, roses or poems. Memorial Board Ceremony Join us Thursday, November 1, at 7pm at Memorial Plaza to pay our respects and celebrate the lives of those we've lost in the past year with a balloon release. Policy Change Regarding Shirts At this year's Great Peppers' Meeting, the GPs voted to allow a proxy to pick up your shirt if you're not attending TICC. Qualified cooks and show team captains, Great Peppers, and Regional Referees can have someone pick up their shirts.For qualified cooks and show captains, your proxy must have a copy of your Qualification email. For GPs and RRs, we'll have a list of all incoming officials. You will be allowed only one shirt. For example, if you are a GP who is qualified to cook, you will receive one shirt. The same applies to all other categories as well. Thank you all for everything you do. See you in the desert.

Dave Boone Memorial Domino Tournament We are bringing back the domino tournament after a brief hiatus. It will be held on Monday, October 29, and begin around 6:45pm. Entry fee is $10 per person, and we will draw for partners. Prize dominos award-ed to the winning team. Salsa Event 2018 Traditional Salsa – Salsa is the Spanish word for sauce, and in Mex-ico it refers to sauces that are used as both ingredients and condiments. It is normally a spicy blend of tomatoes, onions, and hot peppers finely pureed or cooked to a liquid-like consistency. Secondary ingredients are traditionally garlic, salt, and/or cilantro (optional). Non-Traditional Salsa – Pico de gallo, verde (green), Greek, fruit-based, etc. Anything goes here, so be creative and have fun. Any fruit, vegetable, flavoring or spice is acceptable as long as the end product tastes great. Salsa Judging Rules and Characteristics – Color/Appearance – is the product attractive and visually appealing? Smell/Aroma – the product should have a pleasant aroma, without one ingredient overpowering the others. Flavor – independent of spiciness, the product should be delicious.Viscosity/Texture – do you like the texture in terms of smooth, crunchy, easy to dip, etc? Heat/Spiciness – CASI is looking for a “classic” level of heat, not extreme or mind-numbing heat. Mild, medium, and hot are all fine, but try not to destroy the judges’ taste buds! Prizes ($1,600 total) – In each category: $350 to 1st place, $250 to 2nd, $150 to 3rd, $50 to 4th, and a salsa gift box for 5th place. Details – Held on Friday, November 2 as part of National Scholar-ship Day. Entry fee is $15 for each category; turn in is 1pm at the Mexene Judging Pavilion. The top five in each category will be announced.

the big party in the desert at Krazy Flats, and what a party it will be! Wally’s Pole and Grill is returning, and how about that goat

roping?Sunday starts off the fun with folding those

t-shirts, with drinks and snacks at 2pm.The Sa-loon and Store will open for business Monday morning at 9am for purchasing ice and mer-chandise. Beer will be available, too, as soon as it arrives and gets iced down.

Tuesday morning, registration begins at 9am for the Anything But Chili Cookoff, until 10pm. Entry fee is $20.

On Wednesday, registration for the Anything But Chili competition opens at 8am and closes at 11am. Turn-in is 1pm at the Si Brown Pavil-ion. Be sure to include your recipe cards and have your picture taken with your entry before leaving. Judges are needed and welcome. Win-ners will be announced on Friday afternoon.

Also on Wednesday: Happy Hour 2-4pm with drink specials! At 9pm, the lighted ATV/golf cart parade starts at the main stage and ends up at the Krazy Flats Saloon, A costume party will immediately follow the parade.

Thursday is Open House at Krazy Flats! Join us for a Bloody Mary Morning from 9-10:30 am, with drinks provided by the Buzzard Bar Cooking Team. Food will also be served, and

take a moment to say hello to our 2017 TICC Champ Brent Allen.

Thursday’s Happy Hour is 2-4pm, with drink specials going on!

The Blue Kountry Band will be playing in the SI Brown Pavilion on Thursday and Friday nights from 11pm-12am, and Saturday from 8pm to 1pm.

Renfro Foods Family Educates and EntertainsFriday morning of the Great Peppers’ Meeting, 20 CASI members were willing to trust 10 Directors to play the CASI version of Uber for a field

trip to the Renfro Foods facility. The Renfro family has been a wonderful supporter of our organization for many years, and if you have not had the privilege of seeing their operation, you are missing out! The tour covered all aspects of the operation, from cooking, blending and bottling to shipping and receiving. Thank you to all who participated in the tour and to the Renfro Foods family for hosting us. We look forward to continuing our suc-cessful partnership with Renfro Foods for many years to come.

Hoy Takes Three-peat of Monsoonal Directors' Challenge For the third consecutive year, and in the middle of an unseasonably heavy down-pour, Don Hoy – Director, Ranch Manager, and proprietor of Krazy Flats – walked away with the trophy in the Directors' Challenge. Participants "Doc" and Carrie Kinnison, left, and Beth Baxter did their best to stay warm and dry. They managed to keep their beautiful smiles, even if they were cold and wet – such troupers! And even though everyone had to ford the new middle fork of the Trinity River to turn in their chili, "I can't wait for next year!" said one drenched yet happy cook.

As the Buzzards Soar ... Reigning Champ Reflects on Past Year‘Twas coming up fast, and all through the land, Chili cooks were scurrying and making a plan.

Terlingua will be here the middle of fall, With hundreds of cooks there to give it their all.

The ranch will be ready thanks to the crew Of Don and Dianna and some other few.

This place has never looked so great From one end to the other when you come through the gate!

It takes so many to put this thing on To party for a week – and then we are gone.

The memories we’ve made will last us for years, Even though parting can cause a few tears.

The directors are there to guide us through, And I know their hope is to see all of you.

As I was lucky to win this past year It’s kinda for sure that I will be there!

For the last several years, I have called Krazy Flats home, So make sure you stop by when you get out and roam.

The Buzzard Bar has such a great team – Sometimes I look back and think it’s a dream.

The love that I have for the friends that I’ve made! It shows in their hearts and they don’t have to be paid.

In about a month I will be ready to go Back to TICC which has been called the Big Show.

It has been quite a year as I sit here and think Through good times and bad times (sometimes just needed a drink).

With the Dian'nnas there to keep me in line, And Linda and April, I should be fine.

Then there are RB and Scotty and Mr. Don And of course Becky – sure to be the one!

Thanks to my team for the support through it all. It’s close to time for me to turn over the ball.

I hope one of you grabs it and keeps up the run So we can all be together and keep up the fun!

Everyone is doing a great job creating cookoffs online! There are only a couple of things I need to call to your attention.

When you create a cookoff and you don’t request a box of Trails, cup tickets, or a rule book, you will not receive a packet of forms by regular mail. Your forms will be included in your approval email as a .pdf file. Please print out the forms, and fill in your cookoff date and the cookoff number shown on the approval email.

When submitting cookoff info for me to put into the system, please use the form online or in the Terlingua Trails so all informa-tion needed will be covered. Often email addresses, zip codes and counties are left off. If you are doing the input yourself and have a problem, please contact me instead of trying to submit again, especially if you get an error message. Thank you for your support! Thank you, everyone, for working so hard and adjusting to the CMS so wonderfully. I appreciate your help. To meet the cookoff advertising requirement, upcoming cookoffs must be publicized in the Terlingua Trails in the month prior to the event OR be approved and appear on the official calendar 30 days prior to the date of the cookoff. As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Upcoming Events" section in this periodical. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
