OatmealWalnutChocolate Cookies Recipe from Rose Ann Cook Quilter’s Emporium Quilt Shop Texas I taught for Rose Ann a couple of times already…on her cruises and in her shop. She is a wonderful shop owner, quilter and cook…she lovingly shares her famous cookie recipe! Makes 4 dozen cookies 1 cup unsalted butter, softened 1 cup granulated sugar 1 cup light brown sugar, firmly packed 2 eggs 1 tsp. vanilla extract Dry ingredients 2 cups all purpose flour 1 1/2 tsp cinnamon 1 tsp baking soda 1 tsp Kosher salt 23 cups of uncooked oats 1 cup chopped shelled walnuts 1 cup semisweet chocolate chips Directions Preheat oven to 375 degrees. Cream together the butter and both sugars until smooth. One at a time, add the eggs to the mixture and then the vanilla. In a separate bowl, combine and blend the flour, cinnamon, baking soda and salt. Slowly add the dry ingredients to the butter mixture and combine thoroughly but don’t over mix. Start with 2 cups of oats and blend into the mixture. Add more to the mixture as desired up to 3 cups total. Add the walnuts and the chocolate chips. Use a scoop to make uniform balls and place them on parchment paper lined cookies sheets; bake for 1012 minutes. When slightly cooled, you can transfer them to the cooling rack. ENJOY I baked ¾ of them and froze a dozen of the dough balls to bake at a later time…we don’t need 48 cookies around at one time!!!
