BONITO the oceanic bonito (jap. „katsuo“, otherwise known as „skipjack tuna“) is the only species of the Katsuwonus family of mackerels and tunas. it reaches a length of about 1m (about 3 feet and 3 inches) and a weight of more than 20kg (44 lbs). it lives mainly in tropical and subtropical oceans.

DASHI is a japanese fish stock with great importance in japanese cuisine. basic dashi is made of bonito flakes and brown seaweed (kombu) and is the base for miso soup and other dishes.
