According to U.S. Food and Drug Administration (FDA) regulations (21 CFR 113.3 & 114.3), any low‐acid or acidified food that is packaged in a hermetically sealed container must have a process authority verify the thermal process in order to ensure the safety of the final food product. The process authority must verify the process with a signature on Form 2541A, which is submitted to the FDA for registration of the product and processing method. If a product contains enough meat to fall under U.S. Department of Agriculture inspection, the same requirement applies (9 CFR 318.300). NOTE: Most resources listed here will be able to assist with acidic and acidified food products. Those able to review low‐acid food products are limited. , and those known to provide low‐acid food reviews are marked.
