Local Issues

What do localfundraising groups do?

Local fundraising groups act as the face of HavensHospices in their local communities, promotingthe work of the charity, organising fundraisingevents and encouraging other local people tofundraise. This year, the charity’s eight communityfundraising groups have raised almost £30,000 forthe charity, all through organising their ownevents.

Hilary added, “Whether you have a few hoursspare on the weekend or perhaps just a couple ofhours a month, there are plenty of opportunitiesfor you to get involved. This could mean helpingto promote our campaigns or organising or vol-unteering at a local fundraising event.”

Local groups are given the power to shape theway they want to fundraise in their communitieswhilst receiving expert support and advice fromthe charity right the way through the year.

Tony Cheek, who is part of the ‘Friends of The Hospices’ fundraising group said, “One week youmight be organising a street collection, then thenext holding a black tie event. It’s completely upto us what kind of events we want to hold. It couldbe something new every week, which is whatmakes it so exciting.”

Who are Havens Hospices?Havens Hospices is a registered charity thatincorporates Fair Havens Hospice and LittleHavens Hospice. Both hospices offer respite andcare for adults and children with life-limitingillnesses. When a family has been told there’s nocure for their loved one’s illness, the hospices arethere to make the journey as comfortable aspossible, controlling pain and medication andallowing family to spend quality time together inthe hospice or in the comfort of their own homes.

Hilary Metcalfe, Community Fundraiser fromHavens Hospices said, “We must raise over £100,00each week to be there for everyone who needs us.We do not charge a penny for our care, whichmeans the hospices simply could not exist with-out supporters like local fundraising groups, whodonate their time and effort so generously.”

We have a lotof fun and it’s made all the better knowing thatevery penny we raise is going to care for peoplewho need the love and support Havens Hospicesprovides. Since our group formed, we’ve raisedover £41,000 for the charity, which we’re all veryproud of.”

had shops in Benfleet, Woodgrange Drive, ThorpeBay and latterly Barling. I would class myself as anold fashioned style or artisan butcher. The meat isprepared through minimum use of cleavers orsaws but by utilising the natural seams andmuscles as nature intended.

Is there a call for anold fashioned butcher?

I have seen the role of the butcher change. Thedays of meat hanging on show with sawdust onthe floors are thankfully long gone. Howeversupermarkets are increasingly stocking foreignmeat cut to set sizes with little room for alteration.

he Butcher of Barling, Philip Splett hasdecided to reopen his shop to the public.

Here we ask why.

What made you reopen Philip?

Well I originally decided to retire on the 1st January2012 after working in the butchery business forover 60 years. Although the shop was not open Iwas still supplying my famous Barling Beautiessausages to a few local pubs and my existing clientswere ordering meat from me on a regular basis.Everywhere I went I bumped into customers ofmine who bemoaned the fact that I had closed.Butchery is in my blood and I made a decision toreopen the shop again to existing and newcustomers from November.

What is your experience?

Splett Family Butchers has been in existence since1950 when my father opened his shop in London’sLeather Lane. I helped my father in his shop andwent to Smithfield learning as much about themeat trade as I could. I was fortunate to train as aMaster Butcher under an expert who providedmeat to the Royal Family. After I qualified I took overfrom my father and moved down to Southend and

Where is your meat sourced?

I have my own experienced buyer on Smithfieldwho selects meat to my specification. Smithfield isstill the UK’s premier meat market. I stock AberdeenAngus Scotch Beef, Saltmarsh reared Lamb and rarebread pork. Fresh poultry come from Suffolk,Norfolk and local farms. All the meat is British andis fresh when delivered and allowed to hang toprovide the best possible taste and texture. I aim toprovide the best quality products when in season ataffordable prices. Certainly there is a markeddifference in flavour for instance when Beef isallowed to age naturally.

What can you provide us with?

The simple answer is anything providing enoughnotice is given. All types of meat, offal and game. Iam happy to take bulk orders where for instancehalf a pig or lamb can be bought and the customercan specify what types of joints or chops they want.I am currently taking orders for Christmas for localfresh turkeys and geese. These can be on the bone,crowns or boned and rolled. There is no additionalcost to the customer in having this workundertaken, it is all part of my service. I produce myown bacon which is cured in the old fashioned wayand has a taste unlike anything bought in thesupermarkets. I am famous for my sausages,

pinning can break brittle chemo curls. Put away yourhair straighteners, just for now, as the heat can burnyour sore scalp.

Styling products that offer a light hold are ideal, as theyare easy to wash out and won't make your hair looksynthetic. Go for water-based products whenever youcan find them because they are kind and healthy for your hair, and the environment!

Hair that is shorter than three inches is very difficult tostyle and manage so your scalp is still tender, pleasewait until it recovers and then consult your hairdresserfor help with any colour or permanent wavetreatments.

Make sure you get the ends of your hair trimmedevery month until your locks returns to their normaltexture. In 6-12months, most of your chemo curls willbe gone and you can try some new and exciting hair-styles with your short hair. So Maggi, this is especially for you and other ladies andgents in your position.

The loss of your crowning glory is, sadly, a common sideeffect of chemotherapy. The treatment also affects hairregrowth, as the drugs involved attack the roots of yourhair and its pigment. Towards the end of treatment yourhair will start to come back, but when your locks doreturn, their texture and colour may be very different toyour original hair. Patients may experience kinky, curly,coarse, or even fine ‘baby’ hair. We like to call this ChemoCurls.

Your new hair can look and feel like a really bad perm, soit makes sense to treat it that way. Use a very mildshampoo, such as baby shampoo or products for dry ordamaged hair. When shampooing your chemo curls,massage your scalp to increase circulation to your rootsand remove any dry, flaky skin. Avoid using very hot waterbecause your scalp may be tender. After your shampoo,put on a leave-in conditioner for fine or limp hair.

Dry your hair gently by patting it with a thick, absorbenttowel, or use a low heat setting on your hair dryer. Styleyour new hair gently - vigorous brushing, combing and

his salmon parcel is perfect for entertain-ing. It can be served hot, warm or cold

Ingredients (Serves 8)

Knob of butter1 tbsp olive oil1 large onion, finely chopped150g chestnut mushrooms, chopped1 tsp ground turmeric100g freshly cooked basmati riceBunch of fresh dill, chopped Bunch of fresh parsley, chopped1 tbsp capers, rinsed and choppedZest of 1 lemon

2 large free-range eggs, hard-boiled and chopped,plus 1 beaten free-range egg, for glazingPlain flour, for dusting2 x 500g packs fresh puff pastry900g piece salmon tail fillet

Method

1.Heat the butter and oil in a pan over a low heatand cook the onion for 5-6 minutes. Add themushrooms and cook for 5-8 minutes. Stir in theturmeric and cook for 1 minute, then add the rice,herbs, capers, zest and chopped egg. Season andcool.

2.On a floured board, roll out 1 piece of pastry topound coin-thickness and trim to a 30cm x 20cmrectangle. Put on a large baking sheet and placethe salmon on the pastry. Season, then arrange therice mixture on top. Brush the pastry edges withbeaten egg. Roll out the remaining pastry, so it willgenerously cover the salmon, and lay over the top.Trim, leaving a 2cm border, and press the pastrytogether to seal. Use any pastry trimmings todecorate the top.

3. To eat now, preheat the oven to200°C/fan180°C/gas 6 and bake for 35-40 minutes.To freeze, wrap cling film around the pie andbaking sheet and freeze for up to 3 months. Toserve, preheat the oven to 180°C/fan160°C/gas 4.Bake from frozen for 1 hour 5 minutes. Turn theoven to 220°C/fan200°C/gas 7 and cook for afurther 10 minutes, until it is cooked through.

ollowing on from the last issue it seemspeople simply don’t learn by their mis-

takes.

I was recently able to help a lady in the finalstages of clearing a property which hadobviously had some very lovely things in it. Shebegan by telling me that the family had done aboot sale with the first things they had sortedout and had raised about £300, which shefound very exciting. Sadly the first item shementioned, that they had sold, would haveraised more than that in auction on its own sogoodness knows what else went with it.

Following on from that they had seen an ad inthe local paper about a visiting buyer, fromBrighton she thought, who was hiring a roomin a hotel for the day and offering a valuationand buying service. Not content with what shehad sold at the boot sale she had then sold asignificant amount of jewellery, including agent’s 18 carat gold wrist watch and a ladiesdiamond watch to him for the value of thescrap metal.

As I have mentioned previously, even if suchpeople are paying full price for the metal, andmost are not, items with stones, watches anddecorative pieces will usually command morein auction and leave the sellers better off evenafter commission.

ince winning the X Factor back in 2010,Essex lad Matt Cardle has done a full

circle. The 29-year-old has a platinum-sellingdebut album, “Letters”, changed record companies, but “The Fire”, his second album outon the 29th October on So What? Recordings, isa much more honest affair.

“The Fire” see’s Cardle playing most of the instruments and even producing the album, “Itwas much nicer being in control as much as Iwas, this was how I wrote and produced all of myalbums before the X Factor, so I didn’t feel out ofmy comfort zone, it was just a very naturalprocess. Across the board, it’s gone absolutelyfantastically,”

Matt draws on a lot of his personal expericnesover the past couple of years for his material, he explained: “It’s prominently about the break-upof my relationship earlier this year. It was toughand I was going through all that whilst I was writing the album. That being said, the album’svery upbeat and very uplifting.”

While there’s a particular sound for X factor winners, “The Fire” turns up the guitars takingMatt back to the Essex rock bands he played inbefore the competition ”The change in sound isalso similar to why the looks changed as I’m getting closer to myself and getting back to

what I do and what I’ve always done. Just everything’s a bit more honest really.”“It’s Only Love” will be the first single to be released from the album. Talking about thechoice, he said: “I wanted to come back out with something really upbeat and something reallydriving. I just thought it was a great choice forthe first single.

Prior to the album’s release, Cardle will embarkon a short UK tour, which begins at the Birmingham Institute on October 21st, beforefinishing with an album launch show at TheScala in London on the 23rd.

“I’m excited and nervous at the same time! But Ijust cannot wait to get back on stage with theband and see how the songs translate on stagelive,” said Cardle.

London based pop band LAWSON grafted hardfor 4 years doing the pub and club circuit beforetheir big break supporting The Wanted last year.Since then, they’ve sold out their own tours andgained two top 5 singles.

Their debut LP ‘Chapman Square’ certainly livesup to expectations. Stand out tracks include‘Learn To Love Again’ and ‘Gone’ plus brand newsingle ‘Standing In The Dark’.
