IN THE NEWS…..
Nature Club We had a wonderful Lakeside event on October 2nd. It was a beautiful day, the sky was blue and the temperature was comfortable. Folks gathered on the up-per level and the mezzanine level of the lakeside to watch the 4 boaters take off and circle Lake Pearl. We had a fire going in our new fire pit, (Thanks Todd), we were waiting for coals to start for the S’mores. Susan Martin was the hostess with the “mostess”, cooking marshmallows for folks on the upper level who could not navigate the hill. We had extra seating from benches brought in by Todd. We also had guitar music from Wendy Quinneville and occasional singing. The event was a big success thanks to Todd and Susan and many others. By Wendy, Walt & Dick

In The Spotlight VILLAS and TOWERS and CLUBHOUSE. OH, MY!
Michelle Smith Connolly has been a Re rement Counselor at Lakeview Terrace for ap-proximately thirteen years. She described the current new Phase 5 construc on pro-cess as similar to Phase 4, which built the exis ng Tower A and Villa buildings. “However, this me around, we were much closer to our actual target date.
“The third me was a charm. I be-gan working at Lakeview Terrace in early 2008. A week a er my hire date, LVT decided not to proceed with new construc on due to the economy.
“A few years later, we started again with Tower A and the Villas 1-7, then
our Wellness Center and Bistro. Following that, we completed our beau ful Rehabilita-on Center. Lakeview Terrace is at it again with Tower B and Villas 8-16. Now, onto our
Marke ng offices near the main entrance.” The new Clubhouse is coming right along. Our overall community reac on has been one of support and we have several “resident inspectors” who keep us updated on all that happens.”
Our Execu ve Director, Christopher Se ack, has an extensive background in construc on. His contribu on, knowledge, and experience brought the vision to life. As he explained, “Communica on was key; having open lines of communica on and good team-work led to the mely comple on of the project. Comple on moved smoothly due to a highly organized construc on company.
“I would have to say the interior design process is something about the construc on process people might not know. The colors, furniture, millwork, granite colors, and inte-rior furnishings were done by an interior designer.”

Our Assistant Execu ve Director, Gwendolyn Merrill, played a proac ve and hands-on role with the large project. She and Christopher oversaw the construc on process on a daily basis. Gwen’s keen eye for detail helped ensure a quality product for our new resi-dents.
Karin Mosher, Move-in Coordinator, commented, “In Phase 4, we built twenty-six Tow-er units and twenty-eight Villas. We have built more homes during Phase 5: thirty-one Tower units and thirty-six Villas. It has been a much more aggressive undertaking. I en-joy bonding with all the people through the process. It gives me a good feeling to help people in a me of need.”
Ann Marie Street, Re rement Counselor, is a newer addi on to the Marke ng team at Lakeview Terrace. “The most memorable part was the an cipa on of it. We waited for the green light to be able to complete contracts. Watching the large construc on equip-ment come out to LVT and excavate the land was exci ng.
“Seeing the process over me was amazing, as crews laid the groundwork. We kept new residents updated with photos so they could watch the comple on of their future homes. I enjoyed speaking with the residents throughout the year, as they took steps to get ready for their move.” Ann Marie shared, “The new construc on was inspiring for me, seeing the progress from week to week and month to month.”
Twenty years ago, Ann Marie worked at Lakeview Terrace, in another area of the com-munity. She reflected on seeing the progress of expansion over the last twenty years. “I remember when there was just one entrance gate, on County Road 42. During Active Aging week which started Oct. 5th, we held a “Glow Ball Tournament". Our LVT glow ball is world famous and includ-ed food, drinks and then 26 of us set out to play in the dark! Thank goodness for headlights on the carts and some well-aimed flashlights. It sure was a fun-filled interesting time.
A recent study found the average golfer walks 900 miles a year. Another study found the average golfer drinks about 22 gallons of alcohol a year. That means an average golfer gets about 41 miles to the gallon. Kind of makes you proud…almost feel like a hybrid. Of course no LVT golfer is AVERAGE ! ! Remember to Hit ‘em long and hit ‘em straight and if you don’t, yell FORE. By Jean, Chairperson

Temperatures up one day

on its own schedule.
It is indeed wild

Healthy Eating Season
The start of holiday season for some, marks the beginning of “eating season”. There are an abundance of traditions that revolve around rituals and high-calorie foods. Here are a few mental shifts, mindfulness practices and simple strategies to consider this holiday season, to enjoy some tasty treats and stay healthy:
Treats in moderation. If holiday cookies or deserts are tempting you, satisfy your sweet tooth while limiting yourself to 2 sweet treats a day.
Use a smaller plate. Indulge in your favorite dishes while mindfully portioning servings on your plate.
Eat veggies and salad first. Fill up on the lowest calorie items first, which leaves less room for the heavier foods.
Sensible substitutions. When cooking, use herbs and spices for flavor in-stead of salt. Reach for white meat over dark, take off the skin and try ap-plesauce instead of butter when baking.
Lighten up libations. Egg nog, hot chocolate and alcohol can come with extra calories. Pass on the whipped cream topping, use low-fat or skim milk and drink a glass of water between other beverages.
1lb. frozen green beans, thawed 1/2 tsp. pepper 10.5 oz. canned, reduced-fat, low sodium cream of mushroom soup 1 small onion, sliced into thin strips 1/4 cup whole-wheat flour 1/2 cup sour cream
Preheat oven to 350°F. In a 9x13 casserole dish, combine green beans, soup, sour cream and pepper. Stir well and bake for 20 minutes. While casserole bakes, spread out onion strips and lightly spray with cooking spray. Sprinkle flour over onion pieces, tossing to coat equally. Spray a medium-large skillet with cooking spray and heat to medium-high heat. Add onions and cook until crispy. Remove casserole from oven, add half of the onions and stir well. Top with remaining onions and return to oven, bake 5 minutes more.
